Spring decors.

 

Ahh my favorite Season,
It may not be perfect sometimes 
It could rain today snow tomorrow.
But we are almost there...

Flowers and Trees!!

I love it!

While the weather is still deciding what it wants.
We gotta start inside.

Dumpling Soup

 

I have been definitely eating more Soup these days,
They are just so comforting.

Tonight I wanted to try something like this,
Easy but very flavorful.

I just used a Frozen Dumplings and that made it so much easy and still good.

Let me know what you guys think!



Ingredients

  • 4 cups low sodium chicken stock Use 4 cups water + 2 tsp chicken bouillon powder as a substitute
  • 1 inch piece ginger sliced
  • 5 cloves garlic smashed
  • 2 scallions greens chopped and white parts cut to 3” pieces
  • ¾ tsp white pepper
  • 2 tsp sugar
  • 1 tbsp soy sauce
  • 1 tbsp Shaoxing wine
  • 1/2 tsp sesame oil

Wontons & Noodles


  • 8 dumplings frozen adjust to your liking
  • 1 bunch of spinach

Instructions

  • In a small saucepan, combine high quality chicken stock, scallion whites, ginger, Shaoxing wine, soy sauce, white pepper, sugar, and sesame oil. Bring to a simmer over medium heat while you prep the rest of your ingredients.
  • In a large pot of boiling water, cook dumplings (fresh or frozen) and cook over a low boil until they float. Drain and transfer on top of your bowl.
  • Add your spinach to the same boiling water and blanch for 1 minute or until they are dark green and crisp. Drain and add along with your noodles and wontons.
  • Use a strainer to remove the aromatics from the broth and strain over the dumpings, and Spinach. Garnish with chopped scallions and lots of chili oil!

Homemade Tiramisu

 


I love everything about living and Italy and general.

But Tiramisu is like on one of that top of the list.


I'm so glad I got to make this!

It's not as hard as it looks.

So gooood!
















Ingredients

  • 6 large egg yolks
  • 2/3 cup (135 grams) granulated sugar
  • 1/4 teaspoon salt
  • 24 ounces (680 grams) cold mascarpone cheese (straight from the refrigerator) 
  • 2 teaspoons (10 ml) pure vanilla extract
  • 1 1/2 cups (360 ml) cold heavy whipping cream
  • 2 cups (480 ml) cold espresso
  • 1/4 cup (60 ml) Kahlua (optional) 
  • 40 to 45 ladyfingers
  • 1/4 cup (22 grams) unsweetened cocoa powder

Instructions

  • Combine the egg yolks, granulated sugar, and salt in a large heat-proof bowl.
  • Set the bowl over a saucepan of simmering water, whisking constantly to ensure that the eggs don’t scramble.
  • Once the mixture has thickened, is pale in color, and reaches a temperature of 165°F-170°F (it should take about 10 to 13 minutes) remove the bowl from the saucepan and set aside to cool for 5 to 10 minutes. 
  • Whisk the cold mascarpone and vanilla extract into the egg mixture until well combined and no lumps remain (make sure not to overmix). 
  • In a separate cold mixing bowl with clean beaters, beat the heavy whipping cream to medium-stiff peaks.
  • Fold half of the whipped cream into the mascarpone egg mixture until fully combined, then fold in the remaining whipped cream. Set aside.
  • In a shallow dish, combine the cold espresso and Kahlua.
  • Dip the ladyfingers into the coffee mixture, one at a time, and arrange half of them in a single layer in a 9x13 inch baking pan.
  • Spread half of the mascarpone mixture over the ladyfingers and top with another layer of dipped ladyfingers.
  • Spread the remaining mascarpone mixture over the ladyfingers and dust with cocoa powder.
  • Cover the baking pan with plastic wrap and refrigerate for at least 8 hours or overnight before serving.

Creamy Bacon Pork Chops

 

Sometimes I crave Hubby's awesome Creamy Steak.
We wanted to try something else 
But, similiar
Hubby cooked this in the Cast Iron Skillet and its perfection.

We picked Mashed potatoes and Roasted brussel sprouts for sides and it was amazing!

Ingredients

  • 6 strips bacon cut into small pieces
  • 4 pork chops see notes
  • Salt & pepper to taste
  • 1 tablespoon butter if needed (see step 5)
  • 1 tablespoon flour
  • 1/2 cup low-sodium chicken broth
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • 3/4 cup heavy/whipping cream
  • Fresh parsley chopped (optional, to taste)

Instructions

  • Take the pork out of the fridge about 15-30 minutes prior to starting the recipe if possible.
  • Cut the bacon up and add it to a skillet (I use kitchen shears to make this fast). Cook over medium-high heat until crispy (about 10 minutes). Transfer the bacon to a paper towel lined plate, and leave about 2 tablespoons of the fat in the skillet.
  • Pat the pork chops dry with paper towel and then season them with salt & pepper.
  • Add the pork chops to the skillet and cook them for 3-5 minutes/side (3 minutes for thinner chops and 5 minutes for pork chops up to 1" thick). Once the pork chops are seared, transfer them to a plate.
  • If the pan is looking fairly dry, add in a tablespoon of butter, but if there's still some bacon fat left in the pan, go ahead and sprinkle the flour in, stir it, and cook for about 30 seconds.
  • Whisk the chicken broth, lemon juice, and garlic powder in. Stir and let it cook for about a minute or until noticeably reduced.
  • Stir in the cream.
  • Add the bacon and pork back in (along with any juices left on the plate) and cook for another 3-5 minutes or until the sauce has thickened up a bit (let the sauce bubble a bit but not furiously boil) and the pork chops are fully cooked through (145F minimum). Keep in mind the pork's temperature will continue to rise, so if it's close, take it off the heat and let it rest for a few minutes before serving. 
  • Season the sauce with extra salt & pepper if needed and top with chopped parsley if using.

    Serve with your favorite sides and Enjoy!



Of course Prosecco with it.





We also made few ready to be cooked/frozen Appetizers.
Always cooked in the Air fryer and its so crispy!

















It was a phenomenal dinner.

Taco Pizza


I have been wanting to make Homemade Taco Pizza.

Hubby may not be a fan but I'm glad he gave it a try.

This was so good for me.

I love how loaded it is and you can put whatever you want in it.

Taco Pizza


Ingredients

  • 14 oz Pizza Dough
  • 16 oz refried beanswarmed
  • 1/2 lb. ground beef
  • 1/2 cup oniondiced
  • 2 tbsp taco seasoning
  • 2 cups Colby Jack cheeseshredded 

Optional Toppings:

  • shredded lettuce
  • sour cream
  • diced tomato
  • diced avocado
  • sliced black olives
  • corn chips
  • taco sauce
  • diced avocados
  • doritos chips, crumbled
  • taco sauce

Instructions

  • Preheat oven to 425 degrees F.
  • Unroll pizza dough and place pizza dough (and parchment paper) on top of a baking sheet or pizza pan. Par-bake the dough for 10 minutes.
  • Meanwhile brown the ground beef and onion in a skillet over medium heat, until no longer pink. Stir in the taco seasoning and cook an additional minute.
  • Remove pizza crust from oven and top with the warmed refried beans and smooth into an even layer. Sprinkle with cheese and taco meat. Return to oven for an additional 6 to 7 minutes, until pizza crust is golden brown and cheese is melted.
  • Top with any optional toppings you would like! Enjoy!









Also made this Shirley temple that just so good.






We also made a few Appetizers to go with the Pizza.
Chips and Salsa and Frozen Taquitos that we dressed up of course.

It was Perfection!

Shirley Temple

 

I like making pretty drinks these days.
This is one of the easiest.






Ingredients

  • Sprite
  • 2 Shots of Vodka
  • 2 tbsp. Grenadine Syrup
  • Ice Cubes
  • Garnish: 1 Maraschino Cherry

Instructions

  • Add ice cubes to your glass
  • To get the pretty color effect, add ingredients in this order… Pour in Grenadine Syrup, Vodka then Sprite
  • Top with a Maraschino Cherry and you’re done!
