Bacon Double Cheeseburger Stuffed Meatloaf


Hello Everyone! How was your Thanksgiving?
We had an amazing time. It's First Day of December tomorrow, Can you believe it? It's crazy how time is really going fast.


It's Sunday and I like to have  a Special Dinner before we get back to our healthier diet, It's been a lot of eating these couple of days but I'm just really in a mood to cook something special for dinner tonight. So I made this meatloaf. It's stuffed and wrapped with bacon, can that be any more perfect?



Ingredients:
  • 1 lb. Ground Pork
  • 2 lb. Ground Beef
  • 2 Cups Bread crumbs
  • 1 Cup freshly grated Parmesan Cheese
  • 1 Pkg. Bacon
  • 3 Eggs Beaten
  • 1 Onion Chopped
  • 1 Small Bell Pepper, finely chopped
  • 1 Carrot, Finely chopped
  • 3 tbsp. ketchup
  • 1 tbsp. Dijon Mustard
  • 1 tbsp. Worcestershire sauce
  • olive oil
  • 1/2 tsp. pepper
  • 1/2 tsp. paprika
  • 1 tsp. salt
  • 8 ounces mild cheddar cheese shredded
 Glaze:
  • 1 Cup Ketchup
  • 1/2 Cup Brown Sugar
  • 1 Tbsp. Dijon Mustard


Instructions:
  • Preheat oven to 375 Line a baking sheet or a pan with foil, set aside
  • Heat a little olive oil in a large saute pan and cook the carrot, onion, and bell pepper until very tender. Make sure to season the veg with some salt and pepper. Set aside and let cool a bit.
  • In a large bowl combine bread crumbs, parmesan, paprika, salt, pepper, eggs, worcerstershire sauce, Dijon mustard, and ketchup. Add in the ground beef and pork and mix together with your hands, not over mixing.
  • Form the mixture into a loaf shape on a pan.
  • Gently press the center and add the cheddar cheese and just press it to seal.

  • Line a flat surface with a foil or wax paper and lay down 8 strips of bacon vertically. Then fold back every other piece of bacon in half. Place a strip of bacon horizontally and peel back the folded pieces over the vertical piece of bacon. Next fold back every other piece of bacon again, starting with the strip that you did not fold back before. Repeat the process until you have created a square weave of bacon.










  • Lay bacon weave over the top, tucking them underneath the meatloaf
  • Make the glaze. In a small bowl mix together ketchup, brown sugar, and Dijon mustard. Pour 1/3 of the mixture over the top of the bacon with a pastry brush or a spoon.
  • Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15-30 minutes, until the meat reaches 160.
  • Remove from the oven let rest for 10 minutes. Slice and serve with the remaining sauce.

Crab Meat Salad

 
I had this amazing salad at one of thanksgiving dinner that we went to. It was so good that I wish I had more of it.  I can't remember everything that's in it but I really want something that is like it so I decided to make this salad, and this definitely satisfied that craving. It's so easy and you don't need a lot of ingredients. 
 
 
 
Ingredients:
  • 14 Ounces imitation crab meat
  • 1/2 Cup diced celery
  • 1/4 Cup Ranch dressing
  • 1/2 Cup Mayonnaise
  • Salt and pepper to taste
 
 
Instructions:
  • In a large bowl, break up the crab meat.
  • Dice celery
  • Add the celery to the crab meat, toss to blend.
  • Drizzle with ranch dressing and add mayonnaise
  • Add salt and pepper
  • Blend well
  • Refrigerate 1 hour before serving.
 
 
 
 
We decided to add it in our salad and it was so good!
 

 
My husband is so good on making salad so I let him make this and it was perfect.
He Just added lettuce, mushrooms, black olives, and shredded cheese.

Thanksgiving

 
 
 
Hello Everyone!
I hope you all had a Great Thanksgiving, I had an amazing time with friends!
 It's always so great spending it with them.
 
 
 
 
Lots of good foods! I just want to try all of it!
 
 
 

I didn't get to try everything, But I had a little bit of everything that I really like!
Didn't get to seconds too, I just can't! I had to save some room for dessert and drinks. Haha! :)
 
 
 
Little man had so much fun with other kids too, I just love watching him this happy!
 


This is definitely another Thanksgiving I will never forget.

Thanksgiving Prep.



Happy Thanksgiving Eve!!
 
 
Time is really going faster than ever, I can't believe its Thanksgiving already and before we know it its New Years eve, Anyway I'm going to enjoy every minute of these last few months of the year and going to savor every moment of it. I'm a little sad that I won't be able to spend holidays with my family in the Philippines but I know I'm not going to miss that much since we talk all day on holidays on Skype (Thank god for technology)
 
This is my Fourth Thanksgiving here in the U.S. and one of the things I'm really grateful for is that my husband is here with us. Just him being here is perfect already.

 
Little man woke me up early today, Something I'm not used to yet since we changed his bed, So far its going good. I can't believe my baby is a big boy now.
 
 
Started my day with a healthy breakfast. I finally got to make Pumpkin Smoothie and it was so good!
 
  • 1 Frozen Banana
  • 1 Cup frozen Canned Pumpkin
  • 1 cup milk (depends on how you like it)
  • 1/2 cup of vanilla non fat yogurt
  • 1 tsp of honey
  • 1 cup of ice


  • Blend it all together until creamy and smooth

    I also enjoyed my alone time while little man was taking a nap. I felt amazing!
     
     
     
     
    Later that day I started getting ready for thanksgiving tomorrow.
     
     
    We are going to our friends thanksgiving dinner, its our 3rd Thanksgiving with them and Its always a great time.
     
    I always make these Lumpia for them its a Filipino Egg rolls, I did something different to it this time, just a little bit.. I hope they like it!
     
     
     
     
    I couldn't decide what to bring for dessert and I have been wanting to make/try Caramel Cake and I didn't want to fail because I don't have much time so we just bought it! haha! I hope they taste better than they look! One of these days I'll be able to bake one of these. :)

    Smoothie Bowl

     
     
     
     

     
     
    After all of the not so healthy food I had last weekend, It was so good to have something fresh, healthy and refreshing today. Decided to make some smoothie bowl for the first time today, and it was so good! I highly recommend! :)
     
     
     
     
    Ingredients:
    (makes 2 servings or 1 large one)
    • 1 Cup strawberries
    • 1 Cup milk
    • 1 frozen banana
    • 3 Tbsp greek yogurt
    • 1 Tsp Honey (or other sweetener)
    • 1 cup ice cubes( more if you want it thicker)
    Directions:
     
    Blend them all together on high until all ingredients are well blended.
     
    Toppings:
    • Sliced Strawberries
    • Blueberries
    • Granola

    Banana Parfait

     
     
     
    I usually eat whatever I want during the weekends, But during the weekdays I make sure that I eat the healthiest food that we have. I love to eat something fresh, light, and easy to make.
     
     
    Woke up today and I decided to make Banana Parfait. It's so easy to make, This comes together 5 minutes or less. On days like this that I have no time to cook it's perfect!
    It's good for a snack too! I made it in a big wine glass so it definitely filled me up, And oh I had some coffee too! :)
     
    You can use store brought granola which I did or you can make your own, I need to try to  make one!
     
     
     
    Ingredients:
    • 1 Cup non- fat Vanilla Greek yogurt, divided
    • 1/4 Cup granola, divided
    • 1 Small Banana, sliced
     
    Directions:
    • In a tall glass, layer 1/2 cup of Greek yogurt  in the bottom. Top with a 2 Tsp. of granola
    • Arrange 4-5 slices of banana on the top of the granola.
    • Repeat with the remaining 1/2 cup of Greek yogurt, Granola and sliced banana.
    • Serve immediately or cover tightly with a plastic wrap and refrigerate up to 24 hours.

    Homemade Apple pie

     
    My First homemade Apple pie from scratch!
     
     
    Hello everyone!
     
    I have been wanting to make this for a long long time now, and I wanted to make it from scratch! (I love a challenge)
     
    There's a lot of recipes I found  on the internet and finally after a long long time of searching. I found the perfect one!  
     
    This recipe is perfect for somebody like me who haven't made homemade apple pie ever! Easy, And I swear it was so delicious!
     
     
    
     
    Ingredients:
    Crust
    • 2 cups all purpose flour
    • 2 tsp. Sugar
    • 1/4 tsp. Salt
    • 1/4 tsp. Ground nutmeg
    • 1/2 tbsp. Ground cinnamon
    • 2/3 Cups Cold unsalted butter (cut into chunks)
    • 4-5 tbsp. Cold water
    Filling
    • 1/2 Cup sugar
    • 1/4 Cup Firmly packed brown sugar
    • 1/4 Cup all purpose flour
    • 1 Tbsp. Ground cinnamon
    • 1/2 Tsp. Ground nutmeg
    • 5-6 Medium /Large Honey-Crisp (or other tart cooking apples) Peeled, Sliced 1/4 -Inch Thick.
     
    Topping
    • 1 Tbsp. Butter
    • 2 Tsp. Sugar
     
    Directions:
    • Heat oven to 350F.
    • In electric mixer, combine the flour, sugar, salt, cinnamon and nutmeg. Add in the chunks the of butter until the mixture resembles "streusel" crumbs.

     
     
    • Slowly stir in the water until mixture is moist.



    • Roll the dough into a ball.
     
    
     
    • Divide the ball in half. Roll each half into a ball and flatten tightly. Wrap one ball and refrigerate.


     
     
     


    • Roll the remaining ball on a floured surface. Roll out the dough into a 12- inch circle.
    • Place dough into a 9- inch pan. I had a hard time keeping the dough together, so when I placed the dough into the pan, I pieced it together with my fingertips, It worked just as great!
    I still need practice working with the pie crust!



    • Combine all the filling ingredients.
    •  Add the coated apples to the pie crust.
     
                               
     
    This was challenging for me. I know it will get better after practicing. I added an extra dough crust around the edges to connect it with the bottom layer.
     
    • Just roll out the refrigerated dough into 9-10 inch circle and slice with a pizza cutter.

     
    Felt like I was failing big time. But thank you Pinterest!
    I'm such a Perfectionist, This apple pie taste good but I really want to make sure it will look good, which I think It did.. I think! haha!
    •  When you are done with the crust, Melt the Tbsp of butter and paint it onto the outer crust.
    • Sprinkle sugar all over the top of the crust (Add more if desired, which I did!)
    • Bake apple pie for about 45 minutes. Check every 2 minute after the 30 minute mark  because all ovens cook differently. The edges will be lightly brown as well as the top.

     
     
    Let it cool for 10 minutes, and serve with vanilla ice cream!
     
    My hubby who doesn't really like apple pie approves! That made my night! :)
