Dinner at East Coast Wings.








 Today was such a beautiful day, I love my weekends with my little family they always make my day perfect!
 
 


We went out for dinner at East Coast Wings, This is one of hubby's favorite restaurant because he loves wings!
 

Even though wings is not really my favorite food, I'm always down on eating something I've never had before. We usually get food to go from here, But I'm starting not to like how food looks and taste like when you get it to go, Like fries getting soggy.. etc.
 
 


 
We had Carolina Nachos for Appetizer, and to be honest this is the best Nachos I've ever had!
 
 
Hubby had the Treuben and some his favorite wings. The sandwich was so good!


 
 
I had the Steak Philly sandwich with sweet potato waffle fries, I'm really starting to get addicted to sweet potato fries it's the best. I had coco mango wings too but yes, I definitely did not get to eat it. It was a lot of food.
 
Cheat day was awesome! Would definitely come back here again..

Banana-Blueberry Overnight Oats



 
 
Finally got to try Overnight Oats today, I usually have Smoothies every morning and I told myself that I will try different breakfast, If you haven't tried overnight oats it's basically uncooked oatmeal mixed with milk, yogurt, and your favorite toppings and sweetener. The oats absorb the milk and yogurt overnight, making them soft and ready to eat in the morning.
 
You don't need to cook them, simply grab and go. The beauty of this simple recipe is that you can mix in any kind of topping you prefer. Same goes with sweetener, or none at all.
I used Coconut milk with this one, Because I love love Coconut. I didn't think it made a lot of difference but you can use any milk that you prefer. I'm excited to try this with different topping.
 
 
 
Ingredients:
  • 1/2 Cup old fashioned oats
  • 1/3 Cup plain Greek yogurt
  • 2/3 Cup milk ( I used Coconut milk)
  • 1 tsp. Honey or any sweetener you prefer
 
Topping:
                 Sliced bananas, Blueberries, Cinnamon, And Pecans
 
Directions:
  • In a bowl or mason jar, add oats, yogurt, milk and honey. Add the milk add more or less depending on how thick you prefer your oats.
  • Cover and chill in refrigerator overnight.
  • Top with sliced bananas, Blueberries, Pecans and a dash of cinnamon when ready to eat.

 

 
I added a little bit of milk before I added the topping because I didn't want it to be too thick, And it was perfect. :)

Slow Cooker BBQ Little Smokies

 
 
 



These Smokies are so super delicious and so easy to make, Perfect for lunch or as snack for Super Bowl.
 
 I made the Bacon-wrapped little smokies couple of weekends ago, And I still had some smokies in the freezer, I didn't have bacon so I decided to make this, And it was so good! 




Ingredients:
  • 2 (16 oz.) Packages of Little Smokies
  • 1 (18 oz.) BBQ sauce
  • 1 Cup Brown Sugar
  • 1/2 Cup Ketchup
  • 1 TBSP. Worcestershire sauce
Directions:
  • Put all of the Ingredients in your Slow cooker
  • Mix well
  • Turn Slow cooker on low for 2 hours.

Thai Food!



 
 
 
For this week's Cheat day we decided to have Thai food, Well it was my choice.
The last time we had Thai food was probably a year ago, I was really craving for some Fresh spring rolls and Curry.
 
 
With the help of Yelp we decided to try this restaurant, it has so many good reviews so I was so excited.
 
 
I didn't really feel like sitting down to there to eat so we decided to get it to go, Good thing we did because it took so long, We waited almost an hour for it even we called ahead, And the worse part they didn't get our order right. I wanted some Fresh spring rolls but they gave us the fried ones. We were on our way home when I checked our food so it was too late. :(
 


We had Calamares and Spring rolls for appetizer, I was still upset but after my first bite it made me forget about it, It's one of the best Spring rolls I've ever had.


 
I was worried that hubby will not be happy with what he ordered, He had drunken noodles and I'm so happy he loved it.
 

 
I had some Massaman Curry and it was the best!
 
It was an awesome Dinner, Do you like Thai food?

Banana-Mango Smoothie bowl with Kiwi, Grapes and Granola

 
 
 
 
 
 
 
 
As you already know. I love Smoothies, I can eat this everyday and when I first tried eating it this way, I started to love it more.
 
Today I decided to have Banana and Mango smoothie, I love love mango even though the mango here is not as good as the ones in the Philippines, I'll still have it. For the topping I added some sliced kiwi, Grapes and granola. I swear this is really good!
 
Ingredients:
  • Frozen Mango (About 1 cup)
  • 1 Frozen banana
  • 1/2 cup frozen yogurt
  • 1 cup milk (or water)
  • 1 cup of ice (more or less depends on your liking)
Directions:
Toss everything in a blender, blend until smooth. Enjoy! :)

Creamy Ranch Chicken

 
 
 
 
Made this awesome meal yesterday, I can't believe how good it turned out.
I get tired of eating the same food we eat when I do meal prepping, So on days like these I like to be creative and try something else.
 
I admit I'm not good in cooking, I'd rather bake.. So I absolutely love my Crockpot. You can just put everything together and let it do the job. I know that sound lazy but hey, Sometimes you don't have the time to cook.
 
 
Ingredients:
  • 5 Boneless skinless chicken breasts
  • 6 Medium potatoes, chopped into large pieces
  • 2 Cups Baby carrots
  • 2 Cans Cream of Chicken Soup
  • 1 Package Dry ranch dressing mix
  • 1/2 Cup milk
  • Parsley to sprinkle on top (optional)
 
Directions:
  • Spray your Crockpot with non stick cooking spray. Layer the potatoes and baby carrots on the bottom of the Crockpot. Lay chicken breasts on top.
  • In a medium bowl, mix together the soup and dry ranch packet and milk. Pour on top of the chicken breasts.
  • Cook on low for 4-5 hours. Sprinkle with parsley if desired.

Ham and Swiss Sliders

 
 


I finally got to make these! I have been wanting to make these for a long long time. This was a huge hit yesterday, It's loaded with ham, Swiss cheese and a mustard sauce all baked up to perfection.
This is perfect for game day or any party you are looking to serve up a tasty appetizer.
I'm sure you most of you had this already or seen a lot of these on Pinterest. If you haven't made it yet, you should make it soon!
 
I made two batches of these, I wish I made more!
 
Ingredients:

  • 3/4 Cup melted butter
  • 1 tbsp. Dijon mustard
  • 1tsp. Worcestershire sauce
  • 1 tsp. Brown sugar
  • 1 tbsp. Poppy seeds
  • 2 tsp. Dried minced onion
  • 12 Kings Hawaiian Dinner Rolls
  • 9 oz. thin Sliced Deli Ham
  • 9 oz. thin Sliced Swiss Cheese


Directions:
  • Preheat oven to 350
  • Grease a 9x13-inch baking dish
  • Combine butter, mustard, Worcestershire sauce, brown sugar, poppy seeds, and dried minced onion.
  • Slice the rolls to make sandwiches. Remove the top and set aside.
  • Place the bottom pieces into prepared baking dish.
  • Layer the ham onto rolls.
  • Top the ham with Swiss Cheese.

  • Place the tops of the rolls onto sandwiches .
  • Brush or pour the liquid mixture evenly over the rolls.
  • Bake for 20 minutes or until the rolls are lightly browned and cheese has melted.
  • Separate into individual sandwiches to serve.

Applebee's and Mall Day!


 
 


 Today was a great day, It's 50 degrees and it's so sunny out, It's just too beautiful to stay inside the house.
 
We decided to go out for lunch, I have been waiting for this day all week!
 
We went to Applebee's. We haven't been here for a while, Hubby said I hate this place. Well, not really.. It's just not one of my favorite place. After this day though I might want to go back again.
 

 
I was in the mood for a drink even though it was just 2 o'clock.. Hey it's 5 o'clock somewhere right? haha
 

 
We had Chicken Quesadilla grande for Appetizer, And it was so good! I don't remember having Quesadilla better than this.
 


 
 
 

I was really in the mood for burgers and they have new burgers on their menu so we decided to try it. I had the Sweet Asian Pineapple and hubby got the Triple Bacon Burger and I can say that the Sweet Asian Burger is the one of the best burger I had. The triple bacon was okay, Hubby let me have a bite, I think It's because I had a lot of Burger with bacon lately so this one didn't seem special to me.
 
 
After that we head to the mall to find a Basketball shoes for hubby and let little man play a little bit.
 
He sure did have fun, It was hard to leave. haha

Let the Juicing begin!



 
 
I finally got to try the Juicer that hubby got me for Christmas, I was so excited to try it.
I am not planning on doing any Juice fasting or any cleanse though, I just like the idea of at least drinking the greens or other vegetables that I usually don't like to eat. (Best example is celery, yes I really don't like it)
 
The thought of going Vegan is on my mind for a long long time, I don't really say much about it, Only my husband and probably few of my friends know about it. I just don't like to explain much about something I'm still doing my research on but I know it's something I want to do.
 
So far I've been doing the Weekday Vegan, I have been doing it since the first week of December.
 
It's just one of those things that you feel like it's the best thing to do for yourself.
Of course I did so bad on holidays, Eating a lot of good food but since January 1st I have been doing it, that's why I haven't been posting a lot of Recipes.
 
 Doing the Weekday Vegan is not hard so far, Since I love to eat fruits, other vegetables.. Something light, Something fresh on weekdays. Maybe one day I'll be able to be fully Vegan and not just on the weekdays, But for now I will just enjoy and listen to what my body tells me. 
 
 



 
 
Back to my first Homemade Juice.. I decided to try the easiest one,  I did a lot of research for the best First Juice Recipe.
I used 1 Apple, 1 lemon, 1 Stalk of Celery, 3 Oranges, and 4 Carrots.
 
 
I was so surprised on how good it taste, Hubby tried it and of course he said it taste weird.. But for me I loved it! I'm so excited to try different Recipes. I want this to be one of things I will have for breakfast or lunch, If I'm not having a smoothie. (which I'm so addicted to) haha
 
The only hard part was cleaning though, I'm thinking of making it ahead of time next time and put it in the fridge, It's better when it's cold anyways.

Sunday Meal Prep

 
 
 
Hello Everyone! I hope you are all having a good Sunday!
 
It's Sunday Meal Prep time again! I'm so happy that we are keeping on track on our goals so far, We only had one cheat meal this week, We usually eat so bad during the weekend, We decided we will just have one cheat meal a week, which is really good.
 
We had Pizza yesterday, And it was so awesome!
 
Anyway...
 
For Meal prep this week
I made Grilled Chicken, Baked Salmon, Roasted Potatoes, Hard boiled eggs and steamed vegetables.
I will do a lot of Juicing for breakfast this week for the first time I usually have smoothies for breakfast so I'm so excited!
 
 
 
 
 
 
 
 
I always feel so accomplished when I see all our food done and packed up for the week. I need different ideas for Meal prep, What do you have planned for the week?

Cantaloupe Smoothie

 
 
 
 
 
It's the first coldest day of the year, the only thing that made my day a little better is the sunshine, If it's cold but sunny, I'll be fine.. And oh, another thing that made my day better is this Smoothie.
 
I know I should have made something that will make me warm, But I really love Smoothies it gaves me a lot of energy and it fills me up fast. And I haven't made smoothie for a while I had a lot of Holiday drinks this past few weeks! :)
 
 
Ingredients:
 
  • 1 Frozen Banana
  • 2 Cups Cantaloupe, cubed
  • 1 cup milk (depends on how you like it)
  • 1/2 cup of vanilla non fat yogurt
  • 1 tsp of honey
  • 1 cup of ice

    Blend it all together until creamy and smooth

    I get my motivation from my Family, my light...my love..my progress..my struggle.
    Every bump in the road is there to solidify what I've learned, to bring on more lessons, and to redirect me if I'm going the wrong way.
     
     Everyday there's something to inspire me if I choose to open my heart to the wonders and beauty of life. And everyday I have the choice to put my trust in the Universe and listen for guidance. There's no way I've gone through all of this to only stay here.
     
    I am determined to progress towards, and even surpass, my wildest dreams. And it's my thoughts, decisions, and actions are what will make my daydreams manifest into reality.
     
     Every morning when I wake up, I can choose to be my own best friend or my own worst enemy.. To make the best of what I have to work with or let it break me, I can stand in the rubble or I can build a mansion from it.
     
    Ultimately, it's up to me to decide how much I really want it.

    Bacon-wrapped little Smokies

     
     
     
    Had a fun night last Saturday, We invited some people over for the game. I like it when hubby invite his friends over because I get to cook, of course!
     
    I made these Bacon wrapped lil' smokies. Every time we have party at the house I always make the Crockpot BBQ meatballs, But I wanted something different but kind of similar so we made this, It was easy and so good!
     
     
    Ingredients:
    • 1 lb. Bacon
    • 1 lb. lil smokies
    • 1 3/4 Cup Brown sugar
     
    Directions:
    • Pour 1 Cup of brown sugar on the bottom of the crockpot.
    • Cut strips of bacon into thirds
    • Wrap each strip of bacon around 1 little smoke, then poke a toothpick through to keep it in place.
    • Place bacon-wrapped smokies into crockpot.
    • Cover smokies in crockpot by sprinkling remaining 3/4 Cup brown sugar.
    • Cook on high for approx. 3-5 hours, or until bacon is completely cooked.
     
     
    I forgot to take a picture of it when It got done, but it was amazing! Thinking about making some more this weekend! :)

    Happy New Year!!!

     
     
     
    Happy New Year Everyone!
    I hope you all had a great time with your Family!
     

    We Started our day with a quick Skype date with my Family in the Philippines, Seeing them celebrating and hearing the fireworks makes me feel like I'm there.
     
    We just had a simple New year's Eve since my hubby had to go to work, I even fell asleep waiting for him, haha! But he got home just in time before midnight.

     
    There's a lot of tradition Filipino does for New year's Eve, I didn't do any last year but I decided I will start doing some of it, Starting this year.
     Having Round fruits on your Dining table for New Year's Eve represents continuity. It is said that having 12 fruits symbolizes the 12 months of the incoming year to be "fruitful".
     
     

     
     
    Hubby just picked up some Sushi on his way home, I didn't feel like cooking something big that night so sushi was fine to me, and some champagne.
     

     
    It was a good night! Hopefully next year we can do something more fun!
     

     
    For New Years Day we decided to just go out to eat, that's what we usually do on New Year's, On Christmas I cook a lot then on New year's I take a break from cooking.
     
     
    We finally got to go to Outback, Last month we tried to go there because we miss Blooming Onion so bad but they were not open for lunch and since it's New Years Day they opened early.
     


    I tried their Aussie Rum punch and it was so good!
     

     
    One of the reasons why I love Outback is because of their Honey wheat bread, It's just so good!
    I had their Caesar salad and it was good too.
     
     


    
    
    I picked their Dinner Combination that has Bacon wrapped shrimp and Sirloin, It was the amazing! The shrimp is a must try.
     



    Hubby had Rib eye, He always get the same thing every time we go there, He loves it. Their cheesy fries was awesome!
     
    After that we went to our Friend's House Party, It was fun!
