Orange-Cucumber Infused Water





Hi Guys, I hope you are having a great week so far! 
This week has been good so far. 
It's going to be a busy couple of days getting ready for my son's Birthday
I'm excited for that!
But, before i start getting M.I.A 
I want to make sure that i get to post this Infused water that i got to try today.
Infused water is all over the internet, I actually told myself that I don't want to try it
But I'm glad I did!
Infused water has so many benefits, It's really good for your body and 
this is good for somebody that is trying or wanting to drink more water.  


For today, (well, I made this yesterday and I let it sit in the fridge overnight)
I made Cucumber-Orange Infused water. It was really good. 
So refreshing! Perfect drink after workout.

One pan Cheesy Chicken, Broccoli and Rice






Made this amazing dish last night, I can't believe how good it turned out.
It's perfect for a busy weeknight meal. It's easy to make.

Rice is one of the staple food in the Philippines, We eat it with every meal.
Sometimes we eat it plain, or Fried rice.
I usually just like to eat plain rice and I know my husband get tired of plain rice (since i make him rice all the time)

So i decided to try something different last night and it was really good, I was worried that the rice won't be cooked because I usually cook rice on a rice cooker, Just make sure you put enough Broth and add more if you think it's not done. The broth add a really good flavor on this dish.

I hope you will like it!


One Pan Cheesy Chicken, Broccoli and Rice



Ingredients:
  • 3 Tbsp. Olive oil
  • 1/2 Onion, finely chopped
  • 1 Lb. Boneless chicken, cut into bite sized pieces
  • 2 Cloves garlic, minced
  • salt and pepper, to taste
  • 1 Cup uncooked white rice
  • 2 Cups broccoli florets, cut into bite sized pieces
  • 2 1/2 Cups chicken broth
  • 2 Cups shredded cheddar cheese

Directions 

  • In a large skillet or pan, saute onions in two tbsp. of olive oil over medium heat.
  • Season chicken with salt and pepper.
  • Once onion is soften, increase the heat to medium high and add chicken to the pan.
  • Brown the chicken pieces and add the garlic.
  • Cook for about 2 minutes.
  • Push the chicken to one side of the pan and add additional olive oil.
  • Add the uncooked rice in the olive oil and saute it for a couple of minutes.
  • Add the chicken broth to the pan and bring the mixture to a boil. Lower the heat to a simmer and cover that pan with a lid.
  • Cook chicken and rice mixture for about 12-15 minutes.
  • Sprinkle broccoli evenly to the mixture and stir to combine
  • Continue to cook covered another 8 munutes on low, or until the broccoli and rice are both tender.
  • Remove from heat and stir in the half cup of cheese.
  • Sprinkle remaining cheese on top and over with a lid, letting it sit for 1-2 minutes until the cheese has melted.

Oven Roasted Potatoes




This is a very simple side dish that's for sure to become a family favorite! 
It's a perfect side for pretty much any meal!

You can easily change the seasonings of this recipe to your favorites (or whatever you 
have on hand) Let me know what you think! :)


Oven Roasted Potatoes 


Ingredients:

  • 4 Russet potatoes
  • 1/4 Cup olive oil
  • 2 Tbsp. honey
  • 1/4 Tsp. salt
  • 1/4 Tsp. pepper
  • 1/4 Tsp. garlic powder
  • 2 Tbsp. parsley flakes



Directions:

  • Wash and cut the potatoes (you can cut it in wedges or like this)
  • Place salt, pepper, garlic powder in to a large ziplock back or a mixing bowl.
  • Add potatoes and shake them together
  • Next add the olive oil and honey and toss until potatoes are coated.
  • Line baking sheet with aluminum foil.
  • Place potatoes on the lined sheet and sprinkle some parsley flakes
  • Bake at 350 F for 30-35 minutes flipping it halfway through.
  • Serve with ketchup or ranch.

Hi guys! How's your day so far?
I'ts friday! Yay, It's the weekend!
Were going to have a busy weekend, and i like that!

It's really starting to get a little warm and I crave Smoothies on warm days, 
So today i made this, Definitely one of the best smoothies I made. 

Orange-Papaya Smoothie


Ingredients:
  • 1 Frozen banana
  • 2 Cups frozen papaya
  • 2 Oranges
  • 1/4 Cup greek yogurt
  • 1/2 Cup water (less or more depends on your preference, you can use milk or coconut water too)
Directions:
  • Toss everything in the blender. Blend everything until smooth.




If you guys notice i didn't use ice, i usually don't if i have frozen ingredients.
I love adding frozen fruits because it makes it thicker, you can still use ice but I recommend just using frozen fruits, It's much better I swear!

Maple Mustard Glazed Salmon





For meal prep last night, I made this awesome dish. 
I have been making Chicken dishes these couple of weekends, This weekend decided to change it a bit and make Salmon. 
I highly recommend!

Ingredients:

  • Salmon Fillet, 4 pieces
  • 1/4 Cup Butter, melted
  • 1/4 Cup Maple Syrup
  • 2 Tbsp. Dijon Mustard
  • 2 Tbsp. Soy sauce
  • Salt and pepper to taste

Directions:

  • Preheat oven to 425 F degrees
  • Arrange salmon pieces in a 9x13 inch baking dish
  • In a small bowl, whisk together melted butter, maple syrup, dijon mustard, soy sauce and add some salt and pepper if preferred.

  • Bake about 15 minutes or until salmon flakes with a fork.

  • Serve over rice.

Delicious Sunday Dinner




For our Sunday dinner, we decided to have something homemade 
well, actually I have been craving for this corn dip for a while and I'm glad
hubby said yes when i told him i will make it this weekend. 
It's so easy to make! 

Corn Dip

Ingredients:
  • 2 Cans Mexican Corn, drained
  • 2 Cups shredded cheese (i used Mexican blend)
  • 1 Cup Mayonnaise
  • 1 Cup Sour Cream
  • Green Onion ( I chopped a whole bundle)
  • Salt and pepper to taste
  • 1/8 Tsp. Sugar


Directions:
  • Mix everything in a big bowl, Refrigerate for at least an hour and serve with tortilla chips.



 Enjoy!

Crockpot BBQ Pulled Pork 



..And then for Main Dish we had BBQ Pulled pork Sandwich 
There's something about BBQ that i love so much.


Ingredients:

  • 3-4 lbs Pork loin, roist trimmed all visible fat
  • Pork rub or any seasoning of your choice
  • 12 oz Dr, Pepper
  • Barbeque Sauce


Directions:

  • Season your pork loin on all sides with your rub. 
  • Place your pork loin in your Crockpot and pour in the Dr, Pepper 
  • Set your Crockpot to low and cook for 8-10 hours
  • Remove pork and drain most of the liquid from the crockpot.
  • Shred the pork and return it to your crockpot
  • Add the barbeque sauce and cook it until its heated through 
  • Serve on a bun.

Green Smoothie bowl and a Healthy Dinner





Woke up to a delicious breakfast Friday, I usually make Smoothie bowl on Fridays, 
It's like eating a big bowl of ice cream the only difference is it's healthy. :)



Ingredients:
  • 2 Cups Spinach
  • 2 Frozen banana
  • 1/2 cup frozen yogurt
  • 1 cup milk (or water)
  • 1 cup of ice (more or less depends on your liking)
Directions:
Toss everything in a blender, blend until smooth. 
For topping i added sliced Bananas, Mangoes and Shredded Coconut, 
You can definitely add whatever fruit you want.

For dinner, I had some Salad from Quiznos, They have a lot of good
Healthy choices for Lunch/Dinner

I had this Lobster Seafood Salad, It was so good

Sweet and Spicy Bacon wrapped Chicken and Post Birthday Celebration


It definitely felt so good to be home. 
The smell of the clean house was a really nice welcome home smell.
Did a some unpacking and slept like a baby Saturday night.

I didn't feel like cooking Sunday but i know have to make something
I usually make the food for hubby for the next week, it's easier like that. 
Especially when he needs to leave early. 
I don't like rushing when i cook.



I made this before but i didn't like how it turned out, I baked it in a baking dish 
and it just turned out watery, and not crispy.
I definitely recommend grilling this, But you can bake this too this way
if you have a oven proof baking rack, the bacon turned out crispy.

 Ingredients:
  • 4 Chicken breasts cut into thirds
  • Bacon slices
  • salt and pepper to taste
  • garlic powder
  • chili powder
  • brown sugar


Directions:
  • Preheat oven to 400 degrees
  • Cut chicken breasts into 2-3 pieces.
  • Season all chicken with the spices, then wrap a bacon slice around each piece
  • Roll in brown sugar and place into an oven proof baking rack
  • Bake at 30 to 40 minutes or until chicken is cooked through and bacon is nice and crispy.
  • Serve with mash potatoes or pasta. Enjoy! :)



We also had a post Birthday celebration.
We decided to wait til we get home to have the cake that i have been craving for.


This ube cake was so delicious!


Not hubby's favorite since it's his first time trying it but i know he liked it 
especially with vanilla ice cream.

26th Birthday: Dinner at Captain George's





Before going back and leaving Virginia, We stopped by at 
Captain George's Seafood Restaurant, They have 4 locations here in the U.S 
and when we got to try it in Myrtle Beach last year, I was so excited to come back.
I was so happy that there's one in Virginia Beach.


There's a lot of good Restaurants in Virginia beach, I specifically looked for a seafood restaurant.
But i still picked the ones I been to, I wasn't in the mood to go somewhere else i haven't been to.
And I am happy i made that decision, Captain george's is really good. 


Even though they were packed, I had a great Birthday dinner.


I ordered this drink and it was so good.


One of the things i like about going to a buffet is that you get to pick what you want to eat.
And especially with my taste, I like to eat variety. I have to have different stuff on my plate.
I don't know if that's weird which my hubby is saying but i don't know
I just like different flavors on my plate. 

Since I was really craving for seafood i tried most of their seafood and i really loved that oysters, probably one of the best oysters i had.

I had another plate of different stuff that got a little bit of everything, That definitely made me so stuffed. But who cares right? It's my Birthday.


I can't pass dessert they have too many that you have to try, So hubby got two plates for us to share that have a couple of  stuff each. Little man helped too. Carrot cake was my favorite.



The waitress was so nice to me, I wasn't expecting for a special Birthday cake for me since it's a buffet but she gave me one, and told me i can bring it home if i can't eat it anymore.

She was so nice!


Birthday dinner was awesome.
I would definitely come back.

After dinner we head back home.
It was a really great weekend, definitely one of the best Birthday ever.

26th Birthday: Virginia Zoo

 
 
 
Before going to dinner for my Birthday Saturday,
We went to the Zoo.
It was a 20 minute drive, It's in Norfolk Virginia,
But I thought it worked out perfectly because
after our walk at the beach little man was tired.
So he got to take a nap before we get to the Zoo.
 

The Zoo was nice, It was bigger than I expected.
I think I had more fun than little man. haha!
 


 
There was a lot to see, Little man loved all of the animals he saw.
 
 
I loved this 2 big Elephants, they are really big!

 
 

 
Giraffes and Ostrich are ones of the biggest animals there too.

 
It's Little man's first trip to the Zoo, I think we should take him again
sometime this summer.

 
 
 
We got so tired from walking.
But it was all worth it. We had a fun time.
 
We left and went to Dinner. I was pretty hungry.

26th Birthday: Sunrise, Morning Swim and a Walk by the Beach.

 
 
 

Started my Birthday in the most perfect way.
I had a hard time going back to sleep, So I just decided to stay awake, practice yoga,
And wait for the sunrise.
 

 
Little man was up early with me too.
He was fascinated with the view just like
mommy.
 
 
Watching sunrise was perfect, I was speechless.
It was a little chilly but I got a little warm when I started practicing yoga
I posted most of them on my Instagram ( Here  )
 
 
When hubby woke up, we decided to go for a swim and walk around the hotel
since we only had couple of hours left at the hotel.

 
The indoor pool was so nice, Even though it was still a little cold for
a swim. They have a Spa/Hot tub
Which I enjoyed for a little bit, It was really nice!
 
 
Little man just played beside the pool.
I understand why, It was a little cold.
 
 
 
They also got 2 outdoor pool, I bet it's so nice to swim on these
pools in Summer.
We need to come back.
 
 

 
After checking out, We went for a walk on the boardwalk.
This statue looks pretty cool in person.
 
 
There was a lot of people trying to take a picture with it,
good thing we had a chance even though it was fast.
I wanted to do some Handstands but there was too many people there
haha!
 
 
 
 
The beach is beautiful, I prefer white sand beach but it's still nice.
It was a little cold but if you stay out in the sun, You won't feel it that much.
 
 
We had to hurry and end our walk because little man was saying eat,
He was ready for lunch and some nap.
 
 
 
 
Before leaving we stopped by at a gift shop and bought
our Travel collection.
Fridge Magnet, I can't wait to have more of this.
 
 
After that we went to Virginia Zoo.
 
Goodbye Virginia Beach.
