Dinner at Logan's Roadhouse


It has been a while since we went out for dinner, We are not really trying to avoid to eat out, 
But I have been wanting Homemade food than buying food somewhere.

Last Sunday, Hubby's friend was in town. 
He haven't seen him for a long time so they decided to meet up, 
I didn't mind not going but hubby wanted me to go so I did.



It's my first time trying out this restaurant. 
I don't understand why I never thought about trying out this restaurant.
It was really good, the peanuts and their rolls was probably one of the best part.



I decided to try this steak, It's called Tereyaki steak. 
I was so curious, and never had anything like this.

It was really good.
I highly recommend.

Stuffed Bell Peppers



I love finding recipes that is easy and healthy, 
Something like this recipe.
I have been seeing this everywhere online and I'm glad I finally got
to make it. 
It's really easy and so delicious!

Stuffed Bell Peppers

 Ingredients:
  • 3-4 Green or Red bell peppers
  • 1-2 Links (8 ounces each) Sausage 
  • 1 Medium white onion, chopped
  • 2 garlic wedges, minced 
  • 1 Cup brown rice, or white rice
  • 1 Cup Cheddar cheese
  • Salt and pepper to taste

Directions:
  • Preheat oven to 375 F.
  • Cut the tops of the peppers and remove all seeds and white stuff.
  • Heat olive oil in a large skillet over medium heat. Stir in onions, garlic and fry about 2 minutes.
  • Stir in Sausage, season with salt and pepper and  cook the meat until it is no longer pink.
  • Stuff the mixture into the hollowed-out peppers. Place stuff peppers onto a baking pan.
  • Bake in preheated oven for 30 minutes.
  • Top with cheddar cheese and bake for additional 5 minutes.

Delicious weekend Meals




Hi guys! 
I hope you had the best long Weekend.
We did a lot of relaxing, Which was really good.

Friday: We decided to grill, It was a perfect day to do it. 


Hubby grilled these delicious Bacon Wrapped Brats. 
It was my idea to wrapped it in bacon, I mean anything is good with bacon right? hehe 


Then I made this delicious Pasta Salad, It was made with Boxed Pasta Salad Mix
I wasn't in the mood to make it from scratch.
I added some few stuff to it though.
I added some Pineapple tidbits, Raisins,Cooked Chicken breasts (chopped), Grated Cheese and more seasoning.
It was so good! 

 Saturday: We went to our Friend's Wedding, and I had a blast!


Sunday: We grilled again. It was so nice to have  a lot of relaxing days with hubby.
I was a little hangover. (maybe not little) haha! 


Then Monday, which definitely felt like Sunday. 
We had a Filipino dinner.
I made this delicious Filipino dish which is one of hubby's favorite.

Then it was also Meal prep day. So I made the usual Food I make.( Sunday Food Prep )
The only different I made was this.


I always make sure there's vegetable on our food for the week, I always make the same ones and I decided to try different one this week. It was so good and easy to make! 

Baked Parmesan Zucchini and Squash 

Ingredients: 

2 Zucchini 
2 Yellow Squash 
1 Tbsp Olive Oil
1/4 Tsp. Pepper
1/4 Tsp. Garlic Salt
1 Cup Grated Parmesan Cheese 

Directions:

Preheat oven to 450 degrees.

Cut squash and zucchini in slices and toss with olive oil.

Place on greased cookie sheet.

Sprinkle with garlic salt, pepper and parmesan cheese.

Baked for 20 minutes or until lightly browned on top.

Beautiful Wedding on a Beautiful Day!



It was such a beautiful day Saturday.


We went to our friend's wedding, her location was beautiful.
It was on a Battlefield. which was really nice!

..And she absolutely looked stunning, one of the most gorgeous bride I've ever seen!  


The Reception was in the same location in a barn, 
Her decoration was so beautiful!
Every detail is so good.


This was little man's favorite part of the reception, He would even go there himself to get a candy! haha



I just love all of her decorations.

Awesome food, some drinking (which i think I had a little too much)
and Dancing.

It was a great night! 


I can't get over how cute little man that day, 
I got most of his outfit in Target. ( ah, i love target)


I wore a dress that I bought last Spring, Yup it was in my closet all year and didn't get to wear it til that day.

Oreo Red Velvet Cupcakes




Finally got to make Red velvet cupcakes, been thinking about making frosted cupcakes
for a long long time. I always have second thoughts about it because my husband is not really 
a cake/cupcake eater, that's one of the reason why I make lots of Cookies because that's his favorite, And I don't want to eat all of the dessert I make by myself. 


I told him I want to make a dessert and he said he doesn't care what it is. 
So I made these! 
It might not look perfect but I'm just so happy to say that I made this myself! 
And of course, I don't mind sharing the recipe with you.

Oreo Red Velvet Cupcakes 

Ingredients:
Red Velvet Cake:
  • 1 Box Red Velvet Cake mix
  • 3 Eggs
  • 1/2 Cup oil
  • 1/2 Cup Sour Cream 
  • 1/2 Cup Milk
  • 24 Oreos
Oreo Buttercream:
  • 10 Oreos, twist and scrape off the cream filling
  • 1/2 Cup butter, softened
  • 8 Oz Cream Cheese
  • 2 tsp. Vanilla extract
  • 3-4 Cups Powdered Sugar
  • Extra Oreos for Decoration
Directions:
  • Preheat Oven to 350F and line pans with cupcake lines.
  • Sift cake mix into a small bow and set aside.
  • In a large bowl, combine eggs, oil, sour cream, milk and vanilla extract until smooth.
  • Stir in cake mix.
  • Take Oreos and place one at the bottom of each cupcake liner.


  • Scoop batter over each oreo to fill the liner about 3/4
  • Bake for 20 minutes or until knife comes out clean.
  • Let cool.
Oreo Frosting:
  • Take your Oreo cookies (Just the chocolate pieces not the filling) and crush in a food processor or plastic bag using a rolling pin.
  • Sift finely crushed oreos to remove any lumps 
  • In a stand mixer, beat butter and cream cheese. Add vanilla extract and slowly add powdered sugar until you reach your desired consistency.
  • Fold in crushed Oreos. 
  • Pipe onto cold Cupcakes and top with extra Oreos.

Watermelon Strawberry Smoothie




I woke up today so excited to make smoothie. 
It's been so hot these days, And It's the season for smoothie
Season for anything Cold!!! 
I've been having smoothies a lot and I think I will have more this Summer! 

I'm so happy too that for the first time, Hubby said that this Smoothie is really good
(He's not a fan of Smoothie) haha!


Watermelon Strawberry Smoothie 

Ingredients:

1 Cup Frozen Banana
1 Cup Frozen Strawberries
2 Cups Watermelon
1/4 Cup Greek Yogurt
2 Tbsp. Honey
Ice (Depends on how much you like)

Directions:

Toss everything in the blender and blend until Smooth.

Strawberry Spinach Salad





All I want to eat these days is salad.
Something light, fresh, easy to make and healthy.
Today I decided to try to add some fruit on my Salad and it was really good.
The dressing was a perfect combination too. 
I highly recommend. 

Strawberry Spinach Salad

Ingredients:

Spinach
Sliced Strawberries
Pecans

Dressing:

2 Tbsp. Apple Cider Vinegar
2 Tbsp. Honey 
1 Tbsp Sugar 

Directions:

Wash, cut and prepare spinach and strawberries. Mix up in a bowl
Add pecans and your favorite topping.
Mix apple cider vinegar, honey and sugar. 
Add to salad just before eating.

Enjoy!

Airshow



 Had a fun day last Saturday at the Airshow, I wasn't feeling that good
but it didn't stop me from going.







It was really hot, But watching this was worth it.
I think little man had fun too. Well,not til the end. 
He didn't like how loud it was when it was almost over.







There was a lot of activities to do and a concert, But we didn't stay that long 
because little man wasn't too happy.
But It was a really good day.

Crescent Rolls


Last Friday, Hubby had a potluck to go to. 
I didn't feel like making dessert since that's what I usually make every time he goes to a potluck and
I wasn't feeling  great so I decided to make something easy, I have made this a lot of times before
so i know everybody would like it, And since hubby loves Buffalo Chicken I made Stuffed crescents with Buffalo chicken too. 
It was a really good idea.




Beef Stuffed Crescents

Ingredients:
  • 1 lb Ground Beef
  • 1 Can Chopped green chilies
  • 1 Package (8 ounces) Cream Cheese
  • 1/4 Tsp. Ground Cumin
  •  1/4 Tsp. Chili powder
  • 2 Tubes (8 piece each) Refrigerated crescent rolls


Directions:
  • In a large skillet, cook beef and chilies over medium high heat until meat is no longer pink; drain. Add cream cheese, cumin, chili powder and cool slightly
  • Preheat oven to 375 F. Separate crescent dough into 16 triangles. Place 1 Tbsp. of beef mixture long the short side of each triangle; Carefully roll up.
  • Place point side down 2 inches apart on ungreased baking sheets. Bake 12 minutes or until golden brown. 





Buffalo Chicken Crescents
Ingredients:
  • 8 fully cooked fried chicken fingers ( I used frozen Tyson crispy chicken strips)
  • 4 Slices Provolone cheese, Cut in half
  • 1 Can crescent rolls
  • 3/4 Cup Buffalo wild wing sauce
  • 1/4 Cup Ranch dressing (Plus more for dipping)


Directions:
  • Preheat oven to 375F
  • Separate rolls into 8 triangles
  • Pour wing sauce and ranch dressing into a bowl. 
  • Place one half slice of provolone cheese on top of crescent roll. 
  • Dunk chicken finger into wing sauce and place on top of cheese. 
  • Roll up crescent and place on cookie sheet. Repeat with remaining chicken fingers and crescent.
  • Bake for 18 to 20 minutes or until golden brown.

Delicious French Toast.





I used to make Pancakes or French toast every Friday before, But for some reason I stopped 
craving it. 
But last Thursday, I woke up craving for something filling but something I can put fruit as topping.
So I made this delicious french toast, I wasn't even planning on making something that I will post, But this looks too good!
I used the Homemade bread that I always make.

Topping is Sliced strawberries and Pecans. It was so good!

Mother's Day


Belated Happy Mother's day to all of the moms that is reading this!
I hope you got to enjoy your day. :)


My day didn't started that perfect but this flowers definitely changed my mood. 


Felt like Flowers is such a waste of money, So I told hubby before that I'd rather get something else
But looking at this kind of changed my mind about it.

They are so pretty, and it's still so nice to recieve flowers sometimes.


Little man had a busy couple of days going to Birthday party's 
So he was kind of feeling under the weather.
I thought about cancelling our dinner plans especially it was raining really hard.
But I'm glad we still did.


We went to Olive garden for Dinner.
The last time we went there was last year, For hubby's Promotion celebration.
I always leave this restaurant so satisfied.


We had Appetizer sampler. 
With Calamares, Mozzarella sticks and Stuffed mushroom.
My favorite was the Stuffed mushroom, It was really good.
I also had salad. 


We ordered Pizza for little man.
This is his favorite food these days.



Hubby got Tour of Italy. 


...And I had a Lasagna with Stuffed Sausage Rigatoni.
I always have White sauce dish every time we eat there. 
It's good to try different this time.
