Homemade BBQ Meatballs




.
This is the best meatball recipe I had so far! 
I got this Recipe from my Husband's Aunt 3 years ago. It was so nice of her to give us her recipe.

I love anything BBQ, so If you are like me you will love this!





Ingredients:
  • 3 lbs. Ground Beef
  • 1 Cup Oatmeal
  • 1 Cup Bread Crumbs
  • 2 Eggs
  • 1 Can Evaporated milk
  • 1 Tsp. Salt
  • 1 Tsp Pepper
  • 1 Tsp. Garlic Powder
  • 1/2 Tsp. Chili powder
For the Sauce:
  • 2 Cups Ketchup
  • 1 Tsp. Garlic powder
  • 1 Tsp Liquid Smoke
  • 1 Cup Brown Sugar
Directions:
  • Preheat oven to 350F
  • In a medium bowl combine all of the ingredients. Mix well. (But don't over mix it. it will result in to a tough meatballs.
  • Shape the mixture into walnut-sized meatballs.
  • Place meatballs on a prepared baking pan or casserole.
  • Mix all the ingredients for the sauce. then pour it on top of the meatballs
  • Bake for 1 hour.
  • Serve with rice or mashed potatoes or any sides you prefer.

Wednesday Shopping and Cracker Barrel.




Wednesday was such a perfect day for shopping,
It was really really hot, But shopping when there's not much 
people out is so good!



After shopping we went to Cracker Barrel for Dinner,
The last time we were there was last year.
Cracker Barrel is an American chain of combined American restaurant and gift stores with a Southern Country theme. 
They serve Southern Food if you haven't been there. 
I love love Southern food! 
They have good breakfast meals, But this time i tried their dinner. (They serve breakfast all day long)


I had their Cracker Barrel Sampler, Since I love variety when eating.
It was one of the best Country food I had, their mac and cheese, Chicken and Dumplings and coleslaw was the best!

JustFab



Feels like Its so much better to do shopping online than in person.
You get to see everything easier than spending time looking on racks at the mall.
I know there's still some disadvantages.. like, if you buy clothes online there's possibility it won't fit as good.. even though it's your size.

That's why when I do online shopping, It's usually for shoes or other stuff.
With clothes, I do that at the mall.
I decided to try this website called JustFab.
If you love shoes you are going to go crazy when you see the 
selections on their shoes.

I also registered to be VIP which made me scared a bit,
I looked on reviews everywhere, there's good and bad.
But I will definitely update you guys on how is it after this first purchase I did.


They don't just have shoes, they pretty much have everything girls likes
I love this bag, been wanting to have this kind of bag. 
It's going to be perfect to use on our Summer vacation.
And... with shoes.
 It was a really hard decision which one to get 
but I'm so glad I picked these two. 
They have this deal $39.99 for two shoes, I mean how awesome is that?
You have to be registered VIP though to get the deal.

All of this was worth $104.85
After all of the discount i only paid $41.91
Which saved me  $62.94 
I mean, that's a lot of savings right?!

I can't say i recommend this site 100% but with the price and the quality of their stuff 
I can say it's worth buying from this site.
I will update you guys on how I think about being VIP. 
some people say negative things about it. 

But for now, I will enjoy my purchase!

The Best Banana Pudding




I finally got to make Banana Pudding, 
One of the things I love about moving here in the US is I get to try food/dessert
 I never had before.
The first time I had this was at one of Thanksgiving dinner we went to, 
after that day I told myself I will learn how to make it.


The first time I made this It didn't turned out good, It turned out runny.
I forgot what I did wrong. 
But I'm so glad I found the best recipe.


It actually didn't turned out that perfect, Because I ran out of Chessmen Cookies
for the topping.
So I had to get creative, I crushed some cookies then sprinkle it 
to cover the sides.
And I think It turned out really good!



Ingredients: Inspired by (Lick the Bowl Good)
  • 2 Bags Pepperridge Farm Chessmen Cookies
  • 6 to 8 Bananas, Sliced
  • 1 3/4 Cups milk
  • 1 ( 5 ounce) box instant vanilla pudding
  • 1 ( 8 ounce) cream cheese, softened
  • 1 ( 14 ounce) can sweetened condensed milk
  • 1 (12 ounce) container cool whip
Directions:
  • Line the bottom of 13 by 9 inch dish with bag of cookies and layer bananas on top.
  • In a bowl, combine milk and pudding mix and blend well using a electric mixer.
  • Using another bowl, combine cream cheese and condensed milk together and mix until smooth.
  • Fold the whipped topping into the cream cheese mixture.
  • Add the cream cheese mixture to the pudding mixture and stir until well blended.
  • Pour the mixture over the cookies and bananas and cover with the remaining cookies.
  • Refrigerate until ready to serve.

Cookie Heaven!






Last Thursday was probably the longest time I have ever bake.
Hubby requested for some cookies for a picnic at work.

I didn't mind baking that long, It was actually fun!
The house smelled like sugar for a while!haha!


Little man go so excited seeing these cookies, he loves cookies! I mean who doesn't?!

Smothered Pork Chops (Crockpot)






I usually cook on Sundays, but last Sunday we were out and about 
and I didn't have much time to cook.
Thank goodness for Crockpot! It's one of the best kitchen appliance you could ever have. 


This meal is really perfect for winter, I've been making the same meals these days
so even though it's not winter, It's so hot...I decided to give this meal a try.

It was really good, Pork chops is not one of the meat that we usually eat.
I like eating Pork chops when they are soft and cooking it in the Crockpot is the best way to do that.
I highly recommend this Recipe!

Smothered Pork Chops

Ingredients:
  • 4-5 Pork chops 
  • Salt and pepper to taste.
  • 1/2 Tsp. paprika
  • 1/2 Tsp. garlic powder
  • 1 Tbsp. olive oil
  • 1 Small onion, diced
  • 2 Cups mushroom, sliced
  • 1 Can cream of mushroom soup
  • 1 Can cream of chicken soup
  • 3/4 Cup beef broth




Directions:
  • Preheat olive oil over medium high heat.
  • Season pork with salt, pepper, paprika, garlic powder. Brown pork on each side (about 3 minutes each side)
  • Remove pork and add broth and soup to the pan and whisk to release any brown bits in the pan.
  • Lay onion and mushroom in the bottom of the slow cooker. Top with pork and pour the soup mixture overtop.
  • Cook on low 7-8 hours or until pork is tender.
  • Serve over rice.
I served this over Roasted potatoes and it's so good! Oven Roasted potatoes

Jalapeno Chicken Casserole





Hi guys!
If you have been following my blog, You know how much my husband 
loves anything spicy, So I love to make something spicy for him. 
Yup, Just for him since I'm not a fan of spicy food. 

But, with this one I made it a little less spicy by taking off the seeds and it worked.
I love anything with cream cheese so there's no way I'll pass up this one.

Ingredients:

  • 6 Chicken Breast
  • 6 Slices Bacon
  • 3 Medium Jalapenos ( De-seed if you don't want it to be too spicy)
  • 12 oz Cream cheese
  • 1/4 Cup Mayonnaise 
  • 4 oz. Shredded Cheddar cheese
  • 2 oz. Shredded  Mozzarella cheese
  • 1/4 Cup Frank's Red hot
  • Salt and pepper to taste

Directions:
  • Preheat oven to 400F and Season chicken with salt and pepper.
  • Lay on a cooling rack over a cookie sheet wrapped in foil.
  • Bake for 40 minutes.
  • Chopped bacon into pieces and put into a pan over  medium heat.
  • Once bacon is mostly crisped add jalapenos into pan.

  • Once Jalapenos are soft add cream cheese,mayo and frank's red hot to the pan. Mix together and season with salt and pepper to taste.
  • Remove chicken from the oven and let cool slightly. 
  • Lay chicken into a casserole dish, then spread cream cheese mixture over it, then top with cheddar and mozzarella cheese.
  • Bake for 10-15 minutes at 400F. Broil for 3-5 minutes to finish
Optional: Top with extra jalapenos before you broil.

Anniversary Weekend.







We didn't get to celebrate our anniversary on our anniversary day,
So we decided to celebrate it yesterday. 

It was a great day, We haven't done this for a while.
Do something together alone.
We are usually with our son all the time.
But today we decided to do something to make it work.


We went to the watch San andreas, It was so good!
We went for the first screening so there was only like 6 people watched with us.
I loved that! 

It was a good movie,
It was hard to stay on my seat the whole time.
I highly recommend! You will not regret watching it.




After that we went to Texas Roadhouse, 
This restaurant is newly opened in our town.

The first time we tried to have dinner there it was closed,
It sucks when some steakhouses doesn't open til 4 Pm on weekdays,
It would be nice to go have lunch on restaurant like this during weekdays.


I finally got to try this awesome rolls.
I've seen lots of recipe of copycat of this.
One of the things I love about some restaurant is their rolls,
I know.. Its not good for you, But having one won't hurt at all (If you got the power to control yourself) haha! 




For drink I decided to try this drink called "Hurricane margarita"
It was so good. 

  

For appetizer we had "The Blossom"
I like how crispy is this one compare to the ones from Outback Steakhouse.
But, their seasoning is still better.



Hubby had Prime Rib, I don't like it when steak is this raw. 
But.. we all got different preferences.


I had a combination of steak and shrimp. 
It was one of the best I've ever had. 
The shrimp was on point and the Sweet potato is probably the best I had so far.

4 Years down, and Counting...




It's been 4 years ago when we said our " I do's" 
We made a promise to love each other.
Through good times and bad times.

It was a magical day, and I love reliving it all the time.
We didn't get to plan our wedding a lot but I wouldn't have any 
other way.
It's still the perfect/best day of my life.



Four years seems so fast, but we've been through some stuff,
Had a baby, successes and failures, had a complete and total joy,
few good fights. some travelling. and through it all. Best 4 years of my life.



Thank you for being my Husband, partner, lover, and best friend. 
Can't wait to grow old with you.

My Yoga





Most days, My practice is dedicated to gratitude,
I'm so grateful that i was led to starting a yoga practice
and never looked back..
However that happened.
I've never been so dedicated to anything in my life 
and i know this is just the way
it was supposed to be.

Yoga made me feel stronger, 
It made me feel I can do anything I want 
if i put myself into it.
Most especially, Yoga taught me to love myself,
It used to be all about losing weight,
Now it's not all about that anymore.
