Weekend Recap: Christmas decorations and lots of Relaxing.




It's finally beginning to look a lot like Christmas. 
It's definitely my favorite time of the year!

Many things have change since last year. ( Christmas Decorating 2014 )
One of them is that little man is getting bigger and bigger fast.
He is more excited when he saw these Christmas decorations.
He kept on saying Merry Christmas. 
I told him he will see Santa soon. ( Not sure when though)


I felt like crap Friday morning, After all of that eating.
getting the motivation to workout is the hardest but I'm so glad I did
I felt so much better after that run.

Later that afternoon we went back to the mall and did a little shopping.
Just tried to see if we will see some good deals. 
There's not much that day actually. 



Saturday we decided to put up Christmas decorations.
I love it!


I can't help but smile thinking that this is our last year spending Christmas as 3.
I couldn't be more grateful.


Sunday, Me and little man spent our afternoon watching Christmas movies on Netflix.
He seem to love Mickey mouse now than last year. 
We watched Once upon a Christmas. 


While watching I'm waiting for this Ribs to cooked.
One of the reason I love Crockpot.
I mean, If you don't have one.
Better get some now!



I also made Hubby's favorite.

The best Ribs I've ever had, Really!!

Dinner was awesome, Now I'm ready to watch my Sunday night shows.

Thanksgiving 2015





Hello everyone!
How was your Thanksgiving??
Mine was amazing, Feels like Thanksgiving this year is different,
 I think its because I to try to do some things I never tried to do last year 
Thanksgiving 2014 ) Last year was good too!

Anyways, I have been busy this weekend so I'm kind of late 
with my update, I finally decided to sit down and get motivated.


Wednesday night was a busy night, 
I got some of the food ready so I don't need to wake up really early 
to do it. 
I don't think I would be done if I decide to wrap Lumpia (Filipino Egg Rolls) Thursday morning.



I know I've said last year, ( Thanksgiving Prep 2014 ) that I'm scared to fail
and I don't want to take some risk so last year we just bought desserts to take to the dinner.
But, this year I think I made these desserts too often that I don't think I'll fail.

I made Pecan Pie ( Recipe Here )
And Blueberry Cheesecake Pie (Recipe Here ) 
And they turned out the way I want it to be. 



I was so happy!


Our friend had Fried Turkey and Oven Baked Turkey.
I prefer the Fried ones better. 



So much food!
I tried not to go for seconds, But i definitely snack a lot. 


Whose counting calories anyway? :)

It was definitely an awesome Thanksgiving with friends!



And... One of the first time I did on Thanksgiving night is going
Black Friday Shopping.
I used to not care about it, Especially I see a lot of videos how people shop
They don't care if they hurt people. 



But, now I see why people go crazy.
Black Friday Sale is the perfect weekend to do Christmas shopping
The deals are just awesome!
I mean you have to find the best deals but there's a lot of it.



Most people at the mall that we went to are actually nice. 
They will actually say excuse!haha!


I found some awesome boots that night. 
It was a blast.



And.. It was also a Special day because we decided to share to everyone our big secret.
Yes, We are expecting!

Maple Dijon Pork Tenderloin





I'm starting to get these weird cravings,
That I want different kind of food everyday.. 
I don't know if that's bad but last Friday I just went with it and made something 
I'm craving.
Hubby loves meat so he liked the idea too.
The flavor of this dish is phenomenal.
Hubby said he was surprise that I made something like this. 
It's going to be on my favorite recipes list.

It's a little tricky with cooking the meat, because the thicker the tenderloin you get
the more you have to cook it, So i suggest to cut it in slices 30 minutes of cooking it, Just put it back in the
oven to cook it more. It turned out really good!

Maple Dijon Pork Tenderloin

Ingredients:

  • 2-3 lbs  Pork tenderloin
  • 1  Large sweet potatoes, thinly sliced
  • 2 large red apples, cored and thinly sliced
  • 8 slices uncooked bacon, chopped
  • 6 tbsp. butter
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1/4 cup dijon mustard
  • dried sage or fresh ones
Directions:
  • Preheat oven to 450 degrees
  • Prepare 8x11 pan and spray with some cooking spray
  • Layer sliced apples and sweet potatoes in overlapping rows to completely cover the bottom of the pan.
  • Top with bacon and sage leaves. 
  • In a small saucepan, heat 2 tbsp. of butter, 1/4 cup brown sugar and 1/4 cup of maple syrup until melted. Drizzle over sweet potatoes,apples and bacon.
  • Place tenderloins on top; season with salt and pepper.
  • In a small saucepan, heat 4 tbsp of butter, 1/4 cup maple syrup, 1/4 dijon mustard and 2 tbsp of sage until melted. Drizzle over tenderloin.
  • Bake  uncovered 40-45 minutes or until internal temperature is 160 degrees. (If your tenderloin is thick cutting it would be a good idea and putting it back in the oven, that's what i did)

Pumpkin Roll with Cream Cheese Filling





Hello Everyone!
It's Thanksgiving next week! I'm so excited!
What's your favorite Thanksgiving dish or dessert?

I have been trying to stay away from anything that has too much sugar,
But... that's not going to stop me from baking.
A little bit won't hurt right? 

This is one of those desserts that I've been wanting to make for a long, long time
It's not as perfect as I wanted it to be, 
I'm planning on making these again ASAP 
But I'm so glad I finally got to make it.

Ingredients:

  • 3 Eggs
  • 1 Cup Sugar
  • 2/3 Cup canned pumpkin
  • 1 tsp. Baking soda
  • 1/2 tsp. Cinnamon
  • 3/4 Cup flour
(Cream Cheese Filling)
  • 2 tsp. soft butter
  • 3/4 tsp. vanilla
  • 8 oz Cream cheese, softened
  • 1 Cup confectioner's sugar
Directions:
  • Line a Jelly roll pan with wax paper. Spray the paper with pam.
  • Preheat oven at 350 F
  • Mix all of the ingredients until well blended
  • Pour in the pan and Spread to the edges of the wax paper.

  • Bake for 15 minutes.
  • Turn onto linen tea towel sprinkled with confectioner's sugar.
  • Peel off wax paper. Roll in towel and let cool.
  • Mix all of the cream cheese filling ingredients until well blended
  • Spread on unrolled cake. Reroll and chill before serving.
  • Garnish with confectioner's sugar if desired.

Chocolate Fruit Dip






Hi guys!!
Happy Sunday!
How is your weekend going?
So, about last night's UFC fight? What did you think?
It was so intense! 
Still shock that Ronda Rousey lost.
But it was definitely a good fight!

We had some friends over to watch the fight, It was a great night.
It's good to see friends.
We made some finger foods to munch on while watching football and waiting for the fight
It was so late, I thought I won't be able to stay up for it.

Anyway, I made this awesome Chocolate Fruit dip. 
You all know how crazy I am with fruits and even though its weekend 
I decided to make something a little healthy to munch on.
It was so good! and easy to make.


Ingredients:
  • 1 Cup heavy cream 
  • 1 Cup powdered sugar, divided
  • 1 (8oz) Cream cheese, softened
  • 1/3 Cup unsweetened cocoa powder
  • 1 tsp. Vanila exract

Directions
  • In a mixing bowl using an electric hand mixer, whip heavy cream until soft peaks form, add 2 tbsp. of powdered sugar and whip until nearly stiff peaks form, Set aside
  • In a separate bowl, whip together cream cheese, cocoa powder and 1/4 Cup of powdered sugar, vanilla extract until smooth.
  • Mix in the whipped mixture and remaining 1/2 cup of powdered sugar.
  • Chill until ready to serve. 
  • Serve with strawberries, apples, grapes or any fruit you  like.

Veteran's day dinner.




Hi guys!
How are you all doing?
Today is veteran's day here in the U.S. 
I'm still trying to get to know more about these kind of things here in the U.S.
Holidays, Politics, People. all those kind of stuff. 

Anyways, We decided to go out for dinner.
We never usually do that, But.. on Veteran's day some restaurants here
give free meals for people who served and still serving.
We know how busy it would be so we never tried, so tonight we finally did.
It wasn't that bad. 

I love and miss Olive garden so that's what I picked.



For appetizer we had a Shrimp scampi fritta.
I loved it, Hubby is not a fan of "citrusy" food so he said it was okay.


..And of course my favorite stuff. (salad not in picture) 
I literally could eat 10 of these bread. (I just had 3) haha!


Little man had a flatbread. 


Hubby had the create your own pasta. 
He's so good with picking food..Every time we eat out. His food is always the best.
I had my favorite cheese ravioli with meat sauce.

I wish I would get to try how good is real Italian food in Italy or somewhere I can 
taste the real thing.
Not that this is not the real thing.. Its just that I notice that most Asian food I had here in U.S 
there's always a touch of American. 
So it made me think that its the same thing with this one.
It's still good.
But I want to try the Legit Italian food.

One day!!!



I can't help but smile how good my little boy is every time we eat out now.
What a big boy.

Surf and Turf Sunday.





Hi everyone!!
How is your weekend going??
Feels like all we are doing this weekend is eat.
Well that's one of my favorite thing to do anyways! haha!

Anyways...
If you've been reading my blog,
You guys know that we do Special dinner on  Sunday's
It's just nice to have a nice dinner on Sunday's 
to finish the weekend.

Sundays should be all about relaxing, eating and spending time with family.
And oh... of course Football!

For tonight, We decided to have a Surf and turf dinner.
Even though the weather changed from yesterday, 
Yesterday was so nice and Sunny.
Today it's cold and cloudy.
But that didn't stop us from grilling.

While hubby is grilling, I made these Bacon wrapped Scallops.
It wasn't that hard.

Bacon wrapped Scallops

You just need:

-Scallops
-olive oil
-Bacon
-Toothpicks
-Salt and pepper



What to do:

-Heat the broiler.
-Wrap scallops with bacon and secure it with a toothpick.
-Place bacon into the baking sheet, drizzle them with olive oil and season 
with salt and pepper.
-Cook them under the broiler for 10-15 minutes until
the bacon is cooked through, turning once.



We also had some ready made Cheddar bay biscuits.
It was okay, I still love my homemade ones!
Hubby just decided to grab it so, why not?



I love how he perfectly cooked the steak.
It had to be well done. (sucks!)

But it's all I've been craving for!


It was a really great meal!


Now we are watching more football and can't wait for Walking dead tonight!
