Summer this year is going amazing.
Trying to do a lot of outdoor activities as much as I can.
It's becoming hotter and hotter for sure but days are going faster so I better just enjoy every minute.



Paladin Winery is definitely on the top of my favorite winery so far.
Went there for the second time with my gorgeous friends and we had a blast.





Not just because they have amazing wines.
But, the owners are amazing.
They are so friendly and just so nice.



They have delicious Prosecco!

One Pan Italian Sausage and Veggies (Meal Prep)



I've been loving easy meal preps these days. 
For the rest of the week I made this dish. 
Something easy and something me and hubby both would like.

Cut it all up.
Mix it all in a bowl and bake it.
So easy.

One Pan Italian Sausage and Veggies (Meal Prep)


 Ingredients:

  • 2 large carrots ~2 cups
  • 2 red potatoes ~2 cups
  • 1 small-medium zucchini ~2 and 1/3 cups
  • 2 red peppers ~2 cups
  • 1 head broccoli ~1 and 1/2 cups
  • 16 ounces Smoked Italian Turkey or Chicken Sausage

Seasonings

  • 1/2 tablespoon EACH: dried basil, dried oregano, dried parsley, garlic powder
  • 1/2 teaspoon EACH: onion powder, dried thyme
  • 1/8 teaspoon red pepper flakes optional
  • 1/3 cup Parmesan cheese freshly grated, optional
  • 4 and 1/2 tablespoons olive oil
  • Optional: fresh parsley, salt and pepper

Instructions
  1. Preheat the oven to 400 degrees F. Line a large sheet pan with parchment paper or foil (easy clean-up) and set aside.
  2. Prep the veggies: *It is important to prep the veggies according to directions to ensure they all cook at the same time*
  3. Peel and very thinly slice the carrots.  Wash and (if desired peel, we love the peel on) chop the red potatoes. You want the pieces quite small here. (I halve the potatoes and then cut each half into 10-12 pieces)
  4. Halve the zucchini and then cut *thick* coins of zucchini. Coarsely chop the broccoli. Remove the stems and seeds from the peppers and chop into medium-sized pieces. Chop the sausage into thick coins.
  5. Pour all the veggies and sausage on the sheet pan.
  6. In a small bowl combine all of the seasonings and salt and pepper if desired (I use about 1/8 teaspoon pepper and 1/2 teaspoon salt) with the olive oil. Stir to combine.
  7. Pour the seasoning & oil mixture on top of the veggies and sausage and thoroughly toss to coat.
  8. Place in the heated oven for 15 minutes. Remove and toss around the veggies + sausage and return to the oven for another 10-20 minutes or until veggies are crisp tender.
  9. Remove and top, if desired, with freshly grated Parmesan cheese and fresh parsley.
  10. Serve on top of rice or quinoa if desired. (Also great plain!)

Fajita Meal Prep Bowls


Happy Monday friends!
I usually meal prep on Sunday's before but these days 
It's easier to do it on Monday's.
I've been usually making the same thing but today I decided to make something new.
These are so good.
Definitely full of flavor.
It's good to take break from plain meal prep meals.

Fajita Meal Prep Bowls

Ingredients: 

 3 cups cooked rice white or brown 
1.5 lbs chicken breasts about 3 
4 bell peppers any color 
1 onion
1/4 cup olive oil 
1/2 cup salsa 


Seasonings: 

1 tablespoon chili powder 
1/2 teaspoon cumin 
1 teaspoon garlic powder 
1/2 teaspoon oregano 
1/4 teaspoon black pepper 
1 teaspoon seasoning 
salt 

Optional Topping:

Cheddar cheese 
Tomatoes 
Green Onions 
Salsa Cilantro 
Sour Cream 
Avocado 
Lime



Instructions: 

1. Preheat oven to 425 degrees.
2. In a small bowl, combine olive oil and seasonings. Set aside.
3. Cut chicken into 1″ pieces. Toss with half of the olive oil mixture.
4. Cut bell peppers into strips and cut onions into thin slices. Toss vegetables with remaining olive oil mixture.
5. Place on a parchment lined pan and bake 20-22 minutes, or until cooked through, stirring after 10 minutes.
6. Serve with desired toppings.

Friend's going away dinner.






Few weeks ago one of our Friend's left Italia.
Before they leave they had a going away dinner and party.

We had dinner first at this restaurant in Aviano called La Locanda.
It's actually a hotel with a restaurant.
The hotel actually looks nice, they have a pool and the ambiance is just really nice and relaxing.
I heard their restaurant has good food.
Especially their ribs.. the most talked about ribs.
It's hard to find a good ribs here in Italy.
I love american style ribs, the saucy ones. I can make it at home (good thing)
But their ribs is amazing.
I highly recommend if you are craving for good ribs while you are here in Aviano.


Started with some Caprese Salad.
The Mozzarella, the tomatoes and pesto are just on point!


The ribs, You can get it by kilo.
You can get two of these if you can eat a lot.
But, honestly just half kilo (which pictured) is even enough for two people.


I had their Ravioli with white sauce.
So so good.
I highly recommend this restaurant.



Going to miss her so much!!!

Girls night



Girls night!!!

I love nights like these, I get to have girl time with my friends here in Italy.
Sometimes its healthy to have some girl talks especially with people that I trust and really 
comfortable on talking about anything. 
They literally have been awesome. 
I am so grateful to meet awesome people here.




Tonight's look.

Remember that time when we got to eat at the best seafood restaurant I've been to?
It was just January this year when we went and we decided to come back again.
It is still the best Seafood restaurant I've ever been to so I will never get tired of coming back.
The restaurant is called Due Lune in Aviano.
Seriously the best.


My favorite ladies.
One of our friend is leaving Italy soon.
So sad.

..And let's not forget about the Calamari.
So amazing!









We also had Sgroppino with our meal.

After our dinner we went to the bar in Aviano for some more drinks.
It was such a fun night.
