Instant Pot Sinigang

 

Hello Friends!!!

Remember the first Instant pot dish that we made?

We love it so much, we thought it was amazing. 
I've been seeing this cookbook on facebook so I went ahead and bought it.



This recipe book has all the Recipes for making Filipino dishes in your Instant pot.
To veggies, to meat and everything you can think of.





The first dish I made is Pork sinigang!
It's perfect for the weather right now. 





I have been so curious how it would turn out.
The instructions was easy to follow and of course you can add or lessen the ingredients that are asked for.




All the veggies!







Over all, it was ahmaazing. 
I highly recommend this cookbook.
I know how you guys love my Sinigang recipe.

Apple Crisp Cookie Cups



Apple Crisp Cookie Cups!!!
It has been a while since I baked something new and I found this recipe
on Pinterest.

I get scared sometimes, making something new.
But the recipe was so easy to follow.
So I figure I should link the original recipe.

So happy I found the recipe.
I still have so many apples at home from our Apple Orchard trip.
This is a perfect recipe to use it for.











Ingredients

Apple Pie Filling:

Oatmeal Cookie Cups:

Sugar Glaze:



Instructions

Apple Pie Filling:

  • Toss apples and lemon juice in a medium bowl, set aside.
  • In a medium saucepan, combine sugars, cornstarch, and spices. Pour in water. Cook over medium heat until boiling. Cook for 2 minutes. Add apples, bring back to a boil. Simmer until tender (10-15mins). Cool completely.


Oatmeal Cookie Cups:

  • In a medium bowl, whisk flour, cinnamon, baking soda, and salt. Set aside.
  • In the bowl of an electric mixer, beat butter and sugars on med-high until pale and fluffy (approx. 3 minutes).
  • Add eggs one at a time, fully incorporating after each addition, and beat on high for 1 minute. Add vanilla.
  • Turn mixer to low and add flour mixture, mix until combined. Add oats and mix until just combined.
  • Spray 2 regular sized muffin tins with cooking spray. Using a large cookie scoop (3 Tbsp) scoop dough into muffin tins, press down and push up the sides to create cups.
  • Preheat oven to 350°F. Bake cookie cups for approx. 15mins or until browned and mostly set.
  • Remove from oven and (if needed) immediately use a small jar or container to press firmly down in the center to create a well. Cool in pans for 15mins, then place on wire rack to cool completely.

Assembly:

  • Using a tablespoon, fill each cookie cup with apple pie filling. Drizzle with sugar glaze if desired.


    I followed all of the instructions and didn't change anything but feel free to change anything.

Pumpkin Patch



Midwest weather is definitely unpredictable.
It's going to take a while for me to get used to this. 
Yesterday was a cold day,
Today is warm and very windy.

But that didn't stop us for doing something fun.
It was still sunny anyways.
Don't let the pictures fool you though.
It was very windy!

We still had an amazing day.


We went to the Pumpkin patch by the base.
I know there's a lot of places to see.
But for this one we wanted to go somewhere not far.

It's called the Pixie Pumpkin Patch 


It's located in Knob noster which is only 15 mins away from us.


The cutest pumpkins!!





Look how beautiful is this patch???




They have so many things for kids to do.




..And some animals.




My son also tried Horseback riding and he said it was epic!!






It was a crazy windy day! haha


But we loved it.





My favorite season indeed!

Apple Picking

 

Happy Friday friends!
Another busy week and I'm so glad weekend is here.
We still did a a little bit of organizing/decorating in our house
But we are pretty much done unboxing which is amazing!
We can finally relax some more!

Last weekend, we decided to take a break....enjoy the weekend with family.
We went to Cider hill family orchard!
I found this orchard on facebook even though we had to make reservation
it was okay, it was worth the wait.
I'm so glad we got to go. 

The Apple picking season was almost over I'm so glad we got a chance before it ended.


Cider hill Family orchard is located in Kansas city.
I highly recommend!
It was such a beautiful orchard!





There was only Granny smith apples left for picking and that was okay as long as we got to pick!



It was me and the boys first time picking apples!




My handsome husband.


It was a hot Fall day.
I'm still getting used to unpredictable Midwest weather. 
It was okay.





I think the boys loved it!



Apples for days!!!



I mean..
How beautiful is this location???



I'm so happy I found this place.
This might be a new Fall tradition.
Maybe next year we will make reservation earlier.

Sweet Springs Missouri Racing

 

What a fun fun weekend!
We went to the first racing I've ever been to.
It's also my boys first time.
I think they loved it.




My in-laws also visited this weekend, So they came with us.


The race started around 7, But we were there before then.
It was a good idea so we can pick the best spot.



The race was awesome.
It was cool!



We didn't stay until the end because it was getting too late for the boys but it was still a great time.




It was a fun night!

Found a new favorite (Trader Joe!)


After our first shopping in Trader joe last month I just knew that I have to go back!
I think I just found a new favorite store. 
This store is pretty awesome. 
An hour drive and I think its worth it!





The line was pretty long like the first time but the waiting was not bad. 






We explored and got a lot of new stuff we haven't tried!



I love how there's so many fall stuff!!




Drink for the drive back home.
It was good!


So far everything we had was good.
The chili onion was the bomb, the appetizers was good too.
Of course, the wines was so good!!
I will update when I try the other stuff. ;)



I also picked up some flowers.
I miss getting fresh ones and Trader Joe's Flowers remind me of flowers I get in Italy.

It was a pretty good day!
Our stuff finally came this week and its going to be a busy day of unpacking.
It's okay, I'm ready and excited to have everything we need.
Its going to be awesome.
