Homemade Crunchwrap Supreme

 

We have been enjoying making Homemade versions of some of our favorite

 Restaurant/Fast food.

It's amazing how easy some of it are.

What I love about it the most is that you can make it even better.

We were craving for some Taco.

As of course being me being EXTRA all the time.

I wanted to switch it up and make it fun this time so we decided to make a Crunchwrap.

I think hubby had fun making these!

INGREDIENTS

1 lb ground meat

1 packet taco seasoning mix

6 burrito size flour tortillas

6 tostada shells

1 cup of sour cream

2 cups of shredded lettuce

1 diced tomato

1 cup shredded Mexican cheese blend



INSTRUCTIONS

  1. In a skillet or large cooking pan, cook and crumble the ground beef over medium-high heat. When it is no longer pink, drain the grease.
  2. Place meat back into the pan and stir the taco seasoning mix as well as the water it calls for on the packet. Cook according to the package instructions.
  3. Warm up the nacho cheese sauce in the microwave and set aside.
  4. Place the flour tortillas on a plate and warm in the microwave for about 20 seconds.
  5. Lay one tortilla on a flat surface. Spread a couple of tablespoons of nacho cheese in the middle of the tortilla.
  6. Place ½ cup of taco meat on top of the nacho cheese.
  7. Next, add the tostada shell, a thin layer of sour cream, lettuce, tomato, and lastly, the shredded Mexican cheese.
  8. To fold into the actual crunchwrap, start with the bottom of the tortilla and fold the edge up to the center of the fillings. Keep doing that, folding as tight as possible, as you work your way around the tortilla.
  9. Spray another skillet or cooking pan with cooking spray and heat over medium heat. Place the crunchwrap supreme, seam-side down, onto the skillet. Cook for 2-3 min., or until golden brown.
  10. Flip over and cook the other side for another 2-3 min or until golden brown.
  11. Cook the rest of your crunchwraps and enjoy!

Orange Martini

 

We are not a Martini drinker or Vodka drinker.

I think I only had it once. 

So I decided to make a homemade ones. 

Drinks like these makes me feel like I'm somewhere tropical.

Like I'm on a vacation. :)

Very easy, refreshing drink!

Ingredients

  • 2 ounces vodka
  • 1 ounce triple sec orange liqueur
  • 2 ounces orange juice
  • 1/2 ounce simple syrup or to taste

Instructions

  • Pour all ingredients over ice in a martini shaker. Shake, then strain into chilled martini glass. Garnish with an orange slice.

Chosun Korean BBQ



We spend the day in Kansas city today.
..And it was a good day!


  
I'm so happy the weather is so much better.
Felt like we just experienced the longest winter ever!

After our few stops.
We decided to have Korean food for Dinner!
There is no Korean BBQ in Warrensburg and I miss it so much so we went!


There's few Korean Restaurant in Kansas City.
We will definitely try the other ones next time.




The prices are definitely not cheap but not crazy expensive.
Depends on what you get.

One thing is definitely not as kid friendly as other Restaurants.
Good thing the boys pretty much can eat anything now.



Shrimp tempura!


We ordered their mix of meats that serve 2.
The boys definitely got to eat some two.
It was enough for 4 of us.



We of course had to order wings. 
Its a MUST in any Korean Restaurant.
It's our favorite!


It was soo good!
We all enjoyed it.

Olive Garden Salad

 



Some days I love having Salad with our Dinner.
Something light and healthy with whatever we are having.

Hubby wanted to have a Pizza night so I decided to make a Salad with it.
I've been wanting to make an Olive Garden Inspired Salad.
I finally got to make it.

There is definitely an option to just get the Dressing at the Store.
But, if you want to make it from scratch, it's very easy.
Either way that you prefer!






Ingredients

Olive Garden Salad Ingredients

  • 1 batch Olive Garden Salad Dressing
  • 1 10 ounce bag American Salad blend
  • 6 pepperoncini peppers
  • 1 tomato sliced
  • 1/4 red onion thinly sliced
  • 12 black olives
  • 1 cup croutons
  • 1 tablespoon parmesan grated

How to Make Olive Garden Salad Dressing

  • Using  a cheese grated, grate the parmesan cheese.
  • Add the olive oil, white wine vinegar, parmesan cheese, mayonnaise, lemon juice, garlic salt and Italian seasoning to the blender.
  • Use the pulse feature or blend option and blend until smooth and everything is well mixed together.
  • Serve immediately, or store in the fridge.

How to Make Olive Garden Salad

  • Wash and chop the tomatoes, slice the olives and the onions.
  • In a large bowl place the bag of salad mix, then add the pepperoncini peppers, chopped tomatoes, sliced onions, sliced olives, croutons and grated parmesan cheese.
  • Use a salad spoon to mix everything together, then pour the homemade Olive Garden Salad dressing on top of the salad and toss with salad utensils.


Perfect Side for our Pizza night!

Pork Dinuguan


Have you ever heard about a Stew that is made with Blood?
It sounds strange but this is actually good.

Pork Dinuguan is a Native dish in the Philippines.
A type of Pork stew made with blood and vinegar. 

Its actually my first time making this, 
I had to make sure I was doing it right
as you can probably mess it up
if not using Vinegar.
So please do!
So it doesn't get too thick.

In the Philippines you can get the blood fresh but here in the US 
frozen is only what you can find.
It turned out still pretty good.

Ingredients

  • 2 lbs. pork belly cubed
  • 1 1/4 cups pork blood
  • 4 pieces long peppers (optional)
  • 2 pieces onion chopped
  • 6 cloves garlic minced
  • 2 cups water
  • ¾ cup white vinegar
  • 3 pieces dried bay leaves
  • 3 tablespoons cooking oil
  • 1 tablespoon granulated white sugar
  • Salt and ground black pepper to taste

Instructions

  • Heat oil in a cooking pot
  • Saute onion for 30 seconds. Add garlic. Continue to cook until onion softens.
  • Add pork. Saute for 3 to 5 minutes.
  • Pour water. Let boil. Add bay leaves and vinegar. Let the liquid re-boil.
     Stir. Cover and simmer for 1 hour. Note: add water as needed.
  • Add long green peppers and pour pork blood into the pot. Stir. Continue to cook between low to medium heat for 15 minutes while stirring every 3 minutes.
  • Add sugar and season with salt and ground black pepper.
  • Transfer to a serving bowl. Enjoy.

Ube Crinkles

 

It's been a while since I made anything UBE!

You all know how much I LOVE Ube .
I've been wanting to make these for a while. 
I can't believer how much Ube flavor that you can actually taste with these cookies.
Using the Ube Jam definitely made such a huge difference.

These are so so easy to make.
Just couple of things that is very important,
 -Ube Jam needs to be room temperature before using it.
-Eggs are room temperature (this is pretty standard when making cookies)
-Don't over bake as it will be hard as rock.
I made these all for 12 minutes to exact.

Instructions

  • In a large bowl, combine 2 cups flour, 2 tsp baking powder and 1/2 tsp salt. Set aside.
  • Using a handheld electric mixer or a stand mixer fitted with the paddle attachment, combine 1/2 cup sugar, 7 oz ube jam (or ube halaya) and 1/2 cup oil until incorporated. It is important that you taste the mixture at this point (before you add eggs) so you can see if it needs more sugar. Like I mentioned, ube jams are different so you need to adjust according to taste.
  • Once you’re okay with the flavour, add 2 eggs (which you've already beaten) and 3 tsp ube extract. Stir until combined.
  • Add your flour mixture to your ube mixture in thirds and gently stir on low speed until combined.
  • Cover the bowl with your cookie dough with cling wrap and chill in the fridge for at least 4 hours.
  • When you’re ready, preheat your oven to 350F. Prep a baking sheet by lining it with parchment paper (or silicone baking mats). Set aside.
  • Scoop a heaping tablespoon of ube cookie dough and, using your hands, roll into a ball. Thoroughly coat each ball with confectioner's sugar before placing it on the cookie sheet. Make sure to space your cookies about 1-2 inches apart.
  • Bake in the preheated oven for 10-13 minutes or until they crack on top and start looking matte. They will be soft coming out of the oven but don’t worry, they will continue to set as they cool so do not over bake. Cool in the pan for a couple of minutes before transferring to a rack to cool completely.

Zydecos Southern Soul and Cajun Cuisine (Take-out)


We loved Zydecos so much that after eating last month. (Zydecos)
We are having some again this month.

They have so much good stuff in their Menu that we wanna try all of them!

We didn't feel like eating out so we just got a Take-out.
They were so nice and fast.



The Catfish meal.
So full of flavor.
I loved it!!



We ordered Fried Okra and Popcorn shrimp for Appetizer.

Both amazing!



Hubby wanted their Pork Tenderloin Sandwich 
Too bad they didn't have it.
Another reason to go back.

So Hubby had their Fried Chicken Sandwich.
Hubby were not too crazy about it.
It was OK.




I had my first Beignets!
I have been wanting to try this for a long long time.
Whatever that sauce is.. was sooo good!

I Highly recommend!!!!

Mama Pins Thai and Asian Cuisine


When I need to take a break from cooking.
Ordering Asian food is my go-to

Compare to all of the places we ever lived I'm so happy 
that there is a Thai Food close by. 

So I'm going to take advantage as much as I can.


Pad Thai my favorite.
Hubby ordered the spiciest Drunken Noodles.



Some Fresh Spring Rolls and Crab Rangoon for Appetizer.





Perfect Dinner while watching the Cubs Game.

It was so good.
I highly recommend.
