Beef and Cheddar Sandwiches.

 


It's already so hot,
And for some reason.
Having a Crockpot meal is still the easiest.

This was so easy to make on busy days.

Perfect for any weather I would say,
Let me know what you guys think!






Ingredients

  • 2-3 pound chuck roast
  • 2 teaspoons dried minced onion
  • 1 teaspoon Montreal steak seasoning
  • 1 tablespoon Worcestershire sauce
  • 1 ½ cups Arby's sauce or half Ketchup half BBQ sauce
  • 1 cup cheddar cheese sauce
  • 6 brioche rolls

Instructions

  • Add the roast to the bottom of a 6 quart slow cooker. 

  • Sprinkle the dried onion and steak seasoning evenly over the roast. 

  • Pour the 1 ½ cups sauce evenly on the roast.

  • Cover and cook on LOW for 8 hours or HIGH for 4 hours. 
  • After the cook time is up and the roast is tender, use two forks to shred the meat. Stir it into the sauce and turn the slow cooker to WARM for serving. 
  • Heat the cheddar cheese sauce in the microwave for serving. 

  • Pile the shredded beef onto onion rolls and top with cheddar cheese sauce and more Arby's sauce. 





We had few Appetizers with it and it was perfect!

Mother's Day 2026

 

Like always,
Mother's Day was wonderful this year.
I like to keep it simple
and more about spending quality time.
Not me, 
Spending alone time.







My boys surprised me with Cards.




We had an amazing dinner at home.
These steaks crostini was so good!





I requested a seafood pasta.
We haven't made in a while so 
I figure it would be the best time to make some.






It was such a lovely weekend!!

Last Day in Paris.

 



Our last day in Paris came very quick.

I was overstimulated but also sad to leave. 

Paris was so big,

I'm pretty sure we still missed a lot and could stay longer.

I am so happy the weather was perfect.



Last thing I wanted to see was the Notre dame cathedral.
We for sure didn't get to see this when we were here the first time.

It was of course busy!





But it doesn't hurt to stop and just do a short visit.





Another last stop is macarons of course,
I never want to skip this if we are in Paris,
Or France I would say.








So happy!



Later that day,
We decided to eat at the restaurant beside the hotel we 
are staying at. 

It was perfect.






Had my champagne and some French Burgers.





Everything was so good!






It was also a fun night with my loves.









We drove all day next day.
And just so happy to be home.






It was such an amazing Paris trip. 

So so grateful!

Château de Versailles (France)

 


Ohh Versailles,
The main reason why we are back in France.
Paris as we say,
Versailles is still about an hour away from France,
Which I thought was not bad.

I have been wanting to come here ever since we found out
we are moving back to Europe!
I can't believe I missed this on our first time in Europe.




It was better than what I imagine.
I do think,
That coming to Versailles needs a lot of planning.
Make sure you do a lot of reading about so everything goes smoothly,

Tickets in advance, coming in time, 
I think coming in the weekend is not the best time,
But if thats all you can do,
It's doable with some good planning skills.





The gardens was big and beautiful to just walk around.






The inside,
I was left speechless.

It was one of the best I have ever been to.

IT was amazing.








Don't let the crowd ruin your time there.

This was such an amazing visit.

Arc de Triomphe Paris

 



I can't believe this day would come,
After a long 8 years.
We are back in Paris!





If you were going to tell me that I will get another chance of coming back,
I will never believe you.

But here we are.



Our first trip in 2018 while we were living in Italy was amazing as ever.
As you can see at my cover pictures,
That was our first trip. 
We went to a lot of places back then.
But, trust me when I say this.
There's a lot to see in Paris.
That's why I wanted to come back.

One of the places we never get to see was this Arc.

Somewhere you can just stop by.
But stop for a while and enjoy the view.

She's magnifique.
As french would say.

I'm so excited to write all of our new adventures to Paris/France.

We had such a blast!

Chicken and Shrimp Teriyaki Pineapple Bowls

 


One thing I love about special occasion is I have an excuse to make something special.

I have been wanting to make this for a while.

Since my Birthday is all month
We made this few weekends ago,

It was not that hard to make.
And oh so good!

A drink while cooking.





Ingredients

  • 1-3 whole fresh pineapple

Rice

  • 1 cup water
  • ½ teaspoon kosher salt
  • ¼ teaspoon chili flakes
  • 1 tablespoon unsalted butter
  • 1 teaspoon sugar
  • 1 cup white rice rinsed

Chicken

  • 2 garlic cloves minced
  • ¼ cup soy sauce
  • ¼ cup honey
  • 3 tablespoons rice vinegar
  • ½ teaspoon ground ginger
  • 1 ½ pounds chicken thighs 1 inch dice
  • 2 cups of shrimp tail on (if desired)
  • 2 teaspoons olive oil
  • 2 teaspoons sesame seeds

Instructions

  • Cut the pineapple in half lengthwise. Scoop out and reserve the middle of each half, leaving ½-inch to ¾-inch of flesh along the edges.
  • Finely chop the reserved pineapple. Combine the chopped pineapple with any juices released and place approximately 1 cup of it in a small saucepan.
  • Add the water, salt, chili flakes, butter and sugar to the saucepan, and bring to a boil over medium-high heat.
  • Add the rinsed white rice. Bring to a simmer, then reduce heat to low and cook for 15 minutes, or until the rice is fully cooked. Once done, fluff with a fork.
  • While the rice is cooking, combine the garlic, soy sauce, honey, rice vinegar, and ginger in a small bowl. Add the sauce to the chopped chicken and let sit while your pan heats up.
  • Heat the olive oil in a large sauté pan over medium-high heat.
  • Use a slotted spoon and drain the chicken from the teriyaki sauce, reserving the sauce. Add the chicken to the hot pan and brown on all sides.
  • When the chicken is fully cooked, add shrimp and add the reserved sauce to the pan and cook until the sauce has reduced and thickened. The sauce should evenly coat the chicken. Sprinkle with sesame seeds.
  • To serve, spoon about ½ cup of the pineapple rice into one half of each hollowed-out pineapple boat. Fill the remaining half with the teriyaki chicken and shrimp. Garnish with chopped green onion, if desired. Serve with cooked plantains if desired.





It was so good!!
