Turkey Taco Burrito Meal prep


Happy Monday friends!
Remember the Fajita meal prep that I made?

They were so good and hubby loved it!!

So I decided to make something like it too.
I still  meal prep for hubby on weekdays but, on usual days its just Salad
with grilled chicken.
Hubby loves it like that but, today I feel so inspired. :)
Don't they look so good??

Ingredients
  • 1.25 lbs ground turkey
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon paprika
  • 1/4 cup all-purpose flour
  • 1 can (14.5 oz) beef broth
  • 1 can (8 oz) tomato sauce
  • 1 can (15 oz) black beans drained & rinsed
  • 1 cup frozen corn
  • Cooked rice
  • Taco toppings; shredded lettuce, pico de gallo, salsa, avocado, olives, lime, shredded cheese, sliced jalapenos,etc
Instructions
  1. In a large nonstick skillet, over medium high heat, cook the ground turkey with the salt & pepper until cooked through and no longer pink, breaking the meat into small pieces as it cooks. Drain.
  2. Add the cumin, garlic powder, chili powder, onion powder, oregano, paprika, and flour. Stir the mixture constantly for 1 minute while it cooks. It will be crumbly (that's ok).
  3. Slowly add the beef broth, a little bit at a time, while whisking to let it thicken up. Add in tomato sauce and stir to combine.
  4. Bring to a boil. Once boiling add the black beans and corn.
  5. Turn heat to medium and let simmer for 15-20 minutes or until thickened.
  6. Serve with rice and taco toppings for delicious burrito bowls.

Pulled Pork Mac & Cheese Sliders


I think we can all agree that Sliders are the best.
Especially now that Football season is back.
Sliders are the easiest to make for Football food, and there's so many variety you can make.
Remember these two that I made before??
I still make these a lot!

I decided to try a different variation.
This was so good too!!
Going to add to my favorite Sliders list.


INGREDIENTS:

Pulled Pork
  • 1 (3 to 4-lb) boneless pork shoulder/butt
  • 1-1/2 tsp paprika
  • 2 tsp black pepper
  • 1 tsp cayenne
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1 cup water
Sliders
  • 1 (12-count) package Hawaiian dinner rolls
  • 1-1/2 cups prepared Mac & Cheese (Boxed mac cheese works good too!)
  • 2 Tbsp BBQ sauce
  • 8 Tbsp butter
  • 2 Tbsp brown sugar, packed
  • 1 Tbsp dijon mustard
  • 1 Tbsp Worcestershire sauce
  • 1-1/2 tsp poppy seeds

INSTRUCTIONS:

Pulled Pork

  1. Combine paprika, black pepper, cayenne, thyme, garlic powder and salt. Rub evenly over pork shoulder. Place in slow cooker. Cover and cook on LOW for 6 to 8 hours or HIGH for 4 to 5 hours.
  2. Remove pork to large cutting board or platter. Let rest for 10 to 15 minutes. Chop. Measure out ¾ pound of pork for sandwiches. Save remaining pork for another use.
Sliders

  1. Preheat oven to 350ºF. Lightly spray a 9x13-inch pan with cooking spray.
  2. Split each dinner roll. Top the bottom of each roll with pork. Drizzle each pork roll with 1 to 2 tsp BBQ sauce. Top each roll with 2 Tbsp prepared mac and cheese. Place tops on sandwiches and place in prepared 9x13-inch pan.
  3. In a small saucepan combine butter, brown sugar, mustard, Worcestershire and poppy seeds. Bring to a boil and pour over sandwiches.
  4. Bake for 20-25 minutes, or until the tops are brown and crispy.

Grotte del Caglieron



August is a month long vacation of  everyone Italy.
I think it's the Month where most of them go on vacation.
So its packed everywhere.
So, we have been exploring places that is just close to us. 
To avoid the crowd. 
It's been such a good idea so far. 
More relaxing and just more outdoor exploring. 



We went and check out Grotte del Caglerion in Fregona.
I can't believe how close is this from where we live. 
It was so beautiful there. 


It was definitely not stroller friendly though.
Little man did good without it. 






I can say the walk, hike was not bad.
A little slippery in some area but it was fun. 





Beautiful waterfall.


The water looked so good.
I bet its so cold.



It was a hot summer day.
So, staying in this spot felt so good. :)





Restaurant by the cave. 



I highly recommend coming here for a walk or just to explore.




Before leaving we checked out this cave.
I could not believe what was inside.
I had to double check it.




Cheese!!!!

Cheese aged in cave for days.
There's a lady letting people taste cheese outside of the cave.
It was actually really good!!!
I wish I purchased some.


A few meters away is where the Grotta del Madonna is. 










It was a fun,gorgeous day with my little family.
