Pan de Coco







I haven't baked bread for a while so today I decided to make this.
There's something about baking that makes me feel so relaxed.
Baking bread from scratch definitely is a work but, I swear its worth it!

Pan de coco is one of my childhood favorites.
I haven't had this for a long long time. 
I think I finally found the best Bread recipe!
This was really easy to follow and fail proof. 
Let me know what you guys think!



Ingredients:
  • 3 Cups bread flour 
  • 1 1/2 cups all purpose flour
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1 pouch rapid rise yeast ( I used Red star brand, It's the best!)
  • 3 eggs
  • 3/4 cup milk
  • 1/2 cup melted butter
  • 1/2 cup water
  • extra flour kneading
Filling:
  • 1 Cup brown sugar
  • 1 Cup sweetened coconut flakes
  • 1 1/2 tbsp softened butter
  • 1 tsp vanilla
Combine all filling ingredients together and set aside.

Directions:
  • Place all ingredients including yeast into bowl except 1/2 cup all purpose flour.
  • Attach bowl and dough hook. Raise mixer bowl. Turn speed to medium and mix about 15 seconds or until ingredients are combined.
  • Combine all liquid ingredients then add to flour mixture and mix 1-2 minutes longer.
  • Continue mixing, gently add all purpose flour. Mix until dough starts to clean sides of bowl, about 2 minutes.



  • Transfer the dough to a lightly greased bowl, cover with a damp cloth and let it rise for an hour.



(after an hour)



  • Use a dough slicer to divide dough into 4 equal parts.
  • Roll each part until it forms into a log. Cut each log into equal pieces.
  • Flatten the dough with a rolling pin until it stretches into a round shape. (See picture below)
  • Place about 1 tbsp. of filling in the middle of the flattened dough.



  • Gather sides of round, pinch together and twist.
  • Place all shaped dough on a baking sheet with wax paper.
  • Cover the tray with a damp cloth and let it rise for 20-30 minutes.
  • Preheat oven to 350 F
  • Bake the shaped dough for 25 minutes.




  • Serve warm and enjoy!

Healthy Snacking.


I can say that I'm finally doing so good with healthy eating these days.
Now that I'm halfway over this pregnancy. 
I need to keep eating/snacking on all of the good stuff.
I want my baby to fill up all on all of the good fats.
Some of the healthy stuff I have been eating are not really picture or
blogging worthy so I'm sorry if I haven't been posting recipes.
I will try to make more healthy recipes for you guys.

Every breakfast whatever I will eat
I make sure I have a bowl of fruits with it.
The other day, I had these Grapefruit. 
I never really eat them that much before, But Grapefruit are 
so refreshing I need to eat them more often.


...And sometimes, I crave Greek yogurt bowl so bad!
I make it as my dessert sometimes with some fruits and Granola.
You can drizzle some honey with it too and it's so good!

I had this for my dessert tonight.
Who else is watching The Bachelor??
I'm rooting for Lauren!

Apple Pecan Cranberry Spinach Salad.






I admit I have been eating a lot of not so healthy foods through this
pregnancy. 
But, I do try to balance it out by eating healthy food there and then. 
..And Salads are my go to when I know I need to eat something healthy.
I'm so obsessed with salads and what I love about it is that there so many
Salads you can make and you pretty much can put anything.

This is one of my favorite. 
Especially that I love fruits, I love salads that has mix of fruits.


Ingredients:

Spinach
Apple, sliced
Cranberries
Pecans


I made this with strawberries before and they are as good with a simple homemade
dressing link below!

Weekend Things: Good food and Good company.





Hello everyone!
Happy Monday!
How was your weekend?
Ours was good, Lots of eating (Like always) and so happy to spend some time with friends.



Friday night was a baking night.
My friend is about to leave and move overseas.
I'm so sad but I'm so excited for her!
We baked something for the last time.



.And like always, It's so good!
We made some Hummingbird Cupcakes.

My friend said she couldn't help it and had to get it.
I love it!





Saturday, We went to see our friend in town for dinner. 
We always make Filipino dinner together.
I was so full!








She made some awesome dish that i miss the most.



I made this dish too called Embotido.
It's Filipino version of meatloaf.
I will post the recipe soon!




I definitely didn't control myself!
Worth it!




Sunday, We went to chuck e cheese for my friend's daughter's Birthday.
Little man was so excited!




Time went by so fast, I wish we met them sooner so we can spend more time together.
But, I'm so grateful that I met her while they are here.

Valentine's Day 2016






Hi guys!
Belated Happy Valentine's! 
Feels like its been forever since I've updated.
I haven't been feeling well for almost a week.
Thank god today, I'm feeling better. 
Getting sick when pregnant is the hardest. 
It's nothing major I just caught a cold and it was horrible.
I'm stubborn when I'm sick and pregnant, Even though there's medicine I can 
take, I will never take them. I just don't want to take anything while I'm pregnant
other than my Vitamins.

Anyways, Valentine's was awesome. 
I wasn't feeling my best but I had a great day with my boys.

Just like last year ( Valentine's day surprise 2015 )
Hubby got me edible arrangement this year and I swear I will
never get tired of this. 
Their chocolate covered pretzels are just so good, Did I mention how fresh and
big they looked? You can say that I'm just really obsessed with fruits.

These were gone quicker than last year maybe because my little boy loved them too.
Every bite taste like heaven!






Yup, He couldn't wait. 
I think it's his way of telling me I'm taking too much pictures. haha!




Since it's really cold out and there's not much to do.
We just went out for dinner.
We've been going to the same restaurant for 2 years in a row. ( Valentine's dinner 2015 )
But, this year we went to a different one.











I mean, who doesn't love Outback Steakhouse?! 
I had to try their specials and its so good!





 It was a great day!

Korean Beef Bowl





Hello everyone!
Happy Friday! 
Hope you all had a great week.
This week went fast But, I'm ready for the weekend!

I love making easy dinner, Something that doesn't need much ingredients.
And, This is probably one of the easiest I've ever made!
It taste better than it looks.
I swear, You will love it especially if you like spicy food.

I hope you like it!

Korean Beef Bowl 


Ingredients:
  • 1 lb lean ground beef
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1 tbsp. sesame oil
  • 3 cloves garlic, minced
  • 1/2 tsp. fresh ginger, minced
  • 1/2 to 1 tsp of crush red peppers ( depends on how spicy you like it)
  • salt and pepper
  • 1 bunch of green onions, diced. (don't skip this! it's gooood!)
Directions:
  • Heat a large skillet over medium high heat and brown hamburger with garlic in the sesame oil.
  • Drain most of the fat and add brown sugar, soy sauce, ginger, salt and pepper and red peppers.
  • Simmer for a few minutes to blend flavors. 
  • Serve over steamed rice and top with green onions.

Salisbury Steaks ( Slow Cooker)






Happy Monday everyone!
I hope you all had a great weekend.
After having a lot of fast food and not being able to cook something fresh this weekend,
 It's so good to make something fresh
and delicious today. 
I felt so inspired to make something really good and I'm so glad it turned out so good.

This dish is really easy especially that its made in the Slow Cooker
I highly recommend it!

Salisbury Steak 
Ingredients:
  • 6 oz. sliced mushrooms
  • 1/2 onion, sliced
  • 1 1/2 cups beef broth
  • 1 oz package brown gravy mix
  • 2 tbsp. ketchup
  • 1 tbsp. dijon
  • 2 tbsp. fresh parsley
  • 2 tbsp. cornstarch 
  • 4 tbsp. water.

Patties:

  • 2 lbs lean ground beef
  • 1 egg
  • 1/4 cup minced onion
  • 1/3 cup Panko bread crumbs
  • 4 tbsp. milk
  • 1 clove garlic, minced
  • salt and pepper to taste.

Directions:
  • Place mushrooms and onions in the bottom of your crockpot.
  • Combine beef patty ingredients and for 6-7 patties. Brown over medium high heat. 
  • Layer beef patties over mushrooms and onions. Combine ingredients except water and cornstarch. Pour over beef and cook on low for 5 hours.
  • Once its cooked, remove patties and set aside.
  • Turn slow cooker onto high. Combine water and cornstarch. Stir into the broth and let cook for few minutes until its thickened. Add beef back into the sauce to coat.
  • Serve over mashed potatoes or rice.
