Turkey, Bacon Panini

 

Every time I ran out of ideas for Dinner, I ask hubby what I should make.

Every time..

He suggest Sandwich.

I never thought about it but its always a good idea.

Having a Panini Press is the best thing. 

Me and the Boys could literally eat this everyday.

What is your favorite kind?





Ingredients

  • 4 slices sourdough bread (or wheat bread)
  • mayonnaise
  • 1 avocado sliced
  • 6 slices turkey breast
  • 6 Bacon
  • 2 Mozarella cheese, slices
  • 2 Pepper jack cheese, slices
  • Tomatoes, sliced
  • Spinach, handfuls






Instructions

Oven Baked Bacon

  • Preheat the oven to 375 degrees F.
  • Place a pound of bacon on a parchment lined half sheet pan. Bake in the preheated oven for about 20 minutes, or until golden and crispy. Use tongs to remove the bacon from the hot sheet pan and place on paper towels on a plate.

Assemble the Panini

  • Spread a thin layer of mayonnaise on both pieces of bread. Layer 3 slices of turkey breast,  bacon, tomato, spinach  avocado slices and one slice of each cheese.
  • Place on a preheated panini press, on medium to high heat. Press down and cook the sandwich for 3 to 4 minutes, or until the cheese is melted good and the bread is nicely browned. Repeat with the second sandwich.

So easy to make and so good!

Margarita Night



We had such a fun weekend with my mother in-law last weekend. 
It's so nice when we get to this and she gets to visit. 

Warm weather is just around the corner (hopefully)
So why not have some Margarita now.
I have missed refreshing drinks like this so it made me so happy.



Hubby made it but he added Margarita mix
Tequila and I added some Sprite for some bubble.




So good.
Great match with the Cheese Dip that hubby makes.
Maybe one of these days I can convince him to give me the 
exact recipe.
If he ever has one. 
He never measure anything. Haha!


Anyways, It was a great Margarita and Taco night!

Bistek (Filipino Beef Steak)

 

Bistek.

I cannot believe I haven't made this before.

Its a Filipino version of Beef steak marinated in Soy sauce and lemon juice cooked with a lot

of Onion! (I love it)

So good with rice, One of my childhood favorites. 

I made sure the boys tried it, I just had to cut it in small pieces.

They are not really a fan of onion but they love the flavor.

Ingredients

  • 1 pound Beef Sirloin - sliced thinly and pounded
  • 1/2 cup soy sauce
  • 1/4 cup  lemon juice
  • 1 small onion - chopped finely
  • 2-3 tablespoon olive oil
  • 1 big onion - cut into rings
  • 1/2 cup water
  • 2 teaspoon cornstarch

 Directions

  • Place the beef slices in a bowl or container with lid. Add soy sauce, lemon juice, and chopped onions. Mix well. Cover and let it marinate for at least an hour or overnight for better flavor.
  • Squeeze the meat with your hands to remove excess marinade from the meat. Transfer meat into a plate. Set the marinade aside for later use.
  • Dissolve cornstarch in half cup of water. Set aside.
  • Heat oil over medium-high heat. Add the onion rings and cook according to preference. Just until slightly tender or totally caramelized. Remove from oil and set aside.
  •  On the same pan, add the beef and cook for 1-2 minutes on each side. Transfer cooked beef slices on a serving plate. Top with cooked onions.
  • In the same pan over low heat, pour the soy sauce marinade. Add the cornstarch mixture and bring to a simmer while stirring constantly. Cook until sauce becomes thicker.
  • Pour the sauce over the beef and onions. Serve with rice and Enjoy!



So so good.

Spring Break 2022


Spring Break!

I can't believe this is our second Spring here in Missouri.

Time does fly!

Anyways, since hubby didn't get to take a leave (poor planning)

We just took the boys for a fun day in Kansas city, 

good thing it's only an hour away. 


The beautiful Union Station.
I love love this place!





The boys loved it. 
I swear they could stay there all day and won't be bored!






So many fun things for any ages. 
Of course not Newborn.
But my little Kolt did so good.
He slept pretty much the whole time.



My Kurtis getting brave on doing things like this!
SO proud of him!












It was a great day!



The rest of the week it Snowed!
Bummer.
It felt like Winter break!
So So cold.

Oh well Spring weather will be here before we know it.

Stuffed Pepperoni Sticks


I have noticed recently that my boys are obsessed with
breadsticks every time we order pizza.
Especially my middle one. 
..And It makes me happy every time I see him eat something else
than chicken nuggets.
So I decided to make one!
With Mommy's version.

I gotta say..
I love these too!!

Ingredients


  • 1 Pillsbury pizza crusttube 
  • Pepperoni slices
  • Mozzarella cheese sticks
  • 2 tbsp butter
  • 1/2 tsp garlic powder
  • 1/2 tsp dried parsley
  • marinara saucefor dipping (Optional)

Directions

  • Preheat oven to 400 degrees F.
  • Spread pizza dough out on a lightly greased baking sheet. Cut the dough into 10 equal size rectangles.
  • Arrange 4 pepperoni slices on each rectangle and top with a mozzarella cheese stick.
  • Roll up the pizza dough, enclosing the cheese stick, pinching the seams closed.
  • Melt the butter and add the garlic powder and dried parsley. Brush the pizza sticks with the butter.
  • Bake for 10 to 12 minutes or until golden brown.
  • Enjoy with a side of marinara sauce for dipping or any dipping of you preference. Enjoy!



So so good and its so easy to make!

Mississippi Beef and Noodles

 

Have you guys made Mississippi Pot Roast )

You are probably here because you probably did, I can't count how many times
we made it especially during Winter.

So easy to make and so comforting during cold days.
This is definitely the other way to make it, to switch it up sometimes.
The noodles is a good change!

Ingredients

  • 3 lbs beef roast
  • 1 Packet Ranch Dressing Mix
  • 1 Packet Brown Gravy Mix
  • 1/4 Cup Butter 
  • 6 Pepperoncini
  • 4 Cups Beef Broth
  • 24 oz Bag Reames Frozen Egg Noodles

Directions

  • Place roast in a 6 quart slow cooker.
  • Sprinkle with mixes and place butter in the middle of the roast
  • Place pepperoncinis around the roast
  • Pour your broth around the outside of your roast
  • Cook on low for 8-10 hours until fork tender.
  • Taking two forks, shred roast and mix well with juices.
  • Add frozen noodles, mixing well to submerge noodles in liquid.
  • Cover and cook on high for 1-1.5 hours until noodles are tender.


    So so good!!
