Seafood Pasta

 





We made it again!

My all time favorite Seafood Pasta!
Italy never left in me. 
We have to make it from time to time 
to get my fix!!

We also made few amazing appetizers!

Before that,
Look at this amazing champagne flute!!

Love it!

We finally made this Appetizer that I've seen so much
and I got to curious how to make it!

They call it Pigshots






It's actually not as hard as it seems like!!






Ingredients

  • 12 ounces smoked sausage kielbasa used, any smoked works
  • 8 ounces softened cream cheese
  • 1 cup sharp cheddar cheese shredded (divided)
  • 1/4 cup pickled jalapenos minced
  • 1 tablespoon jalapeno brine juice from the jar
  • 2 teaspoon dry bbq rub seasoning your favorite/any kind
  • 1 pound thick cut bacon
  • Red sweet peppers for garnish

Instructions

  • Slice sausage into 20 1″ pieces. Cut bacon strips in half and and set both aside.
  • In a medium bowl blend the softened cream cheese, 3/4 cup of the shredded cheddar cheese, minced jalapeno, jalapeno brine and bbq seasoning.
  • Transfer the cream cheese mixture to a piping bag or sandwich baggie.
  • Wrap a bacon slice around a piece of sausage forming a cup for the cream cheese filling.
  • Secure with a toothpick (use 2 if necessary) then transfer to a baking sheet or large plate. Repeat until all the pig shots are formed.
  • Snip a small corner of the piping bag then fill the sausage cups with the cream cheese filling.
  • Divide the remaining 1/4 cup of shredded cheese over the top then give them all a light sprinkle of the bbq seasoning.
  • Preheat the oven to 375°.
  • Transfer the pig shots into a pan leaving a little space between them (don't overcrowd - work in batches if necessary). Bake for 12-15 minutes or until the bacon is crisp and the cheese on top is golden brown.
  • Remove from the oven, cool slightly then serve. Garnish with sliced peppers and parsley/cilantro.


    It was sooo good!!

    We also made this amazing Baked Brie.
    I just realized how much I love Baked Brie!

    Adding a few things to it makes it really good.
    So so easy to make!

    All you have to do is cross the top with a knife
    Mix some melted butter and garlic together
    Pour over Brie
    season with salt and pepper
    Drizzle with some hot honey or regular honey
    Bake until melted.

    I would say 375 15-20 minutes
    depends on your preference how melted it it.

    Serve with some Baguette or Crackers!




    Sooo good!!!




    And now for the Seafood Pasta....



    We don't have exact recipe for this
    You actually don't need to.

    But we use Marinara sauce lots of Garlic!

    I will post it soon!





    Sprinkle with lots of Parmesan cheese and Lemon!!

    And it's perfect!!

Pizza Quesadilla

 


Here again for another Easy meal!

I like trying different recipes especially for the Boys 
So they don't eat the same thing all the time. 

This one was one of the easiest.
The boys loves Pizza.
I mean who doesn't 
But when you have a picky one you have to stick to their favorite Pizza topping.







ALL YOU NEED

-Tortilla wrap
-Pepperoni 
-Ham
-Pizza Sauce
-Mozzarella Cheese


DIRECTIONS:

-Spread Pizza Sauce on one side or Tortilla 
-Add the meats or any topping you desire, Sprinkle with Cheese
-Cook in a pan sprayed with cooking spray
-Fold the Tortilla when its hot and flip after a few minutes.


Easy peasy!!




You can't go wrong with Easy recipes like this.

Tomato Burrata Salad


On Hubby's Birthday )

I was so excited to make an amazing Appetizer. 

It makes me so happy that we can easily get Burrata, 

I have been wanting to make this for a while.

It just taste so fresh and it reminds me of Italy.

So so easy to make!!

Ingredients

  •  Cherry tomatoes (about 1 lb)
  •  Fresh basil leaves
  • 4.4 ounce burrata cheese ball 
  • flaky sea salt to taste (about 1/4 to 1/2 tsp)
  • freshly ground black pepper (about 1/8 tsp)
  • 1/4 cup extra virgin olive oil

Instructions

  • Slice the tomatoes about 1/4" thick and arrange on a serving platter.
  • Evenly sprinkle the fresh basil leaves over the tomatoes.
  • Slice the burrata into bite-sized pieces using a serrated knife. I usually cut a 4.4-ounce ball into 8 pieces. Lay on top of the tomatoes.
  • Sprinkle the salt and pepper evenly over the top of the tomatoes and burrata, then drizzle on the extra virgin olive oil and aged balsamic vinegar.
  • Serve immediately, with toasted baguette and enjoy!

Chicken Fettuccine Alfredo

 

I crave Pasta all the time.
I used to think that homemade sauce is hard to make 
But it's really not.

What's your favorite Pasta??





INGREDIENTS

Chicken
  •  lbs boneless, skinless chicken breasts (cut in half lengthwise)
  • 2 tbsp butter
  • ½ cup all-purpose flour
  • ½ tsp Italian seasoning
  • ½ tsp ground black pepper
  • ½ tsp salt
  • ½ tsp paprika
  • ½ tsp onion powder

Alfredo Sauce

  • 6 tbsp butter
  • 2 cups heavy cream
  •  cups parmesan cheese (grated)
  • 2 cloves garlic (minced)

Pasta

  • 16 oz fettuccine pasta

INSTRUCTIONS



  • Boil a salted pot of water in a large pot over high heat. Add pasta, cook fettuccini according to package instructions, and drain and set aside.
  • Add flour, Italian seasoning, salt, paprika, and onion powder in a shallow dish. Whisk until well combined. Dredge chicken in flour mixture and set on a plate.
  • Heat 2 tablespoons of butter over medium-high heat in a large skillet. Add chicken, and cook for 5-6 minutes on each side or until golden brown. Remove the chicken and set aside. 
  • Lower the heat to medium and add the remaining butter to the skillet. Then, add garlic and saute for 30 seconds. Slowly start to whisk in heavy cream when the heavy cream starts to bubble. Slowly whisk in parmesan cheese, and continue to whisk until there are no lumps.
  • Add cooked fettuccine into the alfredo sauce and toss until coated—slice chicken and place on top when serving.

Prosciutto Arugula Brie Salad

 

Arugula And Prosciutto makes an amazing Italian Salad.
We may not be there any more but its one of the Italian things that I will always miss

This salad was so easy to make.
If you find the Ingredients I highly recommend!!

-Arugula Salad
-Brie Cheese
-Prosciutto
-Grapes
-Pecans
-Your choice of dressing




Toss it together.
I used Champagne Dressing with this and it was so good.

Homemade talian Dinner


Birthday weekend continues at home.
Homemade dinner made by hubby. 

Having a Birthday during the week kind of sucks
Because I can't celebrate with my boys 
So it has to continue on the weekend.





Started off with amazing Limoncello Spritz.




For Appetizer is this amazing 
Melon Mozzarella Prosciutto Salad
Isn't it too pretty to eat?!!?


So easy to make 
You just need a Melon Baller, drizzled with Olive oil!

I swear this combo is just perfection!






We had Shrimp Rolls for Appetizer and a Side of Caesar Salad.

So good!




Hubby made my favorite Seafood Pasta.
I seem to be eating this every year for my Birthday.
We go to Italian Restaurant for the past few years,
This year though I wanted to change it up.
..And I know that my hubby makes a bomb version of it.
SO much better!!!






What an amazing Dinner.

Homemade Tiramisu

 


I love everything about living and Italy and general.

But Tiramisu is like on one of that top of the list.


I'm so glad I got to make this!

It's not as hard as it looks.

So gooood!
















Ingredients

  • 6 large egg yolks
  • 2/3 cup (135 grams) granulated sugar
  • 1/4 teaspoon salt
  • 24 ounces (680 grams) cold mascarpone cheese (straight from the refrigerator) 
  • 2 teaspoons (10 ml) pure vanilla extract
  • 1 1/2 cups (360 ml) cold heavy whipping cream
  • 2 cups (480 ml) cold espresso
  • 1/4 cup (60 ml) Kahlua (optional) 
  • 40 to 45 ladyfingers
  • 1/4 cup (22 grams) unsweetened cocoa powder

Instructions

  • Combine the egg yolks, granulated sugar, and salt in a large heat-proof bowl.
  • Set the bowl over a saucepan of simmering water, whisking constantly to ensure that the eggs don’t scramble.
  • Once the mixture has thickened, is pale in color, and reaches a temperature of 165°F-170°F (it should take about 10 to 13 minutes) remove the bowl from the saucepan and set aside to cool for 5 to 10 minutes. 
  • Whisk the cold mascarpone and vanilla extract into the egg mixture until well combined and no lumps remain (make sure not to overmix). 
  • In a separate cold mixing bowl with clean beaters, beat the heavy whipping cream to medium-stiff peaks.
  • Fold half of the whipped cream into the mascarpone egg mixture until fully combined, then fold in the remaining whipped cream. Set aside.
  • In a shallow dish, combine the cold espresso and Kahlua.
  • Dip the ladyfingers into the coffee mixture, one at a time, and arrange half of them in a single layer in a 9x13 inch baking pan.
  • Spread half of the mascarpone mixture over the ladyfingers and top with another layer of dipped ladyfingers.
  • Spread the remaining mascarpone mixture over the ladyfingers and dust with cocoa powder.
  • Cover the baking pan with plastic wrap and refrigerate for at least 8 hours or overnight before serving.
