Lemon Chicken Asparagus Stir-Fry





Healthy eating has been on point this week. 
I'm so glad i finally got to make this recipe.
I thought it would be plain but It's actually 
pretty good.
Even hubby approved!

Lemon Chicken Asparagus Stir-Fry



Ingredients:

  • 2 medium boneless, skinless chicken breasts
  • 2 tbsp. olive oil
  • 2 tbsp. lemon juice
  • lemon pepper
  • garlic salt
  • salt and pepper to taste
  • 10-12 asparagus spears (ends trimmed off and cut in thirds)
  • 2 tbsp, teriyaki sauce
  • soy sauce

Directions:
  • Begin by cutting your chicken into 1 inch pieces.
  • Cook chicken in a medium pan with 1 tbsp of olive oil and 2 tbsp of lemon juice. Add a little bit of lemon pepper and garlic salt.
  • Once cooked, take out your chicken and set aside.
  • Cook your asparagus in the remaining oil. Add an additional tbsp. of oil and add the teriyaki sauce.
  • Cook asparagus on medium heat for 6-8 minutes 
  • Add chicken back to the asparagus along with the desired amount of soy sauce, Cook for an additional 5 minutes. Add salt and pepper to taste.
  • Serve over rice or noodles.

This is so good with rice. But, you can definitely eat it the way you want it.

Smoothie Bowl of the day





Sometimes all you need is a delicious smoothie bowl on 
this beautiful day.
Now, that it's starting to get warmer I crave for something cold more than ever. 

This is definitely one of the easiest breakfast/snack to make! 
I made this amazing Green smoothie recipe (Recipe here )
Then, topped it crunchy protein granola, frozen blueberries and strawberries.

There's so much you can put on top!
Whatever you can think of.
Just make sure its guilty free! :)

Kiwi Pineapple Parfait




Good morning everyone!
How was your Easter Weekend?
Easter weekend here was a rainy, It was a great weekend!

I'm so glad to wake up to beautiful Sunny day today.
It's going to be a great week!



For breakfast made this Beautiful and delicious Kiwi Pineapple Parfait.
All you need is Pineapple, Kiwi, Greek yogurt and protein granola. 
Put it in layer the way you want it.


So delicious and so healthy!

Weekend Recap: East Coast Wings and lots of Relaxing.





Hello everyone!
This is such a late Weekend recap, The laziness is winning these days. haha!
But anyway, Our weekend was good.
It gotten a little cold again! (ugh)
It's officially Spring!! I'm so happy about that. 
Hopefully no more cold temperature!




It's been a year since we've been to this restaurant.( East Coast Wings )
It was still a good dinner but, you can tell that their management changed.
I like it better the last time we were there.







I was expecting to have some of the Nachos I had the last time. 
But they didn't have it no more :(

So we tried the classic nachos, Still good
Hubby loves it especially there's a lot of Jalapenos! haha!



I felt like having burger so I had this burger called "Cowboy Burger"
It has BBQ sauce, and some onion strips.
I had it with my favorite Sweet potato fries. that one didn't change 
It was still really really good!





Hubby had wings, with different flavors.
It was all spicy so I only tried one.
Their flavors are really good. 
...And they have a lot to choose from!


 It's March madness so hubby watched that the whole weekend.
We had a movie night Sunday (Finally!)


Feels like I need to get out more, I don't want to keep on 
blaming the laziness on the pregnancy but It's what I feel most of time. 
I'd rather be in my Pajamas all day than try to look nice.

But, good thing is that it's Spring!
 Maybe the weather will motivate me to get up and do more outdoors,

Roasted Butternut Squash with Brussels sprouts, and Pecans







I love the combinations of these ingredients, It probably can get more delicious with more ingredients but I just  really couldn't wait to try this.
Especially that I don't really eat Brussels sprout that much.
If you don't like Brussels sprouts you will like it cooked this way. I promise!
This is a perfect side dish for holidays or just regular meal.
The original recipe has dried cranberries next time I'll give that a try.

Roasted Butternut Squash with Brussels sprouts, and Pecans 


Ingredients:
  • 1 and 1/2 lb Butternut squash (peeled, seeded and cubed into 1-inch cubes)
  • 3 Cups Brussels sprouts (ends trimmed)
  • 3 tbsp olive oil
  • 3 tbsp maple syrup
  • 1/2 tsp. ground cinnamon
  • salt and pepper to taste
  • 2 cups pecans 


Directions: 
  • Preheat oven to 400 F
  • Lightly greased a baking sheet with olive oil 
  • In a medium bowl combine Brussels sprouts, Butternut squash, olive oil, maple syrup, ground cinnamon and salt and pepper to taste.Toss to combine 
  • Bake for 20-25 minutes, turning once halfway through baking, until softened ( you can bake this separately but I baked mine together.) 
  • When it's done baking add the pecans and mix it to combine ( You can add some more maple syrup if desired.)

Philly Cheesesteak Sliders





Hello everyone!
Do you guys remember the Ham and Swiss Sliders that I posted before? ( Here )
It has been always a hit every time I make it, Sometimes I find myself just craving for it
and I just make it for no reason.
Sliders are so good as an Appetizer its so easy to make and you can make it ahead too.
Just pop it in the oven when you are ready to make it.

Anyway, Today Hubby requested I make these Sliders,
He just got home today after being gone for almost 3 weeks. 
I think he missed my cooking. 

I added some mushroom and Jalapeno peppers on this because..
1, I'm craving for some mushroom and I feel like putting some
2, Hubby loves Jalapeno!!
I had to put in on one side though because I don't want mine really spicy.
But, really though you can add anything you want. 
The recipe below is the original one and I also doubled the recipe! ( You are not going to regret it!)

Philly Cheesesteak Sliders

Ingredients:
  • 1 Package of King's Hawaiian Rolls
  • 1  Box thinly sliced steak (found in frozen food section)
  • 1 Green bell pepper, diced
  • 1 Onion, diced
  • 6 Provolone cheese
  • 2-3 tbsp. Mayonnaise
  • 3 tbsp. butter, melted
  • Salt and pepper to taste

Instructions:
  • Preheat oven to 350 F
  • Separate the tops and bottoms of your rolls and place the bottoms in a 11"x 7" casserole dish.
  • Cook the steak meat in a skillet, adding salt and pepper to taste. (Put steak aside)
  • Saute the pepper and onions until they are tender.
  • Prep the bread by spreading the thin layer of mayo on the tops and bottoms of the rolls.
  • When they meat, onions and peppers have finished cooking spread the steak, pepper and onions evenly over the bottom pieces of the bread in the casserole dish.





The side with more onions ( I love onions)

The side with Jalapeno (hubby's favorite)

  • Place a layer of provolone cheese over the peppers and onions.



  • Place the top pieces of the bread on top of the cheese and then rbush the tops of the bread with a mix of melted butter and diced onions (if desired)



  • Cover with a foil and bake for 20 minutes, then remove foil and continue baking for 10 minutes or until cheese is melted.



  •  Cut and serve!
