Mexican Corn Dip
Ingredients
2 tablespoons chili powder
2 teaspoons smoked paprika
½–2 teaspoons cayenne pepper (adjust to taste)
2 tablespoons extra virgin olive oil
1 yellow onion, chopped
2 cups corn kernels (from 3–4 raw ears)
2 cloves garlic, chopped
Kosher salt and black pepper, to taste
6 ounces cream cheese, at room temperature
⅓ cup sour cream
4 tablespoons salted butter
⅓ cup olive oil mayonnaise (or plain Greek yogurt)
2 tablespoons fresh lime juice
¾ cup crumbled cotija cheese
1 grilled ear of corn, kernels removed from the cob
¼ cup fresh cilantro, chopped
Instructions
- Prepare the Spice Mix: In a bowl, combine chili powder, smoked paprika, cayenne pepper, and a pinch of salt. Set aside.
- Sauté Vegetables: Heat olive oil in a skillet over medium-high heat. Add chopped onion and cook until softened, about 5 minutes. Add corn kernels, garlic, and 1 teaspoon of the spice mix. Season with salt and pepper. Cook until the corn is tender, about 5 minutes.
- Create the Creamy Base: Reduce heat to low. Stir in cream cheese until melted and creamy. Add sour cream and cook until warmed throughout. If desired, thin the dip with a splash of milk.
- Prepare the Spicy Butter: In a separate skillet, melt butter over medium heat. Add 3 teaspoons of the spice mix and a pinch of chili flakes and salt. Cook for another minute, then remove from heat.
- Mix the Mayo and Lime: In a small bowl, combine mayonnaise and lime juice with a pinch of salt.
- Assemble the Dip: Transfer the creamy corn mixture into a wide serving bowl. Top with grilled corn kernels, drizzle with the mayo-lime mixture, and swirl in the spicy butter. Sprinkle with crumbled cotija cheese and chopped cilantro.
- Serve immediately with tortilla chips, pita chips, or fresh vegetables for dipping.

Smashburger Tacos
INGREDIENTS
Smash Burger Tacos
- 1 lb ground beef
- 8 tortillas, flour
- 8 slices of cheese
- Salt
- Black pepper
Big Mac Special Sauce
- 1/4 cup mayo
- 2 tbsp ketchup
- 1 tbsp dill pickle juice
- 1/2 tbsp yellow mustard
- 1/2 tbsp sweet pickle relish
- Salt, to taste
- Black pepper, to taste
Toppings
- Iceberg lettuce, shredded
- Tomato, chopped
- Dill pickles
INSTRUCTIONS
- First prepare the special sauce. In a small bowl combine the mayo, ketchup, pickle juice, yellow mustard, and relish. Add salt and black pepper to taste. Optional: You can also add garlic powder and onion powder. Set aside.
- Next divide the ground beef into 8 equal portions. They should be 2 oz each. Gently press one portion of the raw beef into each of the tortillas with your fingers. It should be completely flattened, or smashed into the tortilla. Season with salt and black pepper.
- Next heat up a large skillet or griddle, over medium-high heat. Add the tacos, ground beef side down, to the hot surface. The number of tacos you can cook at once will depend on the size of your pan / griddle. Press down on the tortilla side with another pan or skillet, burger press, or any heavy object and cook for about 2-3 minutes.
- Next flip the taco burgers and place a slice of cheese on top of the beef patty. Continue cooking for another 1-2 minutes to let the cheese melt. Remove from the heat.
- Add the burger sauce, shredded lettuce, tomatoes, and dill pickle slices to the tacos.
- Serve and enjoy!

Cheesy Taco Sticks
Easy meals during the week is my favorite.
These are perfect for School lunch for the kids too,
I sure did packed the leftovers.
It was such a hit.
Let me know what you guys think!
Ingredients
- 1 lb. ground beef
- 1 packet taco seasoning mix
- 1 tube Pillsbury Pizza Dough
- 5 colby jack and cheddar cheese sticks, halved
- 4 tbsp butter, melted
- 1 tsp garlic powder
- 1 tsp dried parsley
Instructions
- Preheat oven to 425 degrees F.
- Lightly coat a large baking sheet with non-stick spray and set aside.
- Cook the ground beef in a skillet, breaking up with a wooden spoon until fully browned and crumbled. Drain any fat and return skillet to stove top. Mix in the taco seasoning packet (but no water), and stir until fully coated. Remove from heat and let cool to room temperature.*
- Spread the pizza dough out until it's flat and cut in half lengthwise and then 4 cuts up and down, creating a total of 10 small rectangles. Place about a tablespoon or more of the taco meat in the center of each pizza dough, top with a halved cheese stick and then carefully roll up the pizza stick, making sure to pinch all seams closed.
- Combine the melted butter, garlic powder and parsley in a small bowl and brush it on the tops of the cheesy taco sticks. Bake for 10 to 12 minutes or until golden brown on top. Serve hot with your favorite taco toppings!
