Blueberry Margaritas

Love making pretty drinks Alcoholic or not and this is probably one of my favorite!
So refreshing!!

The prettiest Margarita!!

FOR THE BLUEBERRY SYRUP:

  • 1 cup fresh blueberries
  • 1/2 cup sugar
  • 3/4 cup water

FOR  COCKTAIL:

  • 2 oz silver tequila
  • 0.5 oz orange liqueur
  • 1.5 oz blueberry syrup
  • 1 oz fresh lime juice
  • Salt and lime slices/wedges, for rimming the glasses
  • Fresh blueberries, for garnish (optional)

FOR THE BLUEBERRY SYRUP:

  1. Combine the berries, sugar, and water in a small saucepan and set over medium heat.
  2. Bring to a simmer and cook, mashing the berries gently with the back of a spoon, for about 10 minutes.
  3. Remove from the heat and allow to cool slightly.
  4. Once cool, pass the syrup through a fine-mesh strainer to remove the solids; discard the solids. This is an optional step – see note below.
  5. The syrup can be made ahead and stored in the fridge for up to one week.

FOR COCKTAIL:

  1. To a shaker filled with ice, add the tequila, orange liqueur, syrup, and lime juice. Shake vigorously for 30 seconds to combine and thoroughly chill the ingredients.
  2. Rub a lime wedge around the rims of the serving glass and then place the rim in a shallow dish or plate of salt.
  3. Fill the glass with ice and then strain the margarita into the glass. Garnish with a lime wedge/slice and more blueberries. Serve immediately.

What's better than Margarita?

Hubby's Enchiladas...
Of course!

Hubby plated it like Restaurant and it just made it extra better!

We also had some Chips and Dips to eat with it.

The most perfect Dinner!!

Let me know what you think!
