Ham and Cheese Roll ups
Ingredients
- 2 8 oz packages cream cheese, softened
- 1 ranch seasoning packet
- 10 American cheese slices
- 5-10 deli ham slices
- 5 tortillas
Instructions
- Stir ranch seasoning into softened cream cheese. (For extra creamy cream cheese, beat with a mixer for 2-3 minutes.)
- Spread a thin layer of cream cheese mixture over top of the tortilla. Layer 1-2 pieces of ham and 2 slices of cheese down the middle of the tortilla.
- Roll up as tightly as possible and then wrap in plastic wrap. Continue making rolls until ingredients are finished. Store in the refrigerator for at least one hour.
- Once the rolls have chilled, remove plastic wrap and use a knife to cut off the ends. Slice roll into 1/2 inch rounds and serve.

Roadtrip to Colorado.
What a great way to end last days of Summer!

We have been planning this for a while but with life happening,
It got postponed.
I'm so glad and grateful we finally got to do it!
Hubby's Brother lives in Colorado,
It's a great excuse to visit! :)

Jalapeño Popper Pigs in a Blanket
We had Another Finger food Friday's few weeks ago.
Hubby's request was Pigs in a blanket, but of course its a Jalapeño popper one.
He made me like Jalapeño so I had to say yes.
I think this would also be good with just regular crescent rolls but I wanted it to
have a Pretzel like texture and flavor.
...And it did!
It was so good.
- 18 jalapeño peppers
- 36 lil smokies or cocktail wieners
- 8 ounces cream cheese, at room temperature
- 6 ounces extra sharp cheddar, shredded
- All-purpose flour, for dusting
- 3 sheets puff pastry, thawed
- 1 large egg
- Pretzel salt, for sprinkling, optional
- Marinara sauce, to serve, optional
INGREDIENTS
- Preheat the oven to 400°F. Line two baking sheets with parchment paper. Set aside.
- Cut the tops off of the jalapeño peppers and then each pepper in half. Use a spoon to scoop out the seeds and membranes and discard them. Place a cocktail wiener on each scooped out pepper half and cut the pepper to be the same size as the cocktail wiener. Set aside.
- In a medium-sized bowl, mix together the cream cheese and cheddar cheese until well-combined. One at a time, remove the cocktail wiener from each pepper segement and fill each jalapeño pepper segment with the cheese mixture. Then, top each cheese-filled jalapeño pepper segment again with the cocktail wieners. Set aside.
- In a small bowl, whisk the egg.
- On a lightly floured surface, unroll 1 puff pastry dough sheet. Cut it into 6 equal strips, and then cut those strips in half, cross-ways, to create 12 equal-sized pieces. Roll each stuffed pepper piece in 1 puff pastry strip, then seal with the egg wash. Place the wrapped jalapeño pieces on the prepared baking sheets. Repeat until all no jalapeño pieces or puff pastry remains.
- Brush the puff pastry tops with the remaining egg and sprinkle lightly with pretzel salt. Bake until browned, about 25 to 30 minutes.
- Some of the cheese filling will have spilled out, but don’t worry. Allow the Jalapeño Popper Pigs in a Blanket to cool slightly and use a knife to gently scrape away the cheese that’s oozed out onto the baking sheet. There will still be plenty of cheese left inside.
- Serve warm with marinara sauce, for dipping.

Chicken Broccoli Pasta Salad
Ingredients
- 1 pound (4 cups) dried Radiatore pasta
- 1 pound cooked seasoned chicken breast, diced into small cubes (about 2 cups)
- 3 cups small broccoli florets
- 1/2 cup golden raisins
- 1/2 cup diced celery
- 3/4 cup sliced almonds
- 4 scallions, diced
For The Dressing
- 1 cup mayonnaise
- 3/4 cup sour cream (or plain Greek yogurt)
- 2 tablespoons honey
- 3 teaspoons Dijon mustard
- 1 1/2 teaspoons kosher salt
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon pepper
Instructions
- Bring a large pot of water to a boil; cook pasta until al dente according to package directions. Drain and rinse under cold water. Drizzle with a little olive oil to prevent sticking.
- In an extra large bowl, whisk together all the ingredients for the dressing until combined and smooth. Add in the cooked pasta, chicken, broccoli, raisins, celery, almonds, and scallions; toss to combine and coat.

Air Fryer French Fries
Ever since we got our Air Fryer I have never made Fries in the oven.
I love crispy fries and cooking it in the Air fryer is the best.
We had so many Potatoes so we decided to make Homemade French Fries!
I can't believe how easy it is to make!
Ingredients
Instructions
- Peel potatoes and slice into 1/4 - 1/2 inch thick fries. Place in large bowl and cover with water. Soak for 30 minutes.
- Drain and rinse potatoes, then pat very dry with paper towels. Place potatoes in large bowl and add just enough oil to coat them all (may not need all of the oil, add gradually). Sprinkle with ground paprika and toss to evenly coat.
- Preheat air fryer to 350 F for 5 minutes. Then, place a single layer of potatoes into the air fryer basket. Cook for 10 minutes, then remove basket to shake. Cook for 5 more minutes, then check on potatoes. Add 2-5 more minutes to the cooking time, depending on how done the potatoes already are and how crisped up you want them.

Turkey Bacon Ranch Sliders
Ingredients
- 12 sweet Hawaiian rolls
- 1/4 cup ranch dressing
- 3/4 pound sliced or shredded turkey
- 6 slices white cheddar cheese
- 2 - 3 ounces bacon bits
- 5 tablespoons butter melted
- 1/4 cup brown sugar
- 1 tablespoon poppy seeds
- 1 teaspoon Dijon mustard optional
- 2 teaspoons Worcestershire sauce
Instructions
- Preheat oven to 350°F. Line a 9x13 baking pan with foil.
- Use a bread knife of a long serrated knife to slice slider rolls in half. Remove the top half and set aside. Place bottom half in lined baking dish.
- Spread ranch dressing on the bottom half of the rolls.
- Layer turkey on rolls, then layer cheese on top. Set the bottom half of the rolls covered in meat and cheese in the oven to warm up while mixing up the sweet slider glaze.
Sweet Slider Glaze
- Melt butter and stir in brown sugar, poppy seeds, mustard and Worcestershire sauce.
- Remove bottom half of sliders from the oven. Sprinkle bacon bits on top of the cheese. Place top half of sliders on the sandwiches.
- Pour sweet glaze mixture evenly over top of sliders and bake for 10 - 15 minutes until sandwiches begin to brown.

BBQ Pulled Pork Crescent
Remember the Pulled pork we made this weekend?
We made quite a lot so I had to think of something
creative to make with the leftovers.
..And this was the perfect idea!
Easy to make, if you don't have much time to cook.

Ingredients
- 4 sliced cheese or sticks (cheddar or any )
- 1 pound cooked pulled pork
- 1/2 cup bbq sauce
- 1 container refrigerated crescent dough
Instructions
- Preheat oven to 350 degrees F. Unroll crescent dough flat on a greased baking sheet and separate into individual triangles.
- Spread a thin layer of BBQ sauce on each triangle. Top with warm pulled pork. Drizzle remaining BBQ sauce on top of pork.
- Add half of a cheese stick at the wide end of each crescent. Begin rolling the crescent around the cheese stick. Bake for 11 minutes or until golden brown.

Mediterranean Chickpea Salad
We have been trying to eat healthier during the week, as much as we can.
Trying to find good meals has been actually fun.
I have never made any Salad with Chikpea before, so this was a refreshing new Salad to try!
INGREDIENTS
FOR THE SALAD
2 (15-oz.) can chickpeas, drained and rinsed 1 medium cucumber, chopped
1 bell pepper, chopped
1/2 red onion, thinly sliced
1/2 c. chopped kalamata olives 1/2 c. crumbled feta
Kosher salt
Freshly ground black pepper
FOR THE VINAIGRETTE
-1/2 c. extra-virgin olive oil 1/4 c. white wine vinegar
-1 tbsp. lemon juice
-1 tbsp. freshly chopped parsley
-1/4 tsp Kosher salt
-Freshly ground black pepper
DIRECTIONS
1 Make salad: In a large bowl, toss together chickpeas, cucumber, bell pepper, red onion, olives, and feta. Season with salt and pepper.
2 Make vinaigrette: In a jar Ltted with a lid, combine olive oil,
vinegar, lemon juice, parsley, and salt. Close the jar and shake until blended then season with salt and pepper.3 Dress salad with vinaigrette just before serving.
