Reese's stuffed Peanut butter cookies

 
 
 


Hello everyone! If you love peanut butter as much as my husband, you have to make these cookies. I swear every time I ask him what cookies he wants me to make, it has to be something that has peanut butter in it, Hey, I love peanut butter too so I can make it all the time! These cookies are the best, If you like making peanut butter cookies you have to try these! Ahhhmazing! :)




Ingredients:
  • 1 and 1/4 cups all purpose flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup unsalted butter, softened to room temperature
  • 1/2 cup dark brown sugar or light brown
  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 3/4 cup creamy peanut butter
  • 1 tsp. vanilla extract
  • 18 Reese's Miniature Peanut butter cups, unwrapped
Drizzle:
  • 1 cup semi-sweet chocolate chips
  • 2 tsp. creamy peanut butter

Directions:
  • Make the cookies, toss the flour, baking soda, and salt into a bowl until well combined. Set aside.
  • In a large bowl, using a hand-held mixer or stand mixer with paddle attachment, cream the butter, brown sugar, and white sugar together on a medium speed until combined. On low speed, beat in peanut butter, egg, and vanilla. Turn the mixer to high and beat until light color and smooth.
  • Turn the mixer to low and slowly pour in the dry ingredients. Mix until combined and dough is formed.
  • Cover tightly and chill the cookie for at least 1 hour (or up to 3 days) Chilling is mandatory
  • Remove cookie dough from the refrigerator. Preheat oven to 350F. Take 1 tbsp. of dough and roll into a ball. Take another 1 tbsp. of dough  and roll into a bowl. Stick a peanut butter cup into one ball, kind of like a "cradle" as shown below. Top the peanut butter cup with other cookie dough ball and seal down the sides so that the peanut butter cup is securely stuffed inside. Roll the large cookie dough ball in your hands to ensure it's smooth. Repeat with the rest of the dough and 18 peanut butter cups.
  • Bake The cookies for 10-11 minutes or until very lightly browned on the sides.
  • Allow to cool on the cookie sheet for at least 10 minutes and transfer to a wire rack to cool completely.

Make the drizzle:   Melt the chocolate chips and peanut butter together in the microwave, stirring often to prevent seizing. Add 1 tsp. of shortening if the mixture isn't smooth. Drizzle over cooled cookies. ( I used an empty condiment bottle for drizzling.)

Filipino egg pie

Today I want to share you one of my favorite pie from my motherland (Philippines)
Another recipe that I can put on my I can't believe I made this list.
Yes! I thought this was really hard, but I think If you really love baking and you enjoy doing it I don't think anything is hard!
 
Egg pie is a dessert that resembles to egg custard if you like that dessert you will love this too!
 
This is my first time making egg pie and probably not the last time! :)
 
Ingredients:
 


Ingredients

Pie Crust
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, chilled and cut into cubes
  • 1/4 to 1/2 cup cold water
  • 2 tablespoon granulated sugar
Filling
  • 1 3/4 cups evaporated milk
  • 3 pieces raw eggs
  • 1 piece egg, white separated from the yolk
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
 
 


 
 

Cooking Procedure

  1. Create the crust by combining the flour, sugar, and salt then mix well.
  2. Add the butter in the middle and mix using a pastry mixer.
  3. Gradually pour the cold water while mixing the ingredients. Continue mixing until all the ingredients are well incorporated.
  4. Gather the dough and mold it into a ball-shaped figure.
  5. Refrigerate the dough for at least 30 minutes to harden the butter.
  6. Sprinkle flour on a clean flat surface and flatten the refrigerated dough using a rolling pin. The flattened dough should be wide enough to cover a 9 inch circular baking pan.
  7. Arrange the flattened dough on top of the baking pan and cut the extra edge using a pair of scissors.
  8. Refrigerate while doing the filling.
  9. Start making the filling by scalding the evaporated milk. This is done by heating it in the microwave oven for 2 minutes.
  10. In a large mixing bowl, combine the 3 raw eggs and the separated egg yolk then whisk.
  11. Gradually add the granulated sugar while whisking.
  12. Put-in the vanilla extract then whisk until every ingredient is properly distributed.
  13. Pour-in the scalded milk then mix thoroughly.
  14. Beat the separated egg white using an electric mixer until it forms soft peaks.
  15. Fold the processed egg white in the milk-eggs-sugar mixture.
  16. Preheat oven to 350 degrees Fahrenheit.
  17. Pour the filling mixture on the refrigerated pie crust.
  18. Bake for 15 minutes at 350 degrees Fahrenheit then lower the heat to 325 degrees Fahrenheit and continue baking for 30 to 40 minutes.
  19. Remove the egg pie from the oven and let cool.

Mongolian and bowling day.

 
 
Hello Everyone! I had a fun Saturday with my boys (like always). we decided to go bowling today.
 I was so excited because it's my little man's first time bowling.
We took him with us before when we went bowling but he wasn't really interested in playing.
 
 
Hubby is going to join a bowling tournament next week so its kind of like a practice for him too since he haven't played for a while.
 
 
Anyway, it was fun my first play I had a strike but for the rest of our game I didn't do good, I guess its just a beginners luck! haha I think little man did better than me!
 
 


After that we decided to have lunch at our favorite Mongolian restaurant. I have been craving for these for a while. I know it's not too healthy but its not like I eat it everyday.
 
 

 
 
I was so stuffed when we left that place! :)

Friday Breakfast

 
 
Happy Friday Everyone!
Don't you just love waking up knowing that it's Friday? haha
 
Hubby is having a busy day today so we don't have much time to do anything so I decided to make a special breakfast.
 
We haven't had pancakes for a while, I don't know for some reason i stopped craving for it, we used to have it every Friday.. like literally every Friday..
 
 
 
This is one of the fluffiest pancake I ever made and it's made from scratch! I can't wait to share you my other pancake creations!
 
 
 
 

Ingredients:
(Makes 8 servings)
  • 1  1/2 cup all purpose flour
  • 3 1/2 teaspoon Baking powder
  • 1 egg
  • 1 3/4 cup of milk
  • 1 teaspoon Salt
  • 3 tablespoon of butter, melted
  • 1 tablespoon sugar
 
Directions:

  • In a large bowl, sift together the flour, baking powder, salt and sugar.
  • Make a well in the center and pour in the milk, egg and melted butter; mix until smooth
  • Heat a lightly oiled griddle or frying pan over medium high heat.
  • Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  • Brown both sides and serve hot.
 
 
-I spread peanut butter on each pancake and put some sliced bananas on top of it (I swear they are the best!)
 
 
 
 
 
 I made Blueberry smoothies with my breakfast too! they were so good!
 
 
Ingredients:
 
  • 1 Cup frozen blueberries
  • 1 Frozen Banana
  • 1 Cup milk
  • 1/4 cup Greek yogurt
  • 1 Cup of ice (less or more depends on your liking)
  • 2 packets of stevia (optional)
 
 
Directions
 
 



Blend it all together until creamy and smooth

Strawberry white chocolate chip cookies

 
If you guys don't know yet, I'm crazy about dessert. Cookies, Cakes, Pies, anything and if they are easy to make I will definitely make that.
 
Today I will share this really easy recipe made with cake mix (how cool is that?)
 
 
Adapted from: Sally's Baking Addiction 
Ingredients:
 
  • 1 box of Strawberry Cake mix (18.25 ounce)
  • 1 teaspoon baking powder
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/2 teaspoon vanilla
  • 1 and 1/4 cup of semi-sweet white chocolate chips (or you can use chocolate chips)
 
 
Directions:
 
  • Pre heat oven t0 350F. Line large baking sheet with parchment paper set aside.
  • In a large bowl mix Together the cake mix and baking powder and set aside.
  • In a smaller bowl, whisk together the wet ingredients
  • Mix the dry and wet ingredients together until it's well combined.
  • Gently mix the white chocolate chips
 
 
  • Drop rounded balls of dough, about 2 Tablespoons each, onto the baking sheet. Stick a few more white chocolate chips on top of the cookie dough ball if you want them for looks, if desired. (Make sure the balls of dough are taller than they are wide.)
 
 
                                       
 
  • Bake for 10 minutes- do not let the cookies get brown.
  • allow it to cool for 10 minutes because they will be very soft at first.
 
 
 
 
 
 
You can store it in an airtight container up to one week. Enjoy! :)

Trying out restaurants: McCall's BBQ and Seafood restaurant

 
 
 
 
 
So grateful for another beautiful day, I love waking up to days like these. it felt like it was Saturday already and I'm glad it's not.
 
Started my day with a quick Skype with my mom. I love talking to them so much, it makes me feel like I'm not so far.
 

 
 
 
After our quick talk me and hubby decided to eat out for lunch. Another reason why I  love Friday's because sometimes he doesn't have to go to work till later that day.
 
 
 
 
We decided to try McCall's. It's a BBQ and seafood restaurant and of course we tried the buffet.
I like variety when I eat sometimes.
 
I had a little bit of everything and I think this restaurant is one of the best BBQ restaurants I've been too. they were a little busy because it was lunch time but that's okay. I would go back again. :)
 
After that we head home and watch movies. it was a great day! :)

Snickerdoodle muffins



 
 
Woke up in a baking mood today.. Little man was still sleeping so I thought it was perfect time to make something good and easy.. This reminds me of muffins that I usually buy in the Philippines that I would usually have for breakfast.
 
This might be too much sugary for little man, but I let him have one for today with his breakfast.
 
Ingredients:
  • 1 1/2 cup all purpose flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/2 cup milk
  • 1 beaten egg
  • 1/3 cup melted butter
    For topping:
  • 1 tsp cinnamon
  • 1/2 cup sugar
  • 1/3 cup melted butter
 
Directions:
  • Preheat oven to 400F
  • Combine first ingredients . Add milk, egg and 1/3 cup of melted butter, mix gently to combine.
  • Butter muffin tin, and fill muffin cups 1/2 full and bake for 15-20 minutes, until tops are light brown and springy to touch.
  • While muffins are still warm, dip In butter and roll in cinnamon and sugar.
 
 
 
Serve warm. Enjoy! :)

Oreo stuffed chocolate chip cookies

 
 
Having a major cookie craving right now.. I just wish I don't need to wait till the weekend before I can make these, haha! Because if you are on a diet, this is not good to have in your house, you are not going to want to stop! haha
 
Anyway, if you haven't make this you should! It's the one of the best cookies I've ever made!
 
 
 
Can you imagine how crazy good these are?!!
 
 
Ingredients:
(adapted from: Picky palate)
  • 2 sticks softened butter (room temperature)
  • 3/4 cup packed light brown sugar
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 tbsp pure vanilla
  • 3 1/2 cups all purpose flour
  • 1 tsp kosher salt
  • 1 tsp baking soda
  • 10 oz bag chocolate chips
  • 1 bag oreo cookies, I used double stuff
 
Directions:
  • Preheat oven to 350F. In a stand mixer cream butter and sugars until well combined. Add in eggs and vanilla until well combined.
  • In a separate bowl mix the flour, salt and baking soda.
  •  Slowly add wet ingredients along with chocolate chips until well combined.
  •  Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo cookie. Take another scoop of dough and place on bottom of Oreo cookie.
  • Seal edges together by pressing and cupping in hand until Oreo cookie is enclosed with dough.
  • Place onto parchment lined baking sheet and bake 9-13 minutes or until cookies are baked to your liking.


 
  • Let cool for 5 minutes before transferring to cooling rack.
 
  • Serve with a tall glass of milk! :)

Peanut Butter & Banana French toast

 
 
 
 
Good morning everyone! I hope you are all having a great day so far!
I'm so excited to share you the recipe of this Stuffed French toast that I made this morning they were so good makes me want to make some again tomorrow! :)
 
 
 
 
I think I'm on the internet so much that I see these awesome ideas especially for breakfast, it's my favorite meal of the day! I would eat breakfast all day if I can! :)
 
I made this French toast with my homemade White bread I will share it with you too, I like making homemade bread, it's easy and I like eating freshly baked bread.
 
Anyway this is what you need for the French toast
 
Ingredients:
 
  • 1 Banana
  • 2 Slices of bread
  • 1-2 Tbsp Smooth peanut butter
  • Honey
  • 2 Eggs
  • 1/8 cup Heavy Cream
  • 1/2 Tbsp Vanilla
  • 1/2 Tsp Nutmeg
  • Dash of salt
  • Butter
 
 
Directions:
 
  • Lets start with the French toast mix, In a bowl combine eggs, heavy cream, vanilla, cinnamon, nutmeg and dash of salt. gently whip until the eggs have been scrambled and everything is combined.
  • For the sandwhich, Spread a thin layer of peanut butter on each slice of bread, place your sliced banana on one slice, drizzle some honey on the other slice and put sandwhich together.
  • Get a pan on a medium heat with about a tablespoon of butter.
  • Once it has heated and butter is beginning to bubble, dip your sandwhich in the egg mixture, coating each side and then fry in the pan about 3-4 minutes per side (or until brown)
  • Once brown on each side, plate it drizzle with honey or maple syrup and you can top it with whipped cream too if that's what your heart desire! haha :)

Now for the bread, I made mine last night and it was easy! I make this all the time!
 
 
 
 
This bread doesn't take that long to make I swear it's super easy!
 
Ingredients:
 
  • 3 cups of flour (any kind i used all purpose flour for this one)
  • 3 tsp active dry yeast (I usually use the red star brand it's the best!)
  • 3 tsp sugar
  • 1tsp salt
  • 1 Cup warm water
  • 1 tbsp. margarine (oil or butter works just fine)
  • 1 egg
 
 
Directions:
  • If you have a kitchen aid mixer, that's great it will do the work for you, But if you don't that's okay, you can mix everything by hand and it will turn just fine.
  • Start by putting the flour, yeast, sugar, salt, and start mixing on medium speed.
  • Add the warm water, 1 cup or much as you need, until you make a nice consistent dough. You don't want the dough to be too soft, but if you make a mistake and end up pouring too much water, don't worry, it happens all the time. Just add some more flour.
  • At the end, Cut the margarine or butter into small cubes and add it to the mixing dough.
  • When you're done mixing and dough Is a bit sticky but not significantly sticking to your hands, start kneading it with a bit of flour and form into a ball.
  • After that put the dough on the counter or on a cutting board and let it rest for 10 minutes.
  • After 10 minutes take the dough and roll it. About 10 inches long and 6 inches wide.
  • Take the bread and put into a lightly spayed bread pan slowly, tuck the ends underneath if needed.
  • Take the egg and beat it, and with a brush, brush it on the bread. (this will give it a nice bread color)
  • Put it to bake at 350 degrees for 30 minutes
  • When it's done, take it our and let it cool for at least 15 minutes to an hour, it's easier to cut it if you let it rest.
 
  • You can roll it just like the picture above or you can make it like this
 
For that one you roll it and divide it to two equal parts about 10 inches long and as wide to fit into your hand. Put the 2 rolls next to each other, connect the other one at one end, and start braiding

My Favorite Blueberry cheesecake pie! :)

 
 
 




I'm going to be honest, I'm not a professional cook.. and probably not a good food blogger, but I'm just really proud of myself that i got to make this cheesecake, I'm not interested to cooking before but when my hubby asked me to marry him, I know I have to learn! haha
 
 
I was a little unsure if i should make this or not, I just thought it's really hard to make it.. For my first cheesecake I decided to make a pie cheesecake to make sure that it will look good, I don't know but for me the presentation is more important to me, the taste Is just the second. haha!
 
Anyway, this is really easy to make and yes it was really good!! i swear i won't share it if it wasn't good! :)
 
 
Ingredients
(adapted from betty crocker)
  • 1 Pillsbury refrigerated pie crust
  • 1 package (8oz) cream cheese, softened
  • 1 cup sour cream
  • 2/3 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
 
Blueberry topping:
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup water
  • 2 tbsp. lemon juice (optional)
  • 2 cups fresh blueberries
Directions:
  • Heat oven to 425F. Slowly and gently unroll crust. Place crust in ungreased 9 inch pie plate; press firmly against side and bottom. Fold excess crust under and press together to form thick crust edge; flute. Line crust with 10 inch parchment paper or foil circle. Fill bottom of crust about 1/2 inch deep with metal or ceramic pie beans( use rice or dry beans if you don't have pie beans) Bake 10 minutes.
  • Reduce heat to 375F. Remove parchment paper and beans from the crust. Return crust to oven; bake an additional 4 to 6 minutes or until bottom looks dry and is just turning to light brown
  • Meanwhile, in a large bowl, beat together cream cheese, sour cream, sugar, eggs, and vanilla with electric mixer on medium high speed just until blended; pour into crust.
  • Cover edge of crust with strips of foil to present excessive browning. Bake to 25-30 minutes or until filling is set but center still jiggles slightly when moved. Cool 1 hour at room temperature.
  • Meanwhile make the blueberry topping; In a 1 1/2 quart sauce pan mix sugar, cornstarch and cinnamon. Stir in water and lemon juice until smooth. Stir 1 cup blueberries. Heat to boiling over medium heat, stirring constantly. Boil 2 minutes or until thickened and most berries have popped. Stir in remaining 1 cup blueberries.
  • Spread blueberry mixture over cooled cheesecake. Refrigerate at least 3 hours before serving. Store in refrigerator.
 
-Make sure you don't over cook the blueberry topping since it will thicken as it cools.

Homemade Rolls

 
 
 
 
I've lost track on how many times I have made these rolls in the last few months. Let's just say it's been a lot.
 
Believe it or not these rolls only take 30 minutes to make. Start to finish, really! The one thing about this recipe is that it makes a good size rolls, you can make it smaller if you like.
 

This Is how they look like after letting them rest for 10-20 minutes
you can brush some butter or egg wash on top of it to give a brown color, mine is just butter!
 

 
and then this how they look like after baking! They are they best! quick, easy and delicious! :)
 
 
Ingredients:
  • 1 Cup plus 2 tbsp. Warm water
  • 1/3 Cup oil
  • 2 Tbsp. active dry yeast (I used red star brand)
  • 1/4 Cup sugar
  • 1 1/2 tsp. salt
  • 1 Egg
  • 3 1/2 Cup Bread flour (or all purpose flour)
 
 
Directions:
  • Heat oven to 400 degrees.
  • In your mixer combine water, oil, yeast, and sugar and allow it to rest for 15 minutes. Using your dough hook, mix in the salt, egg and flour
  • Knead with hook until well incorporated and dough is soft and smooth. (Just a few minutes)
  • Form dough into 8-12 balls and then place in a greased 9x13 pan and allow it to rest for 10 minutes.
  • Bake for 10 minutes at 400 degrees or until golden brown.
  • Remove from oven and brush with 2 tbsp. of melted butter
 
 
 
 
 
Herbed Cheese rolls. (30 minute rolls)
 
 
I also made a different version of it, if you liked the first one you should try this one also!:)
 
 
 
  Ingredients:

  • 1 1/2 tbsp. fresh rosemary, chopped fine

  • In your mixer combine water, oil, yeast, and sugar and allow it to rest for 15 minutes. Using your dough hook, mix in the salt, egg and flour and dried herbs
  • Knead with hook until well incorporated and dough is soft and smooth. (Just a few minutes)
  • Form dough into 8-12 balls and then place in a greased 9x13 pan and allow it to rest for 10 minutes.
  • Sprinkle each roll with 2 tbsp. of grated cheese.
  • Bake for 10 minutes at 400 degrees or until golden brown.
  • Remove from oven and brush with 2 tbsp. melted butter.

Meatball Sub Casserole

 
 
I absolutely love meatballs, it's one of those food that we always have in the freezer.. well little man love it so much so we always have it. but anyways, don't you just love finding a recipe that is like perfectly made for meatballs? I'm so happy I got to try this! it's easy to make and it tasted fantastic!Perfect for those days that you just want to put everything in a casserole then wait for it to be cooked! haha
 
 
Ingredients
(adapted from: Plain chicken )
  • 1 (16oz) loaf French bread
  • 12 oz light cream cheese, softened
  • 1 1/2 teaspoon Italian seasoning
  • 1 lb Frozen meatballs, thawed
  • 1 (26 oz) jar spaghetti sauce, any kind you like
  • 2 cup mozzarella cheese
 
 
 
Directions
  • Preheat oven to 350 F
  • Slice French bread into 1-inch slices and place in a lightly greased 9x13 inch pan.
  • Mix together cream cheese and Italian seasoning. Spread over French bread.
  • Chop meatballs and sprinkle over cream cheese mixture. Pour spaghetti sauce evenly over meatballs. Top with mozzarella cheese.
  • Bake 25-30 minutes, until bubbly and cheese is melted.

Baked Sweet and sour Chicken

Today I want to share you one of my favorite recipes ever, well most of the recipes I will share is something I really love, I can't promise you that its all healthy though! haha!
 
 
Anyway, Me and hubby loves Chinese take out we usually have it on weekends and if we can eat it everyday we would, or I would! Maybe it's because I'm Asian and eating American food everyday makes me miss Asian food all the time!
 
 
 
 
 
 
 
 
I made this a lot of times, I think one of the most memorable ones is when I made this for my mother in-law when she visited us here in North Carolina.
 
 
 
 
Baked Sweet and Sour chicken

Ingredients:
 
  • 4-5 Boneless, chicken breast
  • Salt and pepper to taste
  • 1 1/2 cup cornstarch (or more)
  • 3 eggs
  • 1/4 cup of vegetable oil
Sweet and sour sauce:
 
  • 1 cup granulated sugar
  • 4 tablespoons of ketchup
  • 1/4 cup white vinegar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon low sodium soy sauce
  • 1 teaspoon garlic salt
Directions:
 
  • Preheat oven to 325 degrees. Cut chicken into bite-sized pieces and season with salt and pepper.
  • Heat the vegetable oil in a large skillet on medium-high heat.
  • Place cornstarch and beaten eggs in separate bowls.
  • Dip chicken into cornstarch then coat in egg mixture.
  • Cook the chicken until it's browned.
  • Place the chicken in a 9x13 baking dish.
  • In an medium sized mixing bowl whish together the sweet and sour mixture.
  • Pour over the sauce on chicken and bake for one hour or until the sauce is thick enough for you.
 
 
-I like to make it sometimes with onions, Green bell pepper and Red bell peppers if you want to do that too just sautee them while your baking the chicken then mix it when it's done.
 
-If you like your sweet and sour chicken saucy you can double the sauce.
