Instant Pot Brisket

I Finally Joined the Instapot and Airfryer craze.
While we were in Italy I've been seeing a lot how everybody loved theirs!
I still love my Crockpot of course, but while its still not here its perfect time to try these!

My sweetest hubby got me these!
I'm so excited for all of the awesome food I will learn how to make.

We tried the Airfryer first and omg!
I don't think I'll ever make Fries in the oven ever again, It's the best!

Last Sunday, Since the weather was not good.

We decided to use the Instapot, perfect time for it.

We picked Brisket for our first dish!!

To be honest, I still love the Crockpot and of course Brisket would

be amazing in the Smoker, but you guys..

This Brisket was amazing.

The Flavors was on point and the meat's tenderness was just right.

Let me know what you guys think!!!

Instant Pot Brisket

Ingredients

  • 4 pounds beef brisket, trimmed
  • 2 tablespoons olive oil
  • 4 garlic cloves, finely chopped
  • 3/4 cup beef broth

For the Rub

  • 2 tablespoons brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon ground mustard
  • 1/2 teaspoon ground cumin

For the BBQ Sauce

  • 1 1/2 cup ketchup
  • 1/2 cup apple cider vinegar
  • 3/4 cup brown sugar
  • 2 teaspoons onion powder
  • 2 teaspoons ground mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon liquid smoke
  • 3 tablespoons molasses
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper (or to taste)

Instructions

  • In a small bowl, mix all the rub ingredients.
  • Season the brisket all over with the rub. If you have time, let it sit in the refrigerator wrapped in plastic for up to 24 hours.
  • In a medium bowl, mix all the BBQ sauce ingredients.
  • Turn the instant pot/pressure cooker to "saute". Add the oil and allow it to get hot. Add the brisket to the pot and sear both sides for about 4-5 minutes or until golden brown. Remove the brisket from the pot and place it in a bowl or plate. Add the garlic and cook for about 1 minute, making sure the garlic doesn't burn.
  • Press the keep warm/cancel button on the instant pot. Add the broth and with a wooden spoon or spatula scrape the bottom of the pot to remove some of the bits stuck at the bottom of the pot. Add the BBQ sauce. Return the brisket to the pot with any collected juices. Toss well making sure the meat is well coated. Close the lid. Set the instant pot to meat/stew and set the timer to 75 minutes. *See Chef's Tips
  • Once the cooking cycle is complete, allow the pressure to release naturally for about 10 minutes. Then do a quick release for the remaining pressure.
  • Transfer the brisket to a cutting board. Cover with aluminum foil and let the meat rest for about 10 -15 minutes.
  • Turn the instant pot/pressure cooker to "saute" and cook/reduce the sauce for 5 to 8 minutes, stirring a few times. Press the warm/cancel button.
  • Slice the beef brisket against the grain and serve with the BBQ sauce. You can also return the sliced brisket to the instant pot making sure the slices are covered with the sauce (to prevent the meat from drying). Keep it warm until ready to serve.

Notes

  • If your IP doesn't have a meat/stew option, choose "Pressure Cook" and set the timer.2 to 3 pounds brisket: Cook on high pressure for 55 to 60 minutes.4 to 5 pounds brisket: Cook on high pressure for 75 minutes.6 to 7 pounds brisket: Cook on high pressure for 90 minutes.
  • If your brisket is too big, cut it in half so it fits comfortably into the instant pot.
  • I cut my brisket into 2 pieces and seared it one piece at a time not to over crowd the pot.
  • If your pressure cooker gets too hot after searing the meat, you can press the warm/cancel button before adding the garlic. The garlic will still get aromatic with the remaining heat.
  • Ground mustard is the same as mustard powder or dried mustard.

I mean, look how amazing this looks!
It was so good too.

Hubby approved Brisket.

Enjoy!!

Downtown Warrensburg

To be honest...
When I found out that we are going to Missouri, I was not excited at all.
I thought we are going to live in the middle of nowhere.
Like...Nowhere!!

But, being here for about a couple of months now made me realize that I
was so wrong.
That I should have not over reacted when I found out we are coming here. haha!

It's not bad.
This city, This town...has its own beauty.
...And I  will try to show you that as much as I can.

Last weekend.
We explored Downtown.
We never do these kind of things but living in Europe made us explorer.
Even though it's not the same with what going on.
We will try to explore safely and as much as we can.

Downtown is not that big.
But it's Beautiful.
I love that there's good shops around, little bars and restaurant that I'm hoping
I'll get try one day.

We went to the Market before they close.
It was a nice, cool morning.
It feels like Fall.

The Market is not as big but there was some interesting things in it.

Homemade products, Food, Vegetables, Fruits, Flowers.

I mean it's not as big as the one in Italy.
But it's nice that there's things like this here.

How cool are these Okra?
Next time I will try!!

Some homemade breads and Jam.

We ended up getting few loaf of bread and Jam.
Everything was so good.
The jam was perfect for my cheese board and Pumpkin bread was oh so good.
It made me miss baking.

Hopefully I get to bake my own goodies soon.
But, for now I will just enjoy store brought or bake goodies that other people make.
There's nothing wrong with that!

I hope you are having a good week!!

Warrensburg Parks

It's Officially Fall.
I can say that this is second to my favorite season.
Our first Fall here in Missouri.
I'm not looking forward to the cold mornings, but I know its going to be nice during the day.

Before it starts to get too cold to be outside.
We decided to explore the Warrensburg Parks while we can.
These parks are really close to downtown Warrensburg.

It was a beautiful day for some nature walk!

I'm so glad these boys are always down for some walk.

There was a nice walking path and the park was clean.
It was peaceful!

This park is the Cave Hollow Park.
The walk was not bad.
There's few spots to stop and enjoy the view an at the end of the trail you will see this face shaped stone.
It was interesting!

I love how mysterious the park looks like.

We hangout and took some pictures while we are there.
We liked it!

Then we stopped by the Blind Boone Park a few minutes away from Cave hollow park.
This one is not that big and perfect for picnic and just place to hangout.
It doesn't have a playground like the last one.

It was nice!

Great day with my loves.
Can't wait to explore more as much as we can!!

Have a great weekend!

Lee's Summit, Missouri

It's been about a few weeks now since we moved in our new home.
We still got so many things we needed so we decided
to check out Lee's Summit for Home stuff shopping.
It's only about an hour drive from our house, so that was not bad at all.

While we are there too...we had our first Kansas city BBQ!
It's hubby's co-workers recommended restaurant.
It did not disappoint!!!

Martini to start the meal.
We also had some wings for appetizer.
It was so good!

I had the Combo where you can pick 2 meats, I'm glad they have that option.

I picked the Ribs of course and the Brisket.
It also comes with 2 sides, I had fries and coleslaw.

The coleslaw was so good, I never had one like that before it tasted so fresh.
The meat was of course so good.
I highly recommend!

We all loved it.

The shopping went good too.
Even though its not fun to not have these places a little close to us.
I'm just glad that THERE is!
It's better than nothing!
I don't mind the 1 hour drive.
We went to Target, Macy's, JC Penney, H&M, and  Best Buy for a new TV.

I mean, any day is a good day as long as there's Shopping involved.

The house is coming along, I just wish we get our stuff from Italy soon.

Have a great week!

Labor Day Weekend

Labor day Weekend!!

Our first weekend in our new home.
It was such a beautiful weather too.
We are busy settling in and doing little things for the house but, that
didn't stop us to relax for a little bit to enjoy the long weekend.

It might be our last Summer weekend.
I can't believe fall is almost here.
Next week's weather is going to be a little chilly!

It's been a while since I dressed up.
Took advantage of this weekend to do that.
=)

I mean.. this view!
I don't need to go anywhere else for a little while.

For the first time in a little while I popped some Prosecco.
I have been some bottles for weekends like this.
I finally tried the meats we got from Trader Joe's.
So good!!

It was grilling day too!
It was an amazing dinner.

Monday, which was Labor day we decided to head to the pool in the
neighborhood.
It was nice to have one here!
We don't need to go somewhere else far.

We had the pool to ourselves for a little bit.

It was a hot day!!

It was a great weekend with my little Family
I'm excited for next weekend because we have Family that will visit!

I hope you have a great week.
