Delicious Bagels with mashed avocado, tomato and some arugula
And Mascarpone spread, banana, blueberries, sprinkle of cinnamon on the other one.
So perfect.

Caprese Salad
During the day, For lunch or Breakfast I like having simple easy to make meals.
...And Salad is usually my go-to if we don't have leftovers.
I'm a forever lover of Caprese so I made this yesterday for Lunch.
It's perfect for a Side, Quick healthy lunch or just light Dinner.
So good!
It only takes 5 minutes to make!
- 5-6 cups salad
- 1 cup mozzarella balls
- 1 cup cherry tomatoes
- 2 avocados
- salt
- garlic pepper
- balsamic glaze

Sky zone Lee Summit.
With the weather being too cold to be playing outside.
It was the perfect day to take the boys to an Indoor Trampoline park.
We have been wanting to take the boys here but with all the craziness we waited.
We feel so bad that the kids doesn't have anything to do other than staying inside the house.
So we gave this place a try.
It was so much fun!
I think they had a great time.
I highly suggest going right when they open.
Because it does get busy.
They try to control how much people can go in.
So I also suggest getting tickets a day before coming.
Since Lee Summit is about an hour away
we had to get tickets ahead of time.
It was worth it!
Wall climbing.
It was hard but the boys loved it.
They were so tired before we even finish our time.
So that's a win win!
This was a fun Winter activity for the kids.

Puto Pao
Happy Monday everyone!
How was your weekend?
We had a good relaxing one.
I'm so happy I got to make this too.
I have been wanting to make it for a long long time.
I love Siopao so much so this is pretty much another version of it.
Just in a Puto form.
I can't even remember the last time I had this.
The Saltiness of the Salted egg, yummy flavor of the pork and sweet fluffy puto made this
just so perfect.
Just an awesome combination.
Asado is my favorite filling so thats what I made with it.
Very easy to make!
Puto Pao
For The Batter
- 2 cups all purpose flour
- 1 cup white sugar
- ¼ cup baking powder
- 2½ cups water
- 1 cup powdered milk
- 3 large eggs
- 3 tablespoons butter, melted and cooled
For The Filling
- 2 tablespoons cooking oil
- 2 cloves garlic, minced
- 1 cup cubed pork
- ½ cup water
- ½ cup white sugar
- 1 teaspoon cornstarch
- ½ cup soy sauce
- 1 piece laurel leaf
- 1 piece star anise
For The Toppings
- 4 salted eggs, sliced
- cheddar cheese, sliced
Make The Batter
- 1. In a large bowl, mix together the flour, sugar, and baking powder. Pour in water and powdered milk, then stir well.
- 2. Add in the eggs and butter then mix until well blended. Set aside.
Make The Filling
- 3. In a pan, heat oil and saute garlic until aromatic. Add pork and cook for 3 minutes, stirring often. Add the rest of the filling ingredients and cook until pork is tender and the sauce has thickened.
- 4. Once filling is ready, discard anise and laurel. Set aside.
To Assemble
- 5. Prepare steamer, or use a large wok with a plate or a metal rack set atop some water.
- 6. In muffin cups (lined or greased depending on preference), pour a little amount of batter then add a tablespoon of filling. Cover the filling with another amount of batter until cup is nearly all the way full. Top with salted egg and cheese.
- 7. Steam for 10 to 15 minutes or until done. Puto-pao are done when the tops have domed and are soft and springy to the touch, and a toothpick inserted in the center comes out clean.

Finger Food Friday's.
Another Finger Food Friday!!
Remember when we did this last Month?
Well, you know my husband doesn't mind if we do this all the time.
He can't say no to wing night.
So I will just make it a little special.
We usually do this on Friday's!
I didn't know Chicken Wing Charcuterie Board
is a thing!
I already love the Cheese Board so its good that I can also other thing with it!
You can pretty much put any wings you want!
Everything is cooked in the Air fryer by the way.
Have I mention how much I love our Air fryer ?? We use it a lot!
I love how crispy anything you make in it, of course spraying oil
is optional but you totally don't need it.

Another Appetizer food I made is of course another Dip!
Another Dip to add to my favorites!
I've been making a lot of different dips and this one is so good too.
The oyster was a good ingredient if you want a dip with Seafood.

Ingredients
- 12 ounces oysters (canned)
- 4 ounces cream cheese, softened
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 teaspoon fresh lemon juice
- 1 (10-ounce) package frozen chopped spinach, defrosted and squeezed dry in paper towels
- 2 green onions, sliced
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 2 teaspoons Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 350 degrees. Lightly grease a small casserole dish.
- Place cream cheese, mayonnaise, sour cream, and lemon juice in a large bowl. Mix together with a wooden spoon or a hand-held mixer.
- Add spinach, green onions, Parmesan cheese, garlic powder, Worcestershire sauce, salt, black pepper.
- Add oysters, chopping them in half if they are large. Gently stir everything together.
- Transfer mixture to prepared casserole dish. Bake for 20 to 25 minutes, or until bubbly.
It was a good Dinner!

Oriental Cuisine Warrensburg
Cooking at home is so much fun.
But, when I need a break its nice to get out of the house
and just sit down and eat.
Last weekend I really wanted Sushi so we went to one in town.
We didn't want to go anywhere far.
I guess this was the best in Warrensburg and it actually is really good.
When we were in Italy we always go to a Eat all you can
Sushi places and eating here taste so different.
You can definitely tell the difference with the quality.
Start off with some Japanese Beer.
Some Cream cheese ragoons for Appetizer.
The boys had Lo mein noodles and rice.
Hubby picked this Spicy sushi.
It had Jalapeno in it and it was really good!
I had two rolls.
One that is fried and one that is just a basic sushi.
All in all it was really good.
I recommend trying out if you are in town.

Breakfast Date.
It's been such a long long time since we me and hubby had our alone time.
I was so excited to find out that he was going to have a long weekend.
Means, we could have half of the day without the boys since they are at School.
Don't get me wrong I love my boys.
But, alone time with hubby is much needed sometimes.
Of course we spent it doing what we love to do together.
EAT!! ;)
I remember how we do these every Friday when we were still in North Carolina.
We have breakfast every Friday.
I hope we get to do more of this in the future!
Anyway, We picked Country Kitchen!
There is not much Breakfast spots here in Warrensburg which is okay.
But this was a good choice!
Coffee Of course..
I picked their Cinnamon Apple Swirl Pancakes
and Bacon Ranch Avocado Omelette.
The Omelette was amazing!
The pancake was okay, I can say that the Cinnamon was overpowering
But it still tasted good.
Hubby had Country Fried Steak with Hashbrowns and pancake.
OMG it was soo good!
He always pick the good stuff.
Then some Matcha Tea Latte to drink at home.
It was a great morning.

Filipino Style Chicken Curry
During the week is my favorite days to make all of the Asian food that I've been
craving.
I love it when my boys are willing to try new Asian dishes too.
This dish can be as Spicy as you want.
This time I didn't make it spicy so the boys can enjoy it.
I think they loved it.
Ingredients
- 2-3 tablespoons vegetable oil
- 1 medium potato - cut into wedges
- 1 medium carrot - cut into wedges
- 3 cloves garlic - minced
- 1 small onion - chopped
- 2 pounds chicken
- 2 tablespoons fish sauce
- 2 tablespoons curry powder
- 1 tablespoon paprika powder (optional)
- 1/2 teaspoon ground black pepper
- 1 can (400mL) coconut milk
- 1 medium green bell pepper - cut into squares
- 1 piece fresh chili pepper cut into 4-5 pieces (or dried chili flakes)
Instructions
- Fry potato and carrots in oil until cooked and edges are lightly browned. Once done, remove from oil and then set aside.
- Saute garlic and onion in the remaining oil over medium heat. Add chicken meat and sear each both sides for a minute.
- Add the fish sauce, curry powder, paprika powder, and ground pepper. Cover and simmer for 5 minutes.
- Add coconut milk, and let it simmer until sauce thickens. I like it really thick so I cook it a little longer.
- Add the carrots, potatoes and bell pepper and chili and cook for another minute.

Black Bean Salad with Corn and Avocado
I have been making all different kinds of Dips these past few weeks.
I can say, So far they are all good.

Today, I want to share this one that I made last weekend.
Perfect for Mexican night or just you want a Dip that is fresh and light.
What is good with this is that you can add anything you want!
INGREDIENTS
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can corn kernels, drained and rinsed
- 1 medium tomato, diced
- 1 medium avocado, pitted, peeled, and diced
- 1/2 small red onion, finely diced
- 1/2 cup packed fresh cilantro leaves, finely chopped
- 1 medium jalapeño, ribs and seeds removed, finely diced
- 1 small garlic clove, minced
- 2 tablespoons freshly squeezed lime juice (from about 1 lime), plus more as needed
- 1 tablespoon olive oil
- 1/2 teaspoon ground cumin
- 1/4 teaspoon kosher salt, plus more as needed
- 1/4 teaspoon freshly ground black pepper
