Oktoberfest Lee's Summit


We may never got a chance to go to Oktoberfest in Germany...
Because of your know.. Kids.

I still have a pretty good idea of how its like. 

I wish we did get to go, but it's okay!


So when I heard about this event here in the Missouri, US!

I told hubby that I wanted to go.

I loved  how Kid-Friendly it was!



Hubby had a beer, to be honest I really wanted the mug! hehe





It was a nice Festival.
It felt good to go to things like this here.

We did this a lot in Italy.
I thought we will never get to experience it again.
Especially with the covid too.

We just had to be really careful.



So many things to do.
Vendors, Food and fun things to check out!


We didn't stay that long because it was a lot of walking.
But, I'm so glad we went!

We also stopped by the Filipino Grocery before going to the Oktoberfest.

It was a good day!!

Vegetable Gnocchi


So many healthy meals that I made this past few weeks that  I keep forgetting 

to share. 

I love eating all of the varieties of veggies lately,

This is definitely one of my favorites.

Creamy, light and the veggies adds a really good flavor to the dish.

Look at that perfection!


Ingredients

  • 1 package gnocchi
  • 1 tablespoon olive oil
  • 2 tbsp minced garlic
  • 3 tbsp Onions thinly sliced
  • salt and freshly ground pepper
  • 1 bunch asparagus, chopped into 1” pieces
  • 1 cup spring peas, thawed if frozen
  • 1/2 cup grated parmesan cheese 
  • 1/4 cup heavy cream 
  • 1 tablespoon fresh lemon juice
  • red pepper flakes, for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook until done according to package directions. Drain and lightly rinse with water. Set aside.
  2. Heat a large skillet over medium heat.
  3. Add the olive oil, onions, garlic and pinch of salt and pepper. Cook for 2-3 minutes until shallots are slightly soft.
  4. Add the asparagus and cook for 8-10 minutes until asparagus is fork tender.
  5. Add in the peas and cooked gnocchi, cooking for another 2-3 minutes until peas are heated through.
  6. Remove from heat and sprinkle in parmesan cheese, cream and lemon juice. Stir to combine and add crushed red pepper flakes, if desired.




I also made this really easy Healthy dish.
It's perfect for lunch or quick Dinner.







The Steak was grilled in the Airfryer.
I roasted the veggies then cooked some Brown Rice.



Easy peasy and so healthy.

Salad Days


I sure do love eating out and eating everything I crave.
I believe in moderation and balance so its so important to me to not restrict myself too
much when it comes to eating.

So during the week I like eating variety of greens and healthy proteins.
Who would've thought eating Salads would be this good!




Steak Salad:

Spinach
Red onions
Hard boiled eggs
Avocados
Air fried Steak
Croutons
Sprinkled with some sesame seeds.

Easy Peasy!





Salmon Salad:

Any preferred Salad
Salon Baked with favorite seasoning for 375F for 20 mins
Tomatoes
Avocado
Red onions
Cucumber


Very Very easy guys!





Also, Don't forget your green juice on the GO!

Longhorn Steakhouse (Lee's Summit, MO)



After my Naturalization Ceremony..

We headed straight to a Celebratory Dinner. 
Like our last time in Longhorn...

We originally wanted Texas Steakhouse, but of course they weren't open yet.
So good thing Longhorn is open all day.


It was such an amazing day.
Happy day!
Feels amazing to be done with all the process, the waiting, anticipation I went through for the process.
I'm glad it went smooth for me.




Started off with some drinks!
I had a peach lemonade. 
Hubby had a beer.






We had Tonion for Appetizer which was so good.
The sauce was amazing.





We both had a Side Salad.
We couldn't stop eating it.
It feels like it was enough to eat it for the Meal.






Hubby had Ribeye and I had a Steak too but with Shrimp.
The Shrimp and the rice was full of flavor, and the Sweet potato was perfect.
I really love what I picked.
I could definitely eat it again!

It was an amazing Dinner to Celebrate the Special day.

Ha Ha Tonka State Park (Missouri)


We discovered a Beautiful Gem in Missouri!
A long but beautiful Hike!

Now that Summer is almost over, time to be outside some more!




Ha Ha Tonka State Park is just under 3 hours away from where we live and it was worth the drive.

I can't believe there's a hidden gem like this in Missouri!

If you are in Missouri and looking for a Beautiful Outdoor destination I highly recommend!




The hike to the Castle was not bad but if you want to hike more, It's definitely big!


The water tower!

We used google maps for exact location so we don't get lost.







It was hot, but it was worth it.

After checking out the Castle and Water tower.
We did more hiking to the Spring!
I was so interested to see how it looks.




Definitely not for people who can't do Stairs.
It was never ending Stairs.
I'm so glad the Boys was okay with it. 

Stroller and Wheel chair not recommended.


The Spring at the bottom of the Hike was so gorgeous!
You can't swim, but it was nice to just relax there. 
Lots of Shade and some chairs to just chill.










We had to go all the way back, it wasn't so bad on the way back.





Definitely the most hiking we ever did, but I had so much fun!

I highly recommend this hike!
