Breakfast Burrito

We love a good Sunday Breakfast.
This was one of we made,
It's perfect to wrap and freeze for ready breakfast during weekday!

What's your favorite Breakfast Burrito filling??

Ingredients

  • 8 large (10-inch) flour tortillas
  • 1 pound ground pork sausage
  • 1 bag (28 ounces) frozen diced hash brown potatoes
  • 1 tablespoon vegetable oil
  • 1 teaspoon seasoned salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 8 large eggs, beaten
  • 1 tablespoon unsalted butter
  • 1 cup  Sharp cheddar cheese,shredded, divided
  • 1 cup  Monterey jack cheese, shredded, divided
  • sour cream and salsa for serving

Instructions

  • To a large non-stick skillet over medium heat, add the ground pork sausage. Cook for 8-10 minutes, or until the sausage is no longer pink. Using a slotted spoon, remove the sausage from the pan and place onto a paper towel-lined plate.
  • To the drippings in the pan, add oil. Add the potatoes, seasoned salt, pepper, and garlic powder. Toss to coat. Cook for 15-20 minutes, or until the potatoes are completely cooked through. Remove from the pan and place the potatoes in a bowl or on a plate while you prepare the eggs.

  • In the same skillet over medium heat, melt the butter. When the skillet is hot, pour in the eggs. Gently push them across the pan with a spatula, forming large soft curds. Continue cooking the eggs until thickened and no visible liquid egg remains. Avoid constant stirring. Remove the pan from heat and set aside.

Assembly

  • On a clean work surface, lay out tortillas. Top each tortilla with the following: 2 tablespoons cheddar cheese, 2 tablespoons Monterey Jack cheese, ¼ cup scrambled eggs, ¼ cup sausage, and ½ cup potatoes.
  • Fold in the left and right sides of the tortilla toward the center, covering part of the filling. Starting from the bottom, fold the edge of the tortilla up and over the fillings. With the bottom edge folded up, use your fingers to gently press and secure the fillings. Continue rolling the tortilla upwards, keeping it tight and compact. Roll until you reach the top edge of the tortilla.
  • Can be served immediately. If preferred, heat oil or butter in a skillet over medium heat add cheese if you preferred it cheesy and place the burrito in the pan, seam-side down, . Heat for 2-3 minutes on each side, or until browned.

This came out so perfectly.
I have been showing hubby all of the videos of people doing
this to their Burrito from Taco Bell..
Adding Cheese while grilling it/heating in the pan.
So he surprised me and did it.
....And it was amazing!!!

Let me know what you guys think!!

Enjoy!!
