We had a couple busy weekends so it's nice to have a relaxing day with my boys
We just stayed home had a movie night and stuffed our face with this amazing chili that I made tonight and oh some cornbread!
Ingredients:
- 1 lb ground beef
- 1/2 yellow onion, finely chopped
- 1 1/2 tsp. chili powder
- 1 tsp. cumin
- 1/2 tbsp. garlic, minced
- 1 (15 oz.) can tomato sauce
- 1 (15 oz.) can diced tomatoes
- 1 (15 oz.) red kidney beans
- 1 (15 oz.) beef broth (or water)
- Tomato paste
- 1 tsp. Worcestershire sauce
- Salt and pepper to taste
Optional topping: Sour cream, shredded cheese, Fritos.
Directions:
- Brown the ground beef in pan on the stove. Don't add any oil or anything. Just brown the meat in the pan.
- Add the beef to the crock pot (Drain it) Add the rest of the ingredients to the crockpot (Don't drain any of them)
- Cover and cook on low for 6 hours.
- Garnish with Sour cream, Fritos, and cheese.
I really thought, that I'm not going to like this, I'm not really into soup, but from now on this is going to be one of my fall recipe favorite!
I decided to make some cornbread too, It's kind of like a corn casserole but they are really good, that we ate them all.. yup! all of it! haha
Sweet Cornbread
Ingredients:
- 1 (8.5 oz.) package Jiffy corn muffin Mix
- 1 (14.75 oz.) can cream style corn
- 1 (15 oz.) can whole kernel corn, drained
- 1/2 cup butter, melted
- 1 cup sour cream (8 oz.)
- 2 eggs
- 1/2 tsp. salt
Instructions:
- Preheat oven to 375F and lightly greased a 9 inch pie pan or any 2 quart casserole dish with a non stick cooking spray.
- In a large bowl, combine the ingredients and mix well.
- Pour the mixture into the casserole dish.
- Bake 40-55 minutes, or until the bread is set.
Done. Yes, that easy!
