Happy 3 months little man!







I can't believe how fast these 3 months went by.
It's been a wonderful 3 months.
His giggles, smiles. cute little voice are everything. 
So blessed to have you in my life little man.

Postpartum transformation







I can't believe that I was pregnant 3 months ago and I can't believe
we already have a 3 months old. Where has time gone?!!
I love looking back at my pregnant yoga pictures. 
It brings back so many good memories and it makes me smile.
I truly loved every moment of it.

Grateful






I can't believe its been 2 weeks since my baby was born.
..and it has been a wonderful 2 weeks.
Busy, trying to figure out how to do this "mom of 2" thing.
So grateful that my hubby never left my side and helping me
with everything.

So many things I want to stay that I don't even know where to start.
But for now, I can say that I'm really happy, grateful.
So excited for our next journey.

It's crazy how time is flying..
So far yoga has been my Best friend.
No morning sickness.
When I don't practice I get terrible headaches and 
I just don't feel good at all.

Spinach Quiche Cups






Eating healthy has been so good these days.
Now, that I have 2 months left on this pregnancy It's so
important to eat healthier than ever, with some treats too sometimes.
I have a really bad obsession with Ice cream this whole pregnancy 
so yup, I've been having almost everyday.
It's all about control right?

Anyways, These were so good. 
Hubby loved it so much!
It's packed with protein, Gluten free and low carb!
Been making sure that Hubby is eating good too.
..And what so good about this recipe is you can put whatever 
you want. Just make sure it's good!

Spinach Quiche Cups




Ingredients:

  • olive oil (for cooking the mushroom)
  • 1 (10 oz) fresh baby spinach 
  • 5 eggs 
  • 1 cup shredded cheddar choice (or any cheese of your choice)
  • 1 (8 oz) mushrooms chopped
  • 1-2 tbsp. heavy cream or half and half
  • salt and pepper to taste
Directions:
  • Preheat oven to 375F
  • Heat a little oil in a large skillet. Saute the mushrooms until they are soft, about 5-6 minutes,Set aside.

  • Place the spinach in the skillet that you used for the mushrooms. Add a little water. cook the spinach until wilted, about 3-4 minutes. Drain excess water really well and set aside.


  • In a large mixing bowl, whisk the eggs until combined, Add the cooked mushrooms, spinach, cheeses and cream. Mix well, Season to taste.




  • Spray a muffin pan with a PAM, Divide evenly among 12 muffin cups. I only filled about 10 cups.

  • Bake for about 20-23 minutes, or until its well set.
  • Leave in the pan for a few minutes or just its cool enough to handle 
  • Sprinkle with a little more cheese on top.

Enjoy it as a snack or a breakfast to go!
I enjoyed it with rice, Of course! :)

Love at first sight.




Since I became a mom I found out  "Love at first sight" was real.
and last weekend that happened again for the second time.
It will become more real when I get to hold him in my arms in 8 weeks.



We went to Durham to do an ultrasound to see baby K.J. and it was
a great experience.
This place that we went to was specialized with 4d ultrasound.
I guess it was a blessing in disguise that the clinic I go to 
doesn't offer 4d ultrasound for now, So I had to find somewhere else to do it.


It was a 1 and half hour drive. 
Not to bad, I just had to get up early (which the hardest thing to do these days)



It was a rainy day too, But I'm glad it didn't last all day.

The place is called Durham baby 4d Ultrasound.



The ambiance of the place was so nice and so welcoming. 


...And how awesome is this?
It's like watching a movie.



We got to watch him for almost 2 hours. 
Because, he was being stubborn and keeps on covering his face!
But, we got some good pictures.

I couldn't stop smiling watching him move.
He was also kicking a lot and even the Ultrasound tech can feel.
I'm excited to be a mom for the second time around.

After our appointment my sweet hubby said yes to stopping by to get some 
donuts.
I know it's too much sugar.
But, I've been having this crazy cravings for cake donuts.
I don't want the melt in your mouth Krispy kreme kind of donuts.
I wanted the cakey ones!!




The carrot cake was so good and maple bacon ones. 
I was a happy preggo!!

I recommend this place.
It's called Rise biscuits and donuts in Durham N.C.!
If you are in town, definitely worth stopping by.

Lemon Chicken Asparagus Stir-Fry





Healthy eating has been on point this week. 
I'm so glad i finally got to make this recipe.
I thought it would be plain but It's actually 
pretty good.
Even hubby approved!

Lemon Chicken Asparagus Stir-Fry



Ingredients:

  • 2 medium boneless, skinless chicken breasts
  • 2 tbsp. olive oil
  • 2 tbsp. lemon juice
  • lemon pepper
  • garlic salt
  • salt and pepper to taste
  • 10-12 asparagus spears (ends trimmed off and cut in thirds)
  • 2 tbsp, teriyaki sauce
  • soy sauce

Directions:
  • Begin by cutting your chicken into 1 inch pieces.
  • Cook chicken in a medium pan with 1 tbsp of olive oil and 2 tbsp of lemon juice. Add a little bit of lemon pepper and garlic salt.
  • Once cooked, take out your chicken and set aside.
  • Cook your asparagus in the remaining oil. Add an additional tbsp. of oil and add the teriyaki sauce.
  • Cook asparagus on medium heat for 6-8 minutes 
  • Add chicken back to the asparagus along with the desired amount of soy sauce, Cook for an additional 5 minutes. Add salt and pepper to taste.
  • Serve over rice or noodles.

This is so good with rice. But, you can definitely eat it the way you want it.

Smoothie Bowl of the day





Sometimes all you need is a delicious smoothie bowl on 
this beautiful day.
Now, that it's starting to get warmer I crave for something cold more than ever. 

This is definitely one of the easiest breakfast/snack to make! 
I made this amazing Green smoothie recipe (Recipe here )
Then, topped it crunchy protein granola, frozen blueberries and strawberries.

There's so much you can put on top!
Whatever you can think of.
Just make sure its guilty free! :)

Healthy Snacking.


I can say that I'm finally doing so good with healthy eating these days.
Now that I'm halfway over this pregnancy. 
I need to keep eating/snacking on all of the good stuff.
I want my baby to fill up all on all of the good fats.
Some of the healthy stuff I have been eating are not really picture or
blogging worthy so I'm sorry if I haven't been posting recipes.
I will try to make more healthy recipes for you guys.

Every breakfast whatever I will eat
I make sure I have a bowl of fruits with it.
The other day, I had these Grapefruit. 
I never really eat them that much before, But Grapefruit are 
so refreshing I need to eat them more often.


...And sometimes, I crave Greek yogurt bowl so bad!
I make it as my dessert sometimes with some fruits and Granola.
You can drizzle some honey with it too and it's so good!

I had this for my dessert tonight.
Who else is watching The Bachelor??
I'm rooting for Lauren!

Apple Pecan Cranberry Spinach Salad.






I admit I have been eating a lot of not so healthy foods through this
pregnancy. 
But, I do try to balance it out by eating healthy food there and then. 
..And Salads are my go to when I know I need to eat something healthy.
I'm so obsessed with salads and what I love about it is that there so many
Salads you can make and you pretty much can put anything.

This is one of my favorite. 
Especially that I love fruits, I love salads that has mix of fruits.


Ingredients:

Spinach
Apple, sliced
Cranberries
Pecans


I made this with strawberries before and they are as good with a simple homemade
dressing link below!

Valentine's Day 2016






Hi guys!
Belated Happy Valentine's! 
Feels like its been forever since I've updated.
I haven't been feeling well for almost a week.
Thank god today, I'm feeling better. 
Getting sick when pregnant is the hardest. 
It's nothing major I just caught a cold and it was horrible.
I'm stubborn when I'm sick and pregnant, Even though there's medicine I can 
take, I will never take them. I just don't want to take anything while I'm pregnant
other than my Vitamins.

Anyways, Valentine's was awesome. 
I wasn't feeling my best but I had a great day with my boys.

Just like last year ( Valentine's day surprise 2015 )
Hubby got me edible arrangement this year and I swear I will
never get tired of this. 
Their chocolate covered pretzels are just so good, Did I mention how fresh and
big they looked? You can say that I'm just really obsessed with fruits.

These were gone quicker than last year maybe because my little boy loved them too.
Every bite taste like heaven!






Yup, He couldn't wait. 
I think it's his way of telling me I'm taking too much pictures. haha!




Since it's really cold out and there's not much to do.
We just went out for dinner.
We've been going to the same restaurant for 2 years in a row. ( Valentine's dinner 2015 )
But, this year we went to a different one.











I mean, who doesn't love Outback Steakhouse?! 
I had to try their specials and its so good!





 It was a great day!

Greek Yogurt Obsession.





Hello everyone!
Had the best sleep ever today,
How is your week going?
I can't wait how the weekend is going to be.
They are saying we are going to get a lot of snow,
I guess I'll believe it when I see it!
I'm looking forward to just staying home and
drinking hot cocoa.

Decided to rest today and skip cardio.
Afternoon snack is on point today!
Greek yogurt with Mandarin oranges, sliced pineapples
and Frozen Blackberries. I love eating frozen fruits!
They are so good..

Now time to do some stretching.

Gender Reveal Party.


Hello Everyone!

Last Saturday we had our Gender reveal party.
The day I've been waiting for!!
The suspense was killing me.

But it was so much fun finding out with some great friends.



My friend made this beautiful cake. 
Isn't so cute?



We had to wait a little bit til' everyone get there before we can slice it.
(more waiting, But. It's okay!)


I was so nervous slicing the cake!!


And....


It's Blue!!!!!!

It's a BOY!!!!!

We are having another boy.
It's going to be crazy here in the house having all boys withe me!
But, I'm so grateful.
..And so excited to meet him!
Now, We can finally decide with name, Color of his room and start getting
ready for his arrival!
See you soon little man! 







We grilled some burgers for that day, And I'm so happy to finally got to use
my new steamer!
I missed this food so much!
It's called Siomai.




My craving was definitely satisfied!
So excited to make amazing steam foods that I missed!
Recipe will be posted soon!





After the party, We had  a little, well not little..
Make up party.
It was a great night!
