Blue Lagoon Cocktail

• 2oz vodka
• 2oz blue curaçao 
• Sparkling water (lemon)

Pour in a glass and Enjoy!

Jalapeno Popper Wonton Cups

 

We made another wonton cups appetizer!

What is so good with this is you can make so many other Appetizer and 

it will be amazing!

This is now on our favorites list!

Especially it's a Jalapeno one!

Ingredients

  • 12 wonton wrappers
  • 4 oz. cream cheese, softened
  • 1/2 c. sour cream
  • 12 oz. bacon, cooked & crumbled (reserve 2 Tbsp.)
  • 1 c. shredded cheddar cheese, reserve 2 Tbsp.
  • 3-4 jalapeños, seeded and chopped

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray muffin pan with cooking spray.
  3. Place one wonton wrapper in each muffin cup; bake 10 minutes or until lightly browned.
  4. Remove from oven and cool slightly.
  5. In a medium-sized mixing bowl, stir together cream cheese, sour cream, bacon, cheddar cheese, and chopped jalapeños.
  6. Spoon filling into wonton cups, then sprinkle with reserved bacon and cheese.
  7. Return to oven and bake for an additional 8-10 minutes, until wontons are golden brown and cheese is melted.


So good!

Buffalo Chicken Wontons

 

Every time we make Homemade Crab Rangoons,

I always end up having so many Wontons left.

So I had to think of other ways to cook with it.

This was so perfect for Finger Food Friday's 

So easy to make!



Ingredients

  • 24 wonton sheets
  • 1/2 cup cream cheese
  • 1 1/2 cups chicken shredded, cooked
  • 1 1/2 cups cheese shredded 
  • 1/3 cup buffalo wing sauce
  • ranch dressing for drizzling
  • green onions chopped for garnish 

Instructions

  • Preheat the oven to 350 degrees Fahrenheit.  Spray a mini muffin baking tin with cooking spray.
  • Using spoon, press the wonton sheets into the mini muffin tin.  Set aside.
  • In a large mixing bowl, combine the cream cheese, chicken, buffalo wing sauce, and shredded cheese.
  • Fill each wonton sheet with a tablespoon of the buffalo chicken mixture.
  • Bake for 12 mins or until the wontons are browned and crispy. Remove from oven and allow to cool for 5 minutes
  • Drizzle with ranch dressing and sprinkle with green onions.
  • Enjoy!


So so good!

Homemade Chimichanga

 

We are celebrating Hubby this weekend so our Weekend meal and drinks

are extra special.

Everyday is special anyways, we try to make it special as much as we can. :)


Started off with some Strawberry Margarita with the salt that I forgot haha!





Hubby made Homemade Chimichangas 
Oh. My. god

He made this before and it was so good as ever!



I am sorry that I don't have recipe for you guys!
Maybe next time.

But, Hubby made Chicken and Steak filling sauteed in a cast iron skillet 
deep fried it,
Then made all the fixings together on the plate.




So amazing how good of a cook he is!
I am very lucky!!

Rush Funplex Kansas City. (Spring Break 2023)


Spring break this year is like last year. 
Spent mostly relaxing at home since the weather is not really Spring like weather yet.
I can't believe it's still so cold.

So we decided to do something fun indoors!

Kansas city has so many fun things to do with Kids so thats what we did.




We went to Rush Funplex for the first time.
It was so fun!



So many fun things for the kids to do.
The boys spent a long time there doing everything!

Started with Mini golf.


Arcade games.



So many fun things!




They have a little bit of everything!


The boys had a blast!
I wish we found this place earlier!

We highly recommend!


Before driving home we stopped by at the Asian store too.

Sushi Bake


We love Sushi!
So we had to give this one a try,

It was so amazing!
Definitely will be making it again.

INGREDIENTS

  • 1/2 lb salmon diced
  • 5 crab sticks shredded/minced
  • 4 tbsp mentaiko optional
  • 1 green onion diced

Spicy Mayo Sauce

  • 4 tbsp Japanese mayo
  • 1 tbsp sweet chili sauce
  • 3 tbsp Sriracha/chili sauce
  • 1 tbsp sesame oil

Other Ingredients:

  • 3 cups cooked rice hot/warm
  • 1 tbsp rice vinegar
  • 1/2 tsp salt
  • 3 tbsp furikake
  • 2 tbsp chili oil optional
  • roasted seaweed
  • green onions

INSTRUCTIONS 

  • Pre-heat the oven at 400 F.
  • Dice the salmon. Shred and mince the crab sticks. 
  • Combine the ingredients in the sauce in a bowl. Add the salmon and crab sticks. Mix well.
  • In a bowl, season the rice with the vinegar, salt, furikake and chili oil. Coat evenly.
  • In an oven safe dish, add a layer of rice and a layer of the salmon mixture on top of it. Optional step: Set aside for 10 minutes before baking.
  • Bake in the oven for 10-12 minutes. Broil for another 2-3 minutes.
  • Garnish with roasted seaweed, green onions and squeeze on more spicy mayo sauce. Best eaten with roasted seaweed. Enjoy!

Monte Cristo Sandwich

I have never had Monte Cristo ever in my life
When I saw it,
I knew I had to try to make some.
The whole family loved it and it was so easy to make.




Ingredients

  • 8 slices Texas toast
  • 12 slices turkey
  • 12 slices ham
  • 4 slices Swiss cheese
  • 6 eggs
  • ¼ cup milk
  • 2 tablespoon butter, divided
  • mayonnaise
  • Dijon mustard
  • powdered sugar
  • raspberry jam or maple syrup, optional

Instructions

  • In a bowl, whisk eggs and milk together, set aside.
  • Spread desired about of mayonnaise on 4 slices of bread and Dijon mustard on the other 4 slices.
  • Place 3 slices of turkey, one slice of cheese, and 3 slices of ham on the mayo slice of bread and cover with the mustard bread.
  • Repeat for all 4 sandwiches.
  • Heat 1 tablespoon of butter in a large frying pan or skillet over medium heat.
  • Take one sandwich, at a time, and dip into egg batter, then flip over to coat the other side (like you would for French toast).
  • Place sandwich into frying pan and cook until done, flip over and cook other side.
  • Remove from pan, place on a plate and continue cooking all of the remaining sandwiches, adding the remaining tablespoon of butter between cooking, as needed.
  • Serve warm, dust with powdered sugar and serve with raspberry jam or maple syrup.

Homemade Fishball Sauce

It has been at least a few years since I had Kikiam, Fishballs which is one of 
my favorite Filipino street Food.  

It's definitely not quite the same without the sauce so I had to try to make them.
..And omg!!

I looooved it.
Very easy to make!



Hubby fried the Fishballs and Kikiam and I made the Sauce.






For the Fishball sauce

Ingredients

  • 2 tablespoon flour
  • 1 cup water
  • 1 tablespoon soy sauce
  • 2 tablespoon brown sugar
  • 2 cloves garlic - minced
  • 1/2 teaspoon salt
  • 1/8 teaspoon cracked black pepper
  • 1 small red chili (labuyo) - chopped

Instructions

  • In a saucepan, combine all ingredients, except the red chili, and mix until flour and sugar are dissolved.
  • Bring it to a simmer over medium heat while stirring continuously.  Add the chopped red chili and stir until the sauce thickens. Usually takes about 3-5 minutes.
  • Transfer to a bowl or a jar and let it cool down a bit before serving. 



For the Spicy Vinegar

Ingredients

1½ cup Cane Vinegar
2 teaspoon salt
15 cloves garlic
25 to 30 Thai Chili Peppers
1 teaspoon whole black pepper
1 small red onion
1 tablespoon oil


Instructions

1. Remove stems of Thai chili peppers
2. Wash and let it drain
3. Transfer chili peppers in the jar container
4. Slice 5 garlic cloves thinkly and set aside
5. Slice 10 garlic cloves thinly and then transfer in the jar container
6. Dice red onion and then transfer in the jar container
7. Add salt, and whole black pepper in the jar container
8. Place small frying pan over medium heat
9. Add 1 teaspoon oil
10.When the oil is hot, add and saute the 5 sliced garlic cloves for about 2 minutes.
11. Set aside to cool then add to the container jar
12. Fill the jar with vinegar
13. Mix all the ingredients with a spoon (I used chopstick).
14. Cover and refrigerate for 3 days.




It was perfection!
I ended up using all of the Sauces with other food and that is amazing!
