Spinach Artichoke Dip with Bacon


I can't tell you enough how much I love Spinach Artichoke Dip.
I have the store-brought one all the time in the fridge for everything!
Dip, to match with rice or anything.

Nothing taste better than homemade though. 
..And its crazy how easy to make this!

Added some bacon because hubby loves anything Bacon.

Ingredients

  • 8 oz. cream cheese, well softened
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 garlic clove, minced (1 tsp)
  • 2/3 cup (76g) finely shredded parmesan cheese
  • 1/2 cup (56g) finely shredded mozzarella cheese
  • Pepper, to taste
  • 1 (14 oz) can quartered artichoke hearts, can liquid drained, squeeze artichokes to drain excess liquid, chopped
  • 6 oz. frozen spinach, thawed, squeezed to drain excess liquid
  • Bacon (cooked and chopped)

Instructions

  • Preheat oven to 350 degrees. Spray a small (1 quart) baking dish with non-stick cooking spray.
  • In a mixing bowl stir together cream cheese, sour cream, mayonnaise, garlic, parmesan, mozzarella and pepper.
  • Stir in artichokes, bacon and spinach.
  • Spread mixture evenly into prepared baking dish, Sprinkle more Bacon on top.
  • Bake in preheated oven until heated through and melty, about 20 minutes. 
  • Serve warm with tortilla chips, crackers or toasted baguette slices.

Philly Cheesesteak Crescent Ring


We were craving for some Philly Cheesesteak last Friday.
Its really easy to just buy it.
But I prefer fresh, homemade stuff these days. 

So we made a Philly Cheesesteak but with a twist!
We made it on a crescent!
I've seen a lot of these on Pinterest.
But, hubby likes putting his own touch to anything we make.
Good thing about this, its good for party, dinner for two, appetizer, main dish.
Anything you want!
It was definitely amazing.

INGREDIENTS • 16 oz crescent rolls
• Cheesesteak meat • ½ red bell pepper
• ½ green bell pepper • 1 onion, caramelized • ½ package Provolone cheese
• Salt and pepper • Egg for wash • Au jus sauce (store brought mix, cook according to instructions)
INGREDIENTS
1. Before beginning, prepare all your ingredients.(Cook the meat, cut the veggies.)
Place all of the crescent dough flat around the bowl in a sun/star shape. 2.Pile on each ingredient close around the bowl, on the inside edge of the crescent roll sun. 3. Wrap each point of the crescent dough around all the ingredients and tuck under inside ring to hold the wreath together. 4. Bake-30 mins 

5. Brush on an egg wash. Bake at 375°F for 30 minutes.

Weekend Fun


We are having such a fun Hot Weekend.
It  definitely feels like more than 100 degrees here.

It did helped a little bit getting in the pool for a bit.


This chair with umbrella is a must have.
Gotta have a shade somehow! haha


These boys had a good few hours at the pool.
Good thing the neighborhood have one.


What a fun fun Saturday!






Later that day after relaxing for a bit.
We headed out for Dinner!

 


We like to take break from cooking and cleaning on Saturdays.
This weekend we picked Applebee's 


It's definitely been a while!



Started off with some Blue Raspberry Lemonade.


...And this Asian Wings was so good!
I can definitely come back just for this.
It tasted like Korean Fried Chicken.








Craving today was pasta so thats what I had.
It was okay, not the best but it was good.

Such an amazing weekend.

Boys Room (Universe/Space theme)



I can't tell you guys enough how much I love my boys room.
It's probably one of my favorite room in the house.

It's still a work in progress but I love how it looks so far.



I can't believe it's been almost a year since we moved in here.
It has been definitely amazing.

Love this house and everything in it.



We decided that the boys should share a room.
Maybe one day we will separate them.
For now, this will do.

So I'm not too worried at night.





My eldest love everything about space, universe, planets and everything about that.
So all of the decorations came together  as most of the stuff we already have.
It's just nice that we can use it as decoration.


It's even better at night. 



The light is similar to this. 

My friend gave this as a present and we finally got to use it. 
The boys love it, we do too!!

Maybe I'll put one in our room too. :)

Taco Dip

 




We had a Taco day last weekend. 
It's been a while since we cooked homemade Mexican food so it was so good!


For Appetizer I made this Taco dip.
Layered with all the amazing goodness.
It was my first time making it so I was so excited!




Ingredients

  • 4 oz cream cheese softened
  • 1 cup sour cream
  • 3 tbsp taco seasoning (1 store bought packet)
  • 1 lb ground beef
  • 16 oz refried beans
  • 4 oz lettuce shredded
  • 1/2 cup tomatoes diced
  • 1/4 cup green onions diced
  • 1/2 cup Mexican blend cheese shredded
  • 1/4 cup black olives sliced
  • 1/4 cup jalapeno slices (optional)

Instructions

  • Cook the ground beef in a skillet over medium heat. Once browned, drain the meat and stir in half (1.5 tbsp) taco seasoning. Set aside.
  • In the bottom of a casserole dish evenly spread the refried beans.
  • Combine the cream cheese, sour cream, and remaining taco seasoning and mix until combined. Spread the mixture over the beans.
  • Layer the taco meat, shredded lettuce, Mexican blend cheese, tomatoes, green onions, black olives and jalapeños on top of the cream cheese mixture.
  • Serve immediately, or chill up to 4 hours then serve with tortilla chips or sweet peppers.



    It was so so good!




    So Perfect!







    I was already full by just eating Chips and the Taco dip while cooking but I was so
    ready for some Tacos!

    Good thing I still had a little room for it (Just a little) lol



    We made Beef and Shrimp tacos
    with all the fixin's!



    Netflix and Tacos!
    Perfect combo.

Pork Hamonado


Filipino Adobo is a very classic Dish that everyone loves. 
This is similar to that but not quite. 

If you love Filipino Adobo no doubt you will love this too. 
Pork Hamonado is braised in soy sauce and pineapple juice.

Its a melt in your mouth tender with a sweet and savory sauce that is so perfect with Rice!



My husband loves this and highly recommended.

Ingredients


  • 2 tablespoons olive oil
  • 2 pounds pork belly, cut into 2-inch cubes
  • 1 onion, peeled and chopped
  • cloves garlic, peeled and minced
  • 1 cup pineapple juice (reserved from can of pineapples)
  • 1/4 cup apple cider vinegar
  • 1/2 cup soy sauce
  • 1 cup water
  • 1 teaspoon peppercorns
  • bay leaves
  • 2 tablespoons brown sugar
  • salt and pepper to taste
  • 1 cup pineapple chunks

Instructions


  • In a wide, heavy-bottomed pan over medium-high heat, heat oil until very hot but not smoking.
  • Add pork belly in a single layer and cook for about 2 to 3 minutes or until lightly browned. Turn and cook for another 1 to 2 minutes or until all sides are lightly browned. Do NOT overcrowd the pan, cook in batches as needed.
  • Remove meat from the pan and drain on paper towels. Keep warm.
  • In the pan, add onions and garlic and cook, stirring regularly, until softened.
  • Add pork back to the pan and stir to combine.
  • Add pineapple juice and vinegar. Bring to a boil, uncovered and without stirring, for about 2 to 4 minutes.
  • Add soy sauce, water, peppercorns, and bay leaves. Stir to distribute and bring to a boil, skimming scum that floats on top.
  • Lower heat, cover, and simmer for about 50 to 60 minutes or until very tender and liquid is reduced.
  • Add brown sugar and stir to combine. Season with salt and pepper to taste. Continue to simmer until sauce is thickened. 
  • Add pineapple chunks and cook for about 1 to 2 minutes or until heated through. Serve hot.



It may be not the healthiest, but eating dish like this once in a while will not
hurt you.

Filipino-style Menudo

 

Remember my first version of Filipino menudo a while back?



It's very similar, It's quite the same but there's a little bit of difference. 
I finally got to find Beef liver!
Traditional Menudo uses Pork Liver, but beef liver will do just fine. 

I think I like it the most the second time I get to make dish.

Ingredients


  • 2 tablespoons olive oil
  • 4 pieces red hotdog, sliced diagonally
  • 3/4 cup tomato sauce
  • 3 piece bay leaf
  • 1 small onion, peeled and chopped
  • 2 cloves garlic, peeled and minced
  • 2 pounds boneless pork shoulder, cut into 1-inch cubes
  • 1 tablespoon fish sauce
  • 2 cups water
  • 3 medium potato, peeled and cut into 1-inch cubes
  • 2 large carrots, peeled and cut into 1-inch cubes
  • 1/2 pound beef liver, cut into 1-inch cubes
  • 1/4 cup raisins
  • salt and pepper to taste

Instructions


  • In a pot over medium heat, heat oil. 
  • Add onions and garlic and cook until softened. 
  • Add pork and cook until lightly browned. 
  • Add fish sauce, bay leaf cook for about 1 minute.
  • Add tomato sauce, stir occasionally.
  •  Add water and bring to boil. Lower heat, cover, and cook for about 30 to 35 minutes or until pork is tender.
  • Add potatoes and carrots. Continue to simmer for around 4 to 5 minutes or until almost tender. 
  • Add liver and raisins. Stir to distribute. 
  • Cook for another 5 to 7 minutes or until liver is cooked through and sauce is thickened. Season with salt and pepper to taste. Serve hot.






Very simple, I feel so luck every time I get to find the Ingredients!!




Definitely my favorite version!
