Mini Sausage Pancake Muffins


My boys loves Pancakes!
I do too. 
Sometimes though... We don't have all the time to make it.

I thought these Sausage Pancake muffins would be good for busy days. 
Just heat it up for 15-20 seconds in the microwave and its ready.
Especially for School days!

So so good!



Ingredients

  • 2 C dry pancake mix homemade or store bought
  • 1 C milk
  • 1 large egg
  • 1 TBSP brown sugar
  • 1 pkg Fully Cooked Breakfast Sausage
  • *Butter Maple syrup (or additional toppings)




Instructions

  • Preheat oven to 350ºF. Lightly grease mini muffin pan.
  • In a mixing bowl, whisk together pancake mix, milk, egg, and sugar. (Batter will be thicker than regular pancake batter - more like a muffin batter).
  • Spoon approximately 1 TBSP of batter into each muffin well.
  • Cut sausage links into thirds. Place one slice of sausage link into the center of each muffin well.
  • Bake for 10-12 minutes, until muffins are golden and cooked through.
  • Serve warm with butter if desired and maple syrup for dipping.

Sausage Tortellini Soup


Who else is ready for Spring??

I can't believe how much Snow days this year 

and I am so cold and over it. 


Thank goodness to food like these I can enjoy it a little bit.

Serve with bread..

So perfect!

Ingredients


  • 1 pound ground Italian sausagehot or mild
  • 1 small  oniondiced
  • 3 cloves garlicminced
  • 3 Tablespoons flour
  • 1 teaspoon dried basil
  • ½ teaspoon oregano
  • ¼ teaspoon pepper
  • 1 cup heavy cream
  • 5 cups chicken broth
  • 2 cups spinach
  • 2 cups refrigerated tortellinijust under 10 oz.
  • Salt/ to taste
  • 1 pinch red pepper flakes




Directions



  •  Cook and crumble the sausage and diced onions over medium-high heat until the onions are softened and the sausage is cooked through, 8-10 minutes. Drain grease. Add the garlic and cook for 1 minute.
  • Add the flour and cook for 1-2 minutes to remove the raw flour taste.
  • Add 1 tsp dried basil, ½ tsp oregano, ¼ tsp pepper. Stir to combine.
  • Add the chicken broth and use a silicone spatula to “clean” the bottom of the pot. Add the cream. Bring to a boil, reduce to a simmer.
  • Add the spinach
    and tortellini and simmer for 3-5 minutes. (If your tortellini needs longer cooking time, add the tortellini first, then the kale during the last 5 minutes.)
  • Taste the soup and add salt if desired. Start with ¼ tsp and add more after that if needed.
  • Transfer to serving bowls and top with a pinch of red pepper flakes. Serve with Garlic Bread with Cheese.

Crab Stuffed Mushrooms

 

I love an easy, yummy appetizer.

We are so obsessed with finger food that I love making/trying new ones when I can.

We recently had one of these from Hy-vee.

Pre-made ones and I thought.. Oh maybe I can make it.

Turned out it was actually really easy to make and cheaper!

Ingredients


  • 16 oz medium portobello mushrooms (save the stems)
  • 1 tbsp olive oil to cook veggies

Filling:

  • 1/2 cup finely chopped onion
  • diced mushrooms stems
  • 2 garlic cloves
  • 4 oz claw or lump crab meat
  • 4 oz cream cheese softened
  • 1 egg
  • 1/4 cup bread crumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tbsp minced fresh parsley
  • 1 tbsp minced chives
  • Salt
  • black pepper

Topping:

  • 1/4 cup fresh grated Parmesan cheese or shredded cheddar cheese for topping

Instructions

  • Preheat the oven to 375° and lightly grease a baking dish.
  • Rinse whole mushrooms under cold water and pat them dry with a paper towel. Carefully pop off the mushrooms stems, right where it connects to the cap. 
  • Preheat a saute pan and 1 tbsp of olive oil on medium high heat. Saute diced mushroom stems and diced onion until starting to caramelize. Press garlic into the onion/mushroom mixture and saute just until fragrant. Add cooked veggies into a mixing bowl.
  • Sift through the crab meat thoroughly with your fingers to make sure there are no pieces of shells accidentally left behind and add crab meat to the mixing bowl. 
  • Add all remaining ingredients for the filling to the mixing bowl and mix very well until all combined.
  • Set mushroom caps in a slightly greased baking dish, cup up. Fill each cap with stuffing mixture, pressing down lightly with your finger to fit a little bit more.
  • Sprinkle with some grated cheese over the top of stuffed mushrooms. 
  • Bake stuffed mushrooms for about 20 minutes.

We couldn't stop eating it.

Heroes Restaurant and Pub (Warrensburg)



Valentine's Weekend this year was nice. 

I'm grateful that hubby's family lives close so they can come when they can.
Perfect timing they were here on Valentine's weekend so we went out for a Date night.

I can't remember the last time we went on a Date night.
Probably when we were still in Italy!




We picked one of the Restaurant downtown.
We didn't want to go somewhere really far. 

We love Downtown Warrensburg.
We saw few restaurant that doesn't look like Kid-Friendly so nights like these
is the perfect night to try one of them!

We went to Heroes!







We had some drinks and Appetizer and it was oh so good!
The waiter was so nice to and suggested a really good drink for me!
It's actually been a while since I had a drink so this was a goodnight!


Finished off the night with some Ice cream on our way home!

Broccoli Salad



I love easy Salad or Side Dish.
It's a plus if its really healthy!

This Broccoli Salad is perfect for Side, Snack or Lunch!
Whatever you prefer!





Ingredients:

  • Broccoli
  • Bacon
  • Red Onion
  • Sunflower Seeds
  • Dried Cranberries
For the Dressing:
  • Mayonnaise
  • Red wine Vinegar
  • Sugar
  • Ground Mustard

Directions:

  1. Combine all salad ingredients in a bowl
  2. Whisk together  dressing Ingredients
  3. Pour dressing over Salad. Toss to coat
  4. Refrigerate for at least an hour. Enjoy!

Easy Chicken Salad



Easy meals are my go-to these days. 
I miss cooking everything I want, but I know I'll get a chance to make 
more awesome food one of these days. 

If you are looking for a healthy and yummy Salad this is a good one for you.

The Chicken is Air fried and can be marinated with any choice of sauce.
Or.. just season it up.



What you need

-Salad mix
-Corn (canned or frozen)
-Beans (canned)
-Diced tomatoes
-Boneless Chicken thighs (or breast)

Directions
-Cook the Chicken how you prefer 
-Plate it how ever you prefer.
