One pan Cheesy Chicken, Broccoli and Rice






Made this amazing dish last night, I can't believe how good it turned out.
It's perfect for a busy weeknight meal. It's easy to make.

Rice is one of the staple food in the Philippines, We eat it with every meal.
Sometimes we eat it plain, or Fried rice.
I usually just like to eat plain rice and I know my husband get tired of plain rice (since i make him rice all the time)

So i decided to try something different last night and it was really good, I was worried that the rice won't be cooked because I usually cook rice on a rice cooker, Just make sure you put enough Broth and add more if you think it's not done. The broth add a really good flavor on this dish.

One Pan Cheesy Chicken, Broccoli and Rice



Ingredients:
  • 3 Tbsp. Olive oil
  • 1/2 Onion, finely chopped
  • 1 Lb. Boneless chicken, cut into bite sized pieces
  • 2 Cloves garlic, minced
  • salt and pepper, to taste
  • 1 Cup uncooked white rice
  • 2 Cups broccoli florets, cut into bite sized pieces
  • 2 1/2 Cups chicken broth
  • 2 Cups shredded cheddar cheese

Directions 

  • In a large skillet or pan, saute onions in two tbsp. of olive oil over medium heat.
  • Season chicken with salt and pepper.
  • Once onion is soften, increase the heat to medium high and add chicken to the pan.
  • Brown the chicken pieces and add the garlic.
  • Cook for about 2 minutes.
  • Push the chicken to one side of the pan and add additional olive oil.
  • Add the uncooked rice in the olive oil and saute it for a couple of minutes.
  • Add the chicken broth to the pan and bring the mixture to a boil. Lower the heat to a simmer and cover that pan with a lid.
  • Cook chicken and rice mixture for about 12-15 minutes.
  • Sprinkle broccoli evenly to the mixture and stir to combine
  • Continue to cook covered another 8 munutes on low, or until the broccoli and rice are both tender.
  • Remove from heat and stir in the half cup of cheese.
  • Sprinkle remaining cheese on top and over with a lid, letting it sit for 1-2 minutes until the cheese has melted.
