Cabbage Rolls





I'm having a very slow and boring week, Maybe that's because hubby has been working 
extra long, So just more cuddles and play time with little man.
Anyway.. It's also a perfect time to make this dish. 
Been wanting to make this since I saw this one time on Facebook.
It definitely looked hard to make but, It's actually not!
I definitely recommend it!

Making this takes time, But I swear it's worth it.
If you are having a hard time taking off the Cabbage leaves before cooking it,
Just boil the whole cabbage but take off the core, So It's easier to take off the leaves one by one.

Cabbage Rolls
Ingredients
For the cabbage rolls:
  • 12 leaves cabbage
  • 1 cup cooked white rice
  • 1 egg, beaten
  • ¼ cup milk
  • ¼ cup diced onion
  • 1 pound extra-lean ground beef
  • salt to taste
  • black pepper to taste
  • 4 cloves minced garlic
  • 1 tablespoon garlic salt
  • 1 tablespoon onion powder
For the sauce:
  • 1 (15 ounce) can tomato sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons lemon juice
  • 3 tablespoons Worcestershire sauce
Instructions
  1. Bring a large pot of water to a boil. Boil cabbage leaves 3 minutes; drain.
  2. In large bowl, combine 1 cup cooked rice, egg, milk, onion, ground beef, salt, and pepper. Place about ¼ cup of meat mixture in center of each cabbage leaf, and roll up, tucking in ends. Place rolls in large baking pan.
  3. Mix together tomato sauce, brown sugar, lemon juice, and Worcestershire sauce. Pour over cabbage rolls. Cover with aluminum foil. Bake at 350 for 75 minutes.

Fun Weekend with Friends.




Feels like the season of everything Pumpkin and Football is here, 
But before that I want to enjoy every bit left of Summer.
So we decided to go for a quick drive to Kernersville and hangout with our friends.

It was a 2 and half hour i drive, I wish they were closer!


It was such  a beautiful day. 
I didn't get that much sleep last night, But being out of the house makes me forget about it.


When we got there, My friend was making "Puto"
It's my favorite, Steamed Rice cake. 
I haven't had this for, I don't even remember.
This is the best to eat when it's hot!




We did a little bit of relaxing before we went to the pool.



It was still a little hot but it felt good to be out there.


We decided to make our BBQ Filipino style, I'm so glad everybody liked the idea.
She made the Food and everything was amazing!



I definitely had a little bit of everything. 
I made a macaroni salad, also Filipino style and brought some Buko Pandan  that I made yesterday.
So good!




I think the guys had fun while we just eat and drink with my little man.





Later that night we head out to have a little fun, 
Okay.. it was a lot of fun!


We went to Limelight Bar in Greensboro, I actually never been this side of North Carolina.
It was a really nice Bar!
It was a 3 floor bar.
First floor is just a bar, The second one is a Karaoke bar. 
The 3rd one is the one with dance floor.


It was definitely really packed!




Awesome time with friends!
The next day even though the hangover got me bad, We still head back home.
Did meal prep and relax!
It was a great weekend.

Oatmeal Raisin Cookies





I always make cookies for my friend, This time she requested Oatmeal cookies.
I'm so glad she did because I've been wanting to make these, I just didn't have the reason to make it.
Let me know what you think!

Oatmeal Raisin Cookies
Ingredients:
  • 1/2 Cup unsalted butter, softened
  • 1/2 Cup shortening
  • 1 Cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1 1/2 Cup all purpose flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 3 Cups quick cooking oats
  • 1 Cup raisins.

Directions:
  • Preheat oven to 375 F degrees. Line a baking with a parchment paper. Set aside
  • In a large mixing bowl, beat together the butter, shortening with an electric mixer until well blended. 
  • Add the sugar, beat until fluffy. Add the eggs one at a time. beat well a after each addition.
  • Beat in vanilla 
  • In a separate bowl, combine flour, baking soda, cinnamon and salt. Stir with a whisk. Add flour mixture to the butter mixture. Beat on low speed until well combined.
  • Gently stir in the oats and raisins.
  • Roll dough into 1 Tbsp. sized balls. 
  • Place the dough balls 2 inches apart on the prepared pan.
  • Bake 10 minutes. Allow the cookies to cool on the pan before transferring to cool completely.

Happy Friday everyone!
Tomorrow I'm going to see my friend in Kernersville, 
Like always, It's going to be a lot of cooking and of course eating!
Made this to bring for everybody, It's one of the best dessert when It's super hot outside!
This dessert is typically on Filipino's table for special occasion.
I miss it when my mom makes it. 
Thank goodness for technology she can give me advice on making food that i miss.

Buko Pandan

Ingredients:
  • 32 oz or 2 packages of shredded coconut
  • 1 can of all purpose cream
  • 1 can condensed milk
  • 1 1/2 cups of nata de coco
  • 2 cans Gulaman Jelly, sliced. ( I used the Agar Agar, follow packaging instructions for cooking) 
  • 1 tsp. pandan essence
  • 1 cup sago (optional)

This was the gulaman when I got done making it and setting it in the fridge for a couple of hours.

Directions:

  • Cook sago and Gulaman according to package (I made mine a day before i planned making this)
  • Combine ingredients in a bowl starting from coconut (make sure to add the juice that comes in the package), Gulaman, Nata de coco, all purpose cream, condensed milk and sago.
  • Mix well.
  • Refrigerate. Serve cold.

Weekend Things.





Last weekend was one of the best. 
Lots of Eating, and Relaxing. 




Friday, Hubby had to attend something at work.
So instead of me being alone on a Friday, My friend came over.
We had a fun night baking. 
These are one of the best desserts I have ever tried.
She makes awesome desserts, I'm excited to learn more.


The next day, Even though I know hubby was a little hangover,
We stick to our plan on going to the park.
It was my first time going there. 
There's a lot of things you can do there, But since Sydney was with us we just went 
for a hike. 




It's not the best view, But it was such a beautiful day. 



It wasn't that humid.
I can't wait to come back and go to the lake.
Dogs are not allowed there.
So we didn't get to go.


Little man went with us too. 
It was a mile hike and he did so good.


Sydney went a little crazy every time she sees people but we never really take her out 
that's why.

Maybe we need to take her outside more often.






We decided not to cook for lunch, Since we don't have that much time.
So we just picked up food.
I missed this taco salad.
Even though, I know it's not too healthy.



Later that day, Hubby had a Football draft so I made couple of finger foods for them.
I decided to make something easy.

Parmesan Crusted Salmon and Roasted Broccoli


I'm almost done catching up with my vacation posts, I think i took so much pictures!
But.. you can never have too much pictures right? at least for me.

Anyway, we are doing good on getting back to healthy eating. 
I'm so happy about that.
More cooking and less eating fast food and eating out.
I like switching up our food so for this week I made salmon, This might not be too
healthy but this was so good. 

Parmesan Crusted Salmon and Roasted Broccoli



Ingredients:

Broccoli
  • 1 1/4 lbs Broccoli, stems cut. florets chopped into bite sized pieces.
  • 2 1/2 Tbsp. olive oil
  • salt and pepper
Salmon
  • 4 skinless salmon fillets
  • 1 1/2 tbsp. mayonnaise
  • 1 1/2 tsp. lemon juice
  • 1 clove garlic, minced
  • salt and pepper
  • 1/4 cup bread crumbs
  • 1 tbsp. chopped parsley
  • 1 1/2 tsp lemon zest
  • 1 1/2 tbsp. olive oil



Directions:
  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil sprayed with non stick cooking spray.
  • Place broccoli in a bowl and pour olive oil, with garlic and toss to evenly coat. 
  • Season with salt and pepper to taste and spread near edges of baking sheet. leaving enough space in center to fit salmon fillets.
  • Season bottom of salmon with salt and pepper and place salmon in center of baking sheet, leaving about 3/4 inches between fillets so they can evenly cook.
  • In a mixing bowl whisk together mayonnaise, lemon juice and garlic and brush about 1/2 tbsp. over each fillet.
  • Season top with salt and pepper.
  • In another mixing bowl whisk together parmesan, bread crumbs, parsley, lemon zest, and thyme. then drizzle 1 1/2 tbsp olive oil. mix until evenly moistened.
  • Spread parmesan mixture evenly over salmon fillets.
  • Bake in preheated oven until salmon fillets have cooked about 12-15 minutes.
