Watermelon Arugula Burrata Salad

 

I would definitely eat anything with Burrata.

I think I've been eating this more than ever. 

And I still can't get enough!




This one is pretty easy.

Assemble Arugula, Chopped watermelon
Put Burrata in the middle.
Season with any of your choice
And drizzle with Balsamic cream.

So perfect!

Grilled Chicken Teriyaki Sandwich



We love Grilled Chicken Sandwiches!!
We make it at least once a year during Summer.
It's just a perfect Summer Grilling Meal!




We are so glad that the temporary home we are staying at has a Grill!!





We also made Caesar Salad for Side!














This Pasta Salad had become one of our favorites and its so easy to make!

Prosciutto Arugula Brie Salad

 

Arugula And Prosciutto makes an amazing Italian Salad.
We may not be there any more but its one of the Italian things that I will always miss

This salad was so easy to make.

INGREDIENTS

-Arugula Salad
-Brie Cheese
-Prosciutto
-Grapes
-Pecans
-Your choice of dressing




Toss it together.
I used Champagne Dressing with this and it was so good.

Chicken Caesar Pasta Salad

 

I have been craving Salad these days,

Something perfect for Sides or just as is. 

The leftovers was not bad too.

I highly recommend!









Ingredients


Chicken:
  • 2 cups cooked chickencubed (grilled, baked, or rotisserie)
  • 1 tbsp balsamic vinegar(optional)

Salad:

  • 8 oz dried pasta(fusilli, farfalle bowtie, rotini, or penne)
  • 1 cup sweet cherry tomatoeshalved
  • 2 romaine heartschopped
  • ¼ - ⅓ cup shredded parmesan cheesedepending on your preference
  • chopped red onion
  • bacon chopped

Dressing:

  • ⅓ - ½ cup healthy Caesar salad dressingdepending on your preference

Instructions

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until it is al dente.
  • Drain the cooked pasta and rinse it under cold water to cool. Set it aside.
  • In a small bowl, whisk together all the dressing ingredients until well combined (recipe here). Taste and adjust the seasonings as desired. You we used store-bought Caesar, but you can also use homemade.
  • If desired, toss the cubed chicken with balsamic vinegar in a separate bowl for added flavor. This is optional, but I love it!
  • In a large serving bowl, combine the cooked pasta, cubed chicken, halved cherry tomatoes, chopped romaine hearts, onion,bacon and shredded parmesan cheese.
  • Pour the dressing over the pasta and gently toss to coat all the ingredients.
  • Taste the salad and adjust the seasonings by adding more dressing, salt, pepper, or parmesan if desired.
  • For the best flavor, refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld together. Alternatively, you can serve it immediately. Enjoy!


So perfect with this Grilled Pork Chops that hubby grilled!

Peach Arugula Salad

 

Whenever I see a good, fresh arugula Salad at the store 

there is no way I'm not getting it.

I am obsessed with Arugula Salad and its just so good.



I made this Salad to eat with our Steaks and it was a perfect Side.
It's also good to eat as is.

The topping is

Prosciutto
Sliced Peaches
Mozzarella Cheese
Drizzled with Balsamic cream.











It was amazing!

Broccoli Salad



I love easy Salad or Side Dish.
It's a plus if its really healthy!

This Broccoli Salad is perfect for Side, Snack or Lunch!
Whatever you prefer!





Ingredients:

  • Broccoli
  • Bacon
  • Red Onion
  • Sunflower Seeds
  • Dried Cranberries
For the Dressing:
  • Mayonnaise
  • Red wine Vinegar
  • Sugar
  • Ground Mustard

Directions:

  1. Combine all salad ingredients in a bowl
  2. Whisk together  dressing Ingredients
  3. Pour dressing over Salad. Toss to coat
  4. Refrigerate for at least an hour. Enjoy!

Easy Chicken Salad



Easy meals are my go-to these days. 
I miss cooking everything I want, but I know I'll get a chance to make 
more awesome food one of these days. 

If you are looking for a healthy and yummy Salad this is a good one for you.

The Chicken is Air fried and can be marinated with any choice of sauce.
Or.. just season it up.



What you need

-Salad mix
-Corn (canned or frozen)
-Beans (canned)
-Diced tomatoes
-Boneless Chicken thighs (or breast)

Directions
-Cook the Chicken how you prefer 
-Plate it how ever you prefer.

Steak and Quinoa Bowl

 


Eating healthy has been on point lately.

It feels good to be able to stick to this kind of diet, feel good about it

And also enjoy my favorite food on weekends.

I mean, look at this beautiful bowl!

Who says eating healthy is boring???





Ingredients

  • 2 tbsp olive oil
  • 16 oz sirloin steak 
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 1 red onion, sliced
  • 1 avocado

Quinoa

  • 1 cup water
  • 1/2 cup quinoa
  • 1 tsp butter
  • 1 pinch salt

Corn Salsa

  • 1 cup corn
  • 1 can black beans rinsed and drained
  • 1 tbsp lime juice
  • 1 tsp hot sauce
  • 2 tbsp cilantro chopped
  • 1 tsp salt
  • 1/2 tsp pepper

Pico de Gallo

  • 2 tomatoes diced
  • 1 small onion finely diced
  • 1 tbsp lime juice
  • 2 tbsp cilantro finely chopped
  • 1 tsp salt

Instructions

  • Make your quinoa in a rice cooked or in a pot on the stove.
  • Meanwhile, mix ingredients for corn salsa and pico de gallo together. 
  • On med-high heat, add 1 tbsp olive oil to a large frying pan. When pan is smoking, add the steak and cook on high for approximately 2-3 minutes each side, depending on the thickness of your steak. When the steak is somewhat firm and not super squishy, I usually take it off. Be sure to let it rest for AT LEAST 5 minutes before slicing it across the grain!
  • After the steak is finished, keep the frying pan on the heat, add remaining tbsp of olive oil and add the veggies, sautéing for about 5 minutes and stirring every once in a while.
  • Put bowl together by adding sliced steak, stir-fried veggies, salsas and sliced avocado in a circle around the quinoa in the middle of the bowl or any way you like.
  • Add your favorite topping, garnishes and enjoy!


    So healthy and so filling!

Strawberry Steak Salad with Creamy Balsamic Cream






Ohh to be back in Italy again.
I think I miss the food the most!

So from time to time I try to recreate some of my favorite dish as much as I can.

Steak Salad with Strawberries and Balsamic Cream??
It is AMAZING.

I'm so glad I can actually make this whenever I want.
It may not be as awesome but its close!




Ingredients:

Steak (I Airfried this one and its so good!)
Strawberries. (Sliced)
Spinach
Sliced Almonds
Balsamic Cream 

 So so easy!

Kale and Sweet Potato Bowl

 



Hello guys!


Happy Weekend!!!
 How is your weekend so far?
We have so much to do in the house that has been waiting for us lol
 So we decided
to have a low key weekend and FINALLY do it.
It feels good to sleep in though.


This Kale and Sweet Potato Bowl is just perfect for Lunch.
So so easy to make!



What you need:

Chopped Kale
Roasted Sweet Potatoes (Baked in the oven for 15-20mins 375F)
Scrambled eggs
Sliced Avocado
Everything but the Bagel Seasoning  (From Trader Joe's )




So simple but so good!

Olive Garden Salad

 



Some days I love having Salad with our Dinner.
Something light and healthy with whatever we are having.

Hubby wanted to have a Pizza night so I decided to make a Salad with it.
I've been wanting to make an Olive Garden Inspired Salad.
I finally got to make it.

There is definitely an option to just get the Dressing at the Store.
But, if you want to make it from scratch, it's very easy.
Either way that you prefer!






Ingredients

Olive Garden Salad Ingredients

  • 1 batch Olive Garden Salad Dressing
  • 1 10 ounce bag American Salad blend
  • 6 pepperoncini peppers
  • 1 tomato sliced
  • 1/4 red onion thinly sliced
  • 12 black olives
  • 1 cup croutons
  • 1 tablespoon parmesan grated

Instructions

How to Make Olive Garden Salad Dressing

  • Using  a cheese grated, grate the parmesan cheese.
  • Add the olive oil, white wine vinegar, parmesan cheese, mayonnaise, lemon juice, garlic salt and Italian seasoning to the blender.
  • Use the pulse feature or blend option and blend until smooth and everything is well mixed together.
  • Serve immediately, or store in the fridge.

How to Make Olive Garden Salad

  • Wash and chop the tomatoes, slice the olives and the onions.
  • In a large bowl place the bag of salad mix, then add the pepperoncini peppers, chopped tomatoes, sliced onions, sliced olives, croutons and grated parmesan cheese.
  • Use a salad spoon to mix everything together, then pour the homemade Olive Garden Salad dressing on top of the salad and toss with salad utensils.


Perfect Side for our Pizza night!
