Easy Breakfast

 


Easy Breakfast has been my go to these days. 
Now that it's warmer,
I crave a fresh Breakfast.




This Brie cheese, Blueberries, Honey on sourdough is just 
simple perfect.







Also this!
Soo Good.
Egg salad on a Croissant is just chefs kiss.
Add some Bacon, Arugula, Tomato and Bacon and you
are good to go!




Yum Yum Yum!!









I came across this Breakfast Idea that has Plain Greek yogurt 
and Fried Hash brown or toast for Dipping!
So I gave it a try.

Drizzle honey on top of Plain Greek yogurt.
Soft boiled eggs and season with what ever your hear desire
And you are good to go!





This was all perfect.

Watermelon & Basil Mocktail

 




Mocktails has been more refreshing for me these days!
So fun and just so many to try to make!

I decided to make this one to drink with our dinner.


Good thing about Mocktails is anyone can have it too!
So the Boys had some too.

All I needed was Watermelon juice mixed with Sprite
Garnished with Basil and  Watermelon balls!

So fun!



For Appetizer we made this amazing
Loaded Tater tot Nachos

I guess some people calls it Totchos
It sounds weird to me so I will just still call it nachos.



Airfried tater tots.
Pour some cheese sauce
The option for toppings is endless.
You can put whatever you want.

This one
We added 
Bacon, avocado,onions,jalapenos,tomatoes,
Drizzled with ranch.

So easy to make!

For our main dish we made this amazing
French Dip Sandwich!

We made this before and crave it from time to time 
So easy to make!!




Look at that perfection!







It was another Perfect weekend meal!!

Vodka Sauce Chicken Parmesan Sandwich

 





We made one of the best Sandwiches we ever made!
Makes me think we should make this more often!










If you think that it's hard to make It's actually not!
It's a perfect Weekend meal for the whole family!!





Ingredients:

For the Crispy Chicken:

  • 2 large Chicken Breasts, about 1 lb, sliced in half lengthwise
  • 1/2 cup Flour
  • 1 tsp. EACH: Garlic Powder, Black Pepper, Salt
  • 1 cup Panko Breadcrumbs
  • 2 large Eggs, beaten
  • 2 cups Cooking Olive Oil, for frying

For the Sandwich:

  • 1-2 Baguettes
  • 2 tbsp. Olive Oil
  • 1 cup Botticelli Vodka Pasta Sauce
  • 1/3 cup Fresh Parsley, chopped
  • 2 balls Fresh Mozzarella Ovoline, thinly sliced
  • 1/3 cup Grated Parmesan

Instructions:

For the Crispy Chicken:

  1. Slice the 2 large chicken breasts in half lengthwise. Place in a ziplock bag, press down to remove any air, then seal. Use a kitchen mallet to pound out the chicken pieces to be 1/4″ thick or thinner.
  2. Heat up your cooking oil in a skillet over medium high heat to 350F.
  3. Set up your station with 3 large plates or bowls. Add the beaten eggs to one bowl. Combine the flour and spices in the second bowl. Add the panic breadcrumbs to the third bowl.
  4. Dredge each chicken piece through the flour mixture, then the beaten eggs, then the breadcrumbs until well coated.
  5. Fry the chicken pieces in batches of 1-2 pieces for 3-5 minutes on each side, until golden brown and crispy.
  6. Place the chicken on a paper towel lined wire rack.
  7. To keep warm, place in the oven at 250F.

For the Sandwich:

  1. Slice the baguettes in half lengthwise. Drizzle generously with the olive oil. Broil in the oven for 2-4 minutes, until golden.
  2. Preheat oven to 400F.
  3. On a parchment lined baking pan, add the crispy chicken pieces.
  4. Spread a layer of the vodka pasta sauce on top of each, following by 2 thinly sliced mozzarella.
  5. Bake for 5-8 minutes, until the mozzarella is melted.
  6. Layer the toasted baguettes with the chicken parm, grated parmesan, and freshly chopped parsley to enjoy warm!





It was perfect!!



We also made Pulled Pork fries and it was perfect!!






IT was a good dinner!

Southern Bird Dog Sandwich

 


I was looking up for an easy recipe that my boys would love,
I was so interested when I saw this.

We have lived in the Carolina's and never heard of this. 
I thought it was such an a good idea.
2 of the Ingredients  my boys loves the most.

Fried Chicken Fingers and Honey Mustard,
So I had to give it a try!








Ingredients:

  • 8 breaded chicken fingers cooked
  • 8 slices cooked bacon
  • 1 cup shredded cheddar cheese
  • ½ cup honey mustard dressing
  • 8 hot dog buns

Instructions:

  • For each Bird Dog, chop chicken finger and place in hot dog bun. 
  • Top with one slice of bacon, crumbled. Top bacon and chicken with 2 Tbsp cheese. Melt the cheese with a kitchen blow torch or under the oven broiler. 
  • Top with 1 Tbsp honey mustard dressing.






It was a 5 Star!!

Croissant Prosciutto Mozzarella Sandwich

 



Love to be back where croissants and prosciutto are the best.
So I'm definitely going to be eating it a lot while I can.

The easiest lunch/snack ideas!






All you need is


Croissant
Arugula or any veggies you prefer
Mozarella
Prosciutto
Salt and pepper to taste.

Assemble to how ever you prefer
Serve right away!

Grilled Chicken Teriyaki Sandwich



We love Grilled Chicken Sandwiches!!
We make it at least once a year during Summer.
It's just a perfect Summer Grilling Meal!




We are so glad that the temporary home we are staying at has a Grill!!





We also made Caesar Salad for Side!














This Pasta Salad had become one of our favorites and its so easy to make!



















Perfection!!

Hotdog/Sausage Toppings

 


Having kids, 
You find yourself eating lots and lots of Hotdogs.
Its good easy meal,
But, Sometimes I get bored eating it plain.
So sometimes I would think about a topping for it to make it even better.

These are my favorites!!!




I try to keep it as easy, 
This one is definitely easy.

Mac and cheese!!!

Any!!
It's so good!





Next one is a Bacon wrapped hotdog/sausage topped with
Sautéed Green Bell peppers and onions.
Add any sauce you prefer to make it even better!




Next up is Tomato, avocado salsa drizzled with ranch.

This was definitely on the 2nd top favorite.





If you want the last one without Ranch,
It's good too!





Next up is perfect for Breakfas/Brunch 
Cheesy eggs with chopped tomatoes,
Perfection!!






And last one is with Sauteed red and green bell peppers, onions then topped with 
mozzarella cheese, baked in the oven until the cheese melts.
SO good!!!

Philly Cheesesteak Burger

 


I have been craving a good Philly Cheesesteak these days

And I saw this amazing idea of making it as a burger.

I thought it was a perfect combo and I was right.

This was soooooo good!!

I highly recommend!!!

INGREDIENTS 

Burgers


  • 2 pounds ground sirloin or chuck
  • 1 tablespoon Montreal grill seasoning
  • 1 tablespoon A-1 Steak Sauce
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground black pepper

Toppings

  • 1 large yellow onion
  • 2 bell peppersI used 1/2 each: red, orange, yellow and green
  • 2 tablespoons unsalted butterdivided
  • kosher salt
  • fresh ground black pepper
  • 4 hamburger bunsI love these homemade buns
  • 1 recipe Provolone cheese sauce

INSTRUCTIONS 

  • Combine burger ingredients in a large mixing bowl. Mix with hands to combine. Do not over mix.
  • Form beef into 4 patties, slightly larger than your bun. Make a slight indentation in the center of the burger to prevent it from doming up in the center. (The indentation will rise as your burger cooks). Set aside while you prepare the toppings.
  • Melt 1 tablespoon butter in a large skillet over medium high heat, add onions. Toss to coat, cover and cook for 20-25 minutes until onions are caramelized, stirring occasionally. Season with salt and pepper, to taste.
  • Meanwhile in a large skillet over high heat, melt 1 tablespoon butter. Add sliced peppers, toss to coat. Cook until peppers are soft. Season with salt and pepper, to taste.
  • Preheat grill to high.
  • Grill until golden brown and slightly charred (about 3 minutes), turning once (cook for 3 minutes on the other side for medium). Close grill cover. Try not to press down on your burger with a spatula. It will cause the juices to escape and will create a dry burger!
  • Toast buns on low or indirect heat.
  • To dress burger: Place a burger on toasted bottom bun, top with 1/4 of the sautéed peppers and onions, and a heaping spoonful of smoked provolone cheese sauce. Then, top with a toasted top bun.
  • Serve and enjoy!


 Enjoy with your favorite drink!!
