Omaha's Henry Doorly Zoo and Aquarium

 


We have been to a lot of Zoo and most of time..
They are the same,
But I love it when it's an Aquarium and Zoo in one!

Long weekend was here so we took advantage of it and 
took a drive to Omaha.
It's a bit of a drive but we also got to see Family.

So it was worth it!




The Zoo was beautiful and big!








After walking around for a bit we went inside the Aquarium and 
it did not disappoint.
Kids and Adult was amazed!

Its crazy how close were the Gorillas.
7 Layers of Glass thank goodness!



Now that its getting warmer.
Hopefully not much Rain...
I'm excited to do more fun things outdoors!

Blue Margarita


Yesterday,
The weather was finally perfect.
Hopefully not crazy change again,
It has been going back and forth with cold and hot weather.

Anywho,
Yesterday we enjoyed a relaxing day in the back with some
Blue Margarita and my favorite Mango Salsa





Ingredients

  • 4 shots tequila, blanco
  • 3 shots blue curacao
  • 3 shots simple syrup
  • 3 shots lime juice
  • ice (to fill each glass)
  • salt, for the rim (optional)
  • lime wedges (optional)

Instructions

  1. To prepare, fill each glass to the top with ice. 

  2. Add the tequila, blue curacao, simple syrup and lime juice into a cocktail shaker. Shake well. 

  3. Pour into your glasses and enjoy!



It was perfect day!

Fried Calamari

 

If you ask me what is my favorite food in Italy other than Pizza of course.

It has got to be Calamari.

You can eat this anywhere there and it always taste so good. 

I tried to order this in some of the Restaurants here that we've been to

but it was not good.

SO we decided to make it ourselves

Definitely not easy but it was worth it!


I swear, you will love it. 

I can still literally eat this every, day!












Ingredients

  • 8-12 oz. (226 g-340 g) cleaned squid and tentacles
  • 1 large egg, beaten
  • 4 oz. (115 g) all-purpose flour
  • 2 oz. (56 g) corn starch
  • 1/8 teaspoon salt
  • 3 dashes cayenne pepper
  • oil, for deep drying
  • bottled tomato sauce or pasta sauce, for dipping
  • chopped parsley, for garnishing


Instructions

  1. Cut the tubes of cleaned squid into 1/2-inch ring.
  2. Transfer the squid to a big bowl with a beaten egg. Stir to mix well.
  3. In another big bowl, combine the all purpose flour, cornstarch, salt and cayenne pepper. Stir to mix well. Working in small batches, drop some squid into the flour mixture. Coat well and transfer the squid out to a strainer. Repeat until all squid are nicely coated with the flour mixture. Gently shake the strainer with squid to remove excess flour.
  4. Heat up a skillet with 1-inch oil on high heat. When the oil is heated, deep fry the squid until they turn light brown in color. Remove the squid from oil and drain on paper towels.
  5. Garnish the squid with parsley, serve warm with tomato sauce.

Prosciutto Melon Bites





I decided to also try it with Melon!
Reminds me of Italy and it's actually such a good combination.
Perfect with wine!

What is your favorite Wine Pairing?



Ingredients

  • 1 cantaloupe that weight 2 1/2-3 pounds 
  • 6-8 oz prosciutto
  • 8 oz fresh mozzarella balls
  • 1/2 cup balsamic cream
  • 1 tbsp brown sugar

Instructions

  • Cut the melon in half and take out all the seeds. Peel the melon and cut each half into cubes. Keep the cubes no bigger than about an inch. 
  • Wrap 1/2 a slice of prosciutto around each cube and secure it with a toothpick. (If the cube of melon is pretty big of the prosciutto is very thin, you can wrap a whole slice around the melon cube.)
  • Drizzle some Balsamic cream and Serve!




    Enjoy with your favorite Wine!

    Prosciutto Wrapped Apple Bites



    One of the main reasons why I miss Italy is probably the FOOD!
    no question thats number one I miss the most. 

    I think Italy is where I had the Best food in the world!
    I'm so glad I could make some of it here in the US.
    I try anyways!




    This Appetizer is perfect with wine!
    As you know, 
    The kids loved it too!

    Let me know what you guys think!





    Ingredients:

    • Honey Crisp or Pink Lady Apples
    • Prosciutto
    • Arugula
    • Block of White Cheddar cheese or Cheese of your choice

    Directions:

    1. Separate prosciutto slices and cut lengthwise into 1-inch strips. Set aside.

    2. Slice cheese into 1/2-inch pieces to fit on top of apple slices. 

    3. Once ready to assemble, slice apples into 1/2-inch thick slices. Place two arugula leaves on top of apple slice, then a piece of cheese. Wrap the prosciutto around the apple, bringing the two ends together on the opposite side of the toppings. 

    4. Place on a serving tray and serve or keep in an airtight container in the refrigerator for up to 8 hours. If refrigerating, set out on a tray for 15 minutes at room temperature before serving for best flavor.



    Then pop your favorite wine!

    Roblox 10th Birthday Party



    Every time I post about my first born's Birthday,
    I always say "Little man"
    But I guess I couldn't say that anymore :(

    He's such a Big boy now.
    I'm not even sure if this is the last Kid's Party I will plan for him.

    But Anyways,
    I will enjoy it as much as I can,
    As long as I can.



    This year's theme is Roblox!!




    I still cannot believe he's 10!




    Little details.



    We weren't sure how much people were coming so we just made Appetizers
    And ordered Pizza.
    It was perfect idea!










    I enjoyed planning it this year!
    Just like every year anyways.




    I'm so glad the weather worked out too.
    It was raining for 2 weeks straight!

    Fitters Restaurant and Pub (Warrensburg)




    I love days like these.
    When we get to have some time, quality time. 

    So many busy days and this is so important for me.
    We had to do other things to get ready for little man's Birthday party this weekend.
    So we stop by for lunch first.

    We've been wanting to try this restaurant.
    I't s a bit intimidating because we didn't know if Kids are actually allowed
    since its a Bar.

    It was actually fine!




    It was actually nice inside and good stuff on their menu!



    We tried their Jalapeno Cheese stuffed Pretzel bites for starter.
    ... And it was so good!


    I didn't feel like eating a heavy meal so we just shared pizza.
    I've been really wanting to try Buffalo Chicken Pizza so thats what we did.

    It was so good!
    The crust was so good!
    We loved it.


    Highly recommend!
