Breakfast Sliders

 


As much as we can, We make special breakfast on Sunday's.

It also kind of like a meal prep for me for the week, since every time we 

make something, we make a lot.


The boys loves Breakfast Sausage Sandwich.

I buy the frozen ones of these but sometimes I like to make the Homemade version.

So so good!

This is perfect to freeze and just heat up in the microwave.

INGREDIENTS

  • Breakfast Sausage patties
  • 12 Hawaiian bunsor other slider buns
  • 8 large eggsscrambled
  • 6 slices pepper jack cheese
  • 8 slices American cheese
  • 1/2 cup buttermelted
  • 1/4 cup maple syrup

INSTRUCTIONS
 

  • Preheat oven to 350°F.
  • Warm large skillet over medium heat.  Add sausage to skillet and cook until completely cooked through.
  • Meanwhile, using a serrated knife, cut rolls in half lengthwise (without breaking apart). Place bottom half of rolls in 7x10-inch or 9x13-inch baking dish; set tops aside.
  • Scoop scrambled eggs onto bottom rolls; top with pepper jack. Place sausage on top of pepper jack and top with American cheese. Carefully top with top buns.
  • Combine melted butter and maple syrup in small bowl. Brush over tops of rolls allowing sauce to drip down sides and into bottom. Use entire amount.
  • Bake 15-20 minutes or until cheese is bubbly and melted. Serve and enjoy!

Christmas 2023


Merry Christmas everyone!
How was your Christmas?
 
Ours was a little special because we got to spend it with Family.
I love it when Family get to visit us.

I mean,
One of the favorite reason why we love being here.
Closer to Family.








The Table Decor was somewhat the same as the last year.
Which I love so much.
Maybe next year I will change it up a bit.








Anyways, 
For Appetizer.
My first born is in charge with that.
He made Candy Cane Charcuterie.
..And I thought he did pretty amazing.
IT was gone right away.
Everybody loved it.








I can't help it but add  some Filipino Dish in our Dinner.
Just to honor being a Filipina. 
And  I made my ultimate favorite
Pancit and Air fried Lechon.

WE made the usual ham
and my favorite Wreath winnies.
SO easy to make!



And this amazing Parmesan Roasted Green beans!




For Dessert I made 

Another Filipino Favorites.
It's so easy festive so it's the best for Holidays.

I couldn't find the perfect mango for it so I used Peaches. 
My Father in law loved it!!




Also made some Leche Flan,
It's actually my first time making it by itself.
I always make it with the Cake.
And it still turned out as good. 



It was a wonderful Christmas!

Grinch Mimosa

 

I am having so much fun making all of these festive drinks this Christmas.
I just like making these nice and really good drinks. 

Anything with bubbles I love.
So this one was really good!

What is your favorite Holiday Cocktail??



Ingredients

  • Prosecco or Champagne
  • 4 ounces blue curacao
  • 24 ounces orange juice chilled
  • 4 strawberries sliced

Instructions

  • Pour 3 ounces of orange juice into each champagne glass (or, slightly less than half full). Add ½ an ounce of blue curacao into each glass. Top each glass with prosecco or champagne
  • Garnish each glass with a strawberry slice and serve immediately.

Christmas Charcuterie Board

 



It's been a while since I made a Charcuterie Board.
So I thought, Christmas would be a perfect time to make it. 

Snacking and drinking with family a Charcuterie Board would be perfect.
..And you can make it as festive as you want. 




I used a cookie cutter to cut the Brie in the middle and it was perfect to put some Jam.
Rosemary is such a perfect touch to it.










Of course,

Upgraded Instant Ramen



I think I have started an obsession with Instant Ramen.
Not the usual ones,
I like to upgrade it and add more stuff.
It's actually have been fun
and it's good every time.
So so comforting.
Now that it's winter I'm probably gonna be eating this more.



I just use Instant Ramen noodles.
If it's a thicker noodles.
Like it would say Udon noodles I would pick that one.
I cook it the same usual way,
With this one I added Gochujang, just a few tablespoon.
Then I add more Broth. Chicken or Beef whatever you have available.
I like it to be more soupy.
Top with soft boiled egg and green onions, also chili oil sometimes.

I have made it so many times maybe next time I will do the cheesy ones.

El Monterrey Mexican Restaurant

 

I can't remember how many times we went to El Monterrey,
And every time.
It doesn't disappoint.

To service, to quality of food.
It's just sooo good.

If you are in town give it a try!









Of course,
Starting off with their amazing margarita.
The corona is just a cherry on top!



We ordered white quezo and guacamole.
It's our first time having their guacamole!
..And its probably gonna be a must every time now.



With me being indecisive...
I gave this Burrito a try.
It's Fajita Burrito.
So it's all Fajita in a Burrito.

Oh, my, god!

SOooo good!



My boy had their Enchilada too, 
And hubby had a Burito.






It was all amazing!!!

Jack Frost Cocktail

 

I wanted to make Christmas/Holiday drinks as much as I can.
There is so many,
But of course this caught my eye.
Maybe its because I love Blue? and I looove coconut.
It was a good choice.
It was so good!



Ingredients

  • 1 cup pineapple juice
  • 1/2 cup Blue Curacao liquor 
  • 1/2 cup light rum
  • 1/2 cup cream of coconut

Rim of Glass

  • light corn syrup
  • coconut flakes

Instructions

  • Pour a small layer of corn syrup onto a shallow plate. Place the flaking coconut in another small dish.
  • Dip the cocktail glasses into the light corn syrup, then in coconut flakes.
  • In a shaker combine pineapple juice, Blue Curacao liqueur, rum, and cream of coconut. Shake until smooth.
  • Pour the mixture into prepared cocktail glasse. Serve immediately.

Salmon Rice Bowl

 

I have been into Asian food these days. 

Sushi mostly,

I just love it,

There is so many things you can put it on it, 

one of things I love about it.

What topping would you prefer?


Ingredients

  • 2 cups cooked Japanese white rice

  • 6 oz salmon , cut to you preference

  • 1 avocado, sliced

  • 1 egg

  • 2 teaspoons furikake

  • 2 tablespoons light soy sauce

  • 1/2 teaspoon wasabi paste

    Sushi ginger



    Instructions


  1. Scoop the rice into two serving bowls.

  2. Top with the sliced avocado, sushi, and egg.

  3. Sprinkle with the furikake

  4. Serve with a small bowl of sauce and ginger, add wasabi to your liking.

Fried Oreos

 

Eating Fried Oreos reminds me of going to the fair.
We missed it this year,
Out of nowhere I am craving for it.
Good thing its actually really easy to make!






Ingredients

  • 1 egg
  • 1 cup milk
  • 2 teaspoons melted butter
  • 1 teaspoon vanilla
  • 1 cup pancake mix
  • 10 ounces Double Stuff Oreos
  •  Peanut oil for deep frying
  •  Sugar crystals for rolling the warm cookies in

Instructions

  • Preheat the oil in the fryer to 375F.
  • Mix the egg, milk, butter, vanilla, and pancake mix until smooth.
  • Dip a cookie in the batter, covering it completely.
  • Carefully slip it into the preheated oil.
  • Fry until golden on both sides.
  • Drain on paper towels.
  • Roll in sugar, Confectioner's sugar, or sugar and cinnamon.
