Pandan Custard Cake

 

For this year's Dessert. 

I made something different. 

I thought the color of this will suit the occasion. 




I used the same recipe of making 

Ube Flan )

..And it turned out as good!
The only difference I did was I used Pandan Flavoring,
Instead of an Ube!




It is definitely a lot of process making this
And it was so worth it!

Christmas 2022

 

Christmas is definitely one of my favorite Holiday's

Not just because I can try to make it magical for the Kids,

I also can make it a little special for us.



It may seem really extra,
But who cares right?!
Whatever makes you happy!



So so pretty!


We made our usual favorites,
We did Ham this year 
Since last year we made the Roast Beef.
I kinda missed ham so..


The Recipe for this awesome Appetizer is below!







We had our usual Eggnog.


..And of course my favorite
Winter Aperol Spritz.
To be honest,
The recipe for it is nothing different the Summer ones.
It's just with the Garnish.
Which is Fresh Rosemary and Cranberries.
The cranberries does add good flavor to it.

I love it!


It was a lovely dinner with my loves.



Mac and Cheese.
Green bean Casserole 
and Deviled eggs for Appetizer.




For dessert...
I made Filipino Desserts.

I like to add Filipino touch to our Dinner.
So the boys can try it too.


Filipino Fruit Salad.




And..
This amazing Cake!!






Soooo Good!





It was a perfect day!

Oreo Cookies



Oreo Cookies is like the top favorite in our house.
How ever I make them everybody loves them and it doesn't last long in the house.

This recipe is definitely one of the best!
Not that hard to make!

Ingredients

  • 2 ¾ cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 cups chopped oreos, divided (about 15 cookies) Not oreo crumbs but crushed oreo pieces. Place the oreos in a ziploc bag and use a rolling pin to crush them.
  • 1 cup semi-sweet chocolate chips divided
  • 1 cup unsalted butter, room temperature 2 sticks
  • ¾ cup packed brown sugar
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350º F.
  • In a medium sized mixing bowl, combine the flour, baking soda, salt, 1 & 1/4 cups oreos, and 1/2 cup chocolate chips. If you do not want to press oreos or chocolate chips on the outside of each dough ball before baking, add all of the oreos and chocolate chips now. Set aside.
  • In a large mixing bowl, beat the butter, brown sugar and granulated sugar with an electric mixer until blended, about 1 minute. Add the in eggs and vanilla, beat again until mixed.
  • Gradually add in the flour mixture, mixing on low or with a spatula just until combined. 
  • Line a baking sheet with a silicone baking mat or parchment paper. Use a cookie scoop to form dough balls. Press the remaining oreos and chocolate chips onto the outsides of the dough balls. Place 6-8 cookies on a tray, about 3 inches apart. Bake for 10-12 minutes, or until the edges are light brown and the center is puffy. I like to slightly under bake these cookies so when they cool, they are soft and chewy! Allow the cookies to cool for 15 minutes before removing them from the baking sheet. Store in an air tight container.

Poinsettia Cocktail


I love how festive drinks can be during Christmas!
It looks so beautiful.
If I can make it all I would. 

Made this one this time and I loved it.
might be my drink for the week!


Ingredients

  • 3.5 ounces prosecco
  • 2 ounces cranberry juice
  • .5 ounce Grand Marnier or Cointreau 

Instructions

  • Pour the cranberry juice and the Grand Mariner into a tall champagne flute. Top with prosecco give it one stir to combine and serve!

Oreo Cookies Balls

 

When I get chance I  try to make the first desserts/meals that I made.
It's like going down memory lane. 
I definitely learned a lot and more to learn.

I just absolutely love cooking!

Check out my first try of this dessert!





Ingredients:

-1 pack of Oreos 
-1 (8oz) of cream cheese 
-1 pack of white melting chocole (like almond bark) 

What you need:
-A bowl to mix your oreo mixture 
-A bowl to melt your chocolate 
-Cookie Tray 

Fork 
Parchment Paper 
Directions: 
1.Using a blender or hand held mixer, mix Oreos and cream cheese together. 
2.Roll into walnut size balls. 
3.Chill for an hour. 
4.Melt approximately 3/4 package of white almond bark. 
5.Stick a toothpick in an Oreo ball and dip it in the melted white almond bark. 
6.Allow to harden on wax paper. 
7.Takes about 15 minutes. 
8.While waiting, melt about 1/4 package of chocolate almond bark. 
9.When Oreo balls are no longer sticky to the touch, decorate with drizzles of chocolate or crushed oreos
10. Enjoy!

Shrimp Fried Rice


There's nothing more than I love
than easy meals!

..And if you are looking for one this is perfect.
Also, if you are craving for Asian food this is the best!



Ingredients

  • 1 pound large shrimp peeled and deveined
  • 1 teaspoon kosher salt
  • ½ teaspoon ground white pepper
  • 3 tablespoons olive oil
  • ½ small onion diced
  • 2 green scallions thinly sliced (white and green parts separated)
  • 2 garlic cloves minced
  • ½ teaspoon minced ginger
  • 1 ½ cup frozen peas and carrots thawed
  • 3 large eggs beaten
  • 4 cups cooked white rice
  • 3 tablespoons soy sauce
  • 2 teaspoons toasted sesame oil

Instructions

  • Season the shrimp. In a medium bowl, season the shrimp with the salt and pepper. Set aside.
  • Sear the shrimp. Heat 2 tablespoon of olive oil in a large wok or skillet over medium-high heat until shimmering. Add the shrimp in a single layer and cook for 1 to 2 minutes, then flip and cook another 30 seconds, until just cooked through and opaque. Remove to a plate.
  • Add the aromatics. Add the onion, white parts of the green onion, garlic, and ginger, and stir-fry for a minute, until fragrant. 
  • Cook the veggies. Add the frozen carrots and peas (no need to thaw), and stir-fry for 1 to 2 minutes until warmed through.
  • Cook the eggs. Move the veggies to the side, then add the beaten eggs and quickly scramble them until they're pillowy soft. 
  • Stir-fry the rice, seasoning, and shrimp. Add the rice, shrimp, soy sauce, and sesame oil, and stir-fry until the rice and shrimp are warmed through, about 2 minutes. 
  • Garnish with green onions. Stir in the green parts of the green onions before serving.
