Macaroni Fruit Salad


Sometimes, I find myself missing Philippines.

I am not sure when I will be able to visit..

So I guess making Filipino Dishes will have to cure my Home sickness. 


I don't think I made this before.

Macaroni Fruit Salad is a staple dessert for Holidays,Birthdays 

in the Philippines.

So many version for sure.

But, this is my favorite!





Ingredients
  • 2 cups uncooked elbow macaroni
  • 1 cup mayonnaise
  • 1/2 cup condensed milk
  • 1/2 cup table cream (optional but makes the salad more creamy)
  • 1 cup fruit cocktail
  • 1 cup pineapple chunks
  • 1/2 cup nata de coco (any color)
  • 1/2 cup kaong
  • 1/3 cup raisins
  • 1/2 cup diced cheddar cheese
  • water for boiling
Instructions
  1. Boil elbow macaroni in water according to package directions. Let cool and drain excess water for at least 2 hours. 
  2. Drain pineapple chunks, kaong, nata de coco and fruit cocktail for at least 2 hours. 
  3. In a big mixing bowl, combine mayonnaise, condensed milk and table cream. Mix thoroughly. 
  4. Add raisins and cheese to the bowl and mix thoroughly. 
  5. Add drained elbow macaroni and drained fruits to the bowl. Stir gently to distribute. 
  6. Refrigerate for 2-3 hours or overnight before serving. Enjoy! 


It is such a perfect Snack or Dessert!

Blueberry Crescent Ring

 

Any Blueberry Dessert is my weakness, 

And making any homemade  Blueberry dessert is my favorite

You can't beat homemade.


This was too good I almost ate it all myself! 

haha!

And it was so easy to make.

Ingredients

  • 2 containers Pillsbury™ refrigerated crescent dinner rolls

For The Blueberry Filling

  • 2 cups fresh blueberries
  • 1/3 cup sugar
  • 1 tsp lemon juice
  • 7 Tbsp water, divided
  • 3 Tbsp corn starch

For The Cream Cheese Filling

  • 8 oz cream cheese, room temperature
  • 1/3 cup sugar
  • 1 egg yolk
  • 1 tsp lemon juice
  • 1 tsp vanilla

For The Glaze Drizzle

  • 1 cup powdered sugar
  • 2 Tbsp milk

Instructions

  • Preheat oven to 375° 

For The Blueberry Filling

  • In a small saucepan over low heat, add blueberries, sugar, 3 tablespoons water, lemon juice together. Stir and cook for until blueberries have burst, approximately 3-4 minutes.
  • In a small mixing bowl, mix remaining water and corn starch until combined then add to blueberry mixture.
  • Continue stirring until blueberry mixture has thicken. Set aside to cool.

For The Cream Cheese Filling

  • In a medium mixing bowl, beat cream cheese until fluffy, about 2-3 minutes.
  • Add sugar, egg yolk, vanilla, lemon juice and beat for an additional 2 minutes.

For The Pastry Ring

  • Unroll crescent rolls and separate into precut triangles.
  • Place triangles on an ungreased baking sheet so that the wider end of the crescent is in the center forming the circle with about a 5 inch opening in the center and the smaller tip of the crescent is on the outside.
    *When forming the circle, the wider ends of the crescents will overlap each other. 
  • Spread cream cheese mixture over the wide part of the crescents.
  • Spoon blueberry filling on top of cream cheese mixture.
  • Fold the small tip of the crescent over and tuck under the wider part to secure forming the ring.
  • Bake for approximately 20 minutes. Remove from oven, let cool for a few minutes. 

Making The Glaze Drizzle

  • Using a one cup measuring cup, pour powdered sugar and milk together and stir until combined (might need more milk/sugar as desired).
  • Drizzle glaze over pastry ring, once cooled, and cut into desired portions. Enjoy!

Lemon Crinkle Cookies

 





Summer is here,
in full mode that it's no fun to be outside for a long time.

Me and the boys love Baking so we've been doing a lot of it.


Since it's Lemon Season, why not make some Cookies!



This was so perfect!
It didn't last long.

Ingredients

  • 1/2 Cup Unsalted Butter, (1 stick, softened) 
  • 3/4 Cup Granulated Sugar 
  • 1 Large Egg 
  • 1 Tablespoon Lemon Juice, (freshly squeezed) 
  • 1 Tablespoon Lemon Zest, (fresh) 
  • 1 Teaspoon Vanilla Extract 
  • 2 Cups All-Purpose Flour 
  • 1 Teaspoon Baking Powder 
  • 1/2 Teaspoon Salt 
  • 1/4 Teaspoon Baking Soda 
  • 2 1/2 Drops Yellow Food Coloring, (optional) 
  • 1 Cup Powdered Sugar 

Instructions

  1. Using a hand mixer or a stand mixer, beat together the butter and sugar until light and fluffy (about 3 minutes). Add in the egg, lemon juice, lemon zest, and vanilla. Continue beating until on low speed until well combined. 
  2. Next, add the flour, baking powder, salt, baking soda, and food coloring. Beat on low speed until no flour patches remain. 
  3. Chill the dough for at least 1 hour in the refrigerator. When the hour is almost up, preheat the oven to 350 and line 2 large baking sheets with parchment paper or silicone mats. Set aside. 
  4. After the dough chills, roll it into teaspoon-sized balls and dip each ball into the powdered sugar. Heavily coat each ball with powdered sugar (don’t shake off the excess sugar), and place them on the prepared baking 2-inches apart. 
  5. Bake in the preheated oven for 8-10 minutes or until the edges are very lightly browned. The centers will still appear somewhat soft. Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely. 
  6. Serve and Enjoy!

Cathedral Basilica of St. Louis


Every time we travel while we were in Europe,

Highlights of our trips is going to Churches

Theres just something about seeing all of these Churches all over the world that fascinates me.

I thought moving back here in the US that would end. 

I was planning our trip to St. Louis and I came across this church that everybody loved.

So we couldn't miss it. 







It's a bit drive from Downtown so its not as crowded as is and
I am going to say that you shouldn't miss visiting this Cathedral if you are in St. Louis.
Just a bit of 15 minutes away from Downtown.


It felt like I was back in Vatican.


It was even gorgeous outside.





Such an amazing time in St. Louis.

Gateway to the West


Ohhh St. Louis.
I can't believe we are back!

7 years ago was our first visit.
That definitely feels like a lifetime ago.



Now we are back tor re visit and also bring the Boys!



It is beautiful like ever.






It was a hot Summer day but I thought the views were worth it.



Always a great time whenever with these boys!

Chicken Wing Charcuterie


For Hubby'd Birthday last weekend,
Other than his favorite Long Island Iced Tea )

We  also made his favorite food.
Wings, Of course!!!

A grazing board/charcuterie is a perfect beautiful to serve that!
I thought it was so yummy and awesome.
He loved it of course!!




Wings are:

Breaded buffalo chicken
Honey BBQ chicken
Asian zing
Mango Habanero (really spicy)
All from Buffalo wild wings

Then added some:

chopped carrots
celery 
grapes
jalapeno peppers





So good!!

Long Island Iced Tea


Hubby had his Birthday last weekend.
..And of course we had to make his favorite drink for our Happy hour.

Lately, he loves whisky but one of his favorite is Long Island Iced tea.
He used to drink this a lot when I met him.
We never made it before so it's pretty interesting what is actually the ingredients to make it.

It's definitely a lot of alcohol but it was so good and refreshing!
Perfect for Summer!



Ingredients:

Ice
1/2 ounce tequila
1/2 ounce vodka
1/2 ounce white rum
1/2 ounce gin
1 ounce simple syrup
Coke
Lemon

Instructions:

Add all the Ingredients in a glass 
Top with coke and stir!
Garnish with Lemon





So good!!
