Laing with Pork and Shrimp



There is still a lot of times that I miss Filipino food the most!
This week was Laing.
For me, using pork to cook it with it adds more flavor.
This time I added Shrimp too!

...And it was so good as ever.





I didn't change anything with the Ingredients!
Just added shrimp.
It was sooo good!!!

Melon sa Malamig (Cantaloupe Juice)


With how hot it is these days.
There's nothing better than a refreshing drink!

I had to make this so the boys can try it!
I remember drinking this a lot when I was a kid for meryenda or with Lunch.
So so good.


My first born made a new name for this drink.
He calls it Spaghetti juice. 
I'm so glad they liked it!





Ingredients

  • 1/2 cup  granulated sugar
  • 1/2 cup water plus more for pitcher
  • 1 medium cantaloupe

Optional:

  • Splash of vanilla extract
  • Sweetened condensed or evaporated milk
  • Ice 

Instructions

  • In a small saucepan, combine sugar and water over high heat. Once the water comes to a boil, reduce heat to low. 
  • Simmer, stirring often, until sugar is dissolved. Remove from heat and let cool.
  • Clean the outside of the cantaloupe and cut in half. 
  • Use a spoon to remove the seeds and a melon scraper to scoop out threads of the cantaloupe into a medium bowl. If a melon scraper is not available, slice the cantaloupe and grate the flesh into the bowl.
  • Place the grated cantaloupe flesh into the pitcher and add the cooled syrup. 
  • Fill with water. If using, add a splash of vanilla extract or some condensed/evaporated milk.
  • Serve chilled or with crushed ice.


So refreshing!

Ube Cheese Pandesal


Ohhh Pandesal
The house smells amazing while Baking these.
Nothing else is better.



I remember back then
 going to a Panaderia and smelling the amazing Baked goodies and buying 
some of these was my favorite part of my day.

I feel fortunate to be able to make these myself.
I'm so glad the boys love it
As much as I do.

Pecan Pie Bars

 

Have I mentioned how much I love anything Pecan?
Pecan Pie, Pecan cookies.
Anything!

I can't believe how easy is this to make!
I definitely ate it all myself!
haha!

Very good for Snack, a little breakfast with your coffee.
Or how ever you prefer!




Ingredients:

  • 1 (8-oz) can refrigerated crescent rolls
  • ¾ cup chopped pecans
  • ½ cup sugar
  • ½ cup light corn syrup
  • 2 Tbsp butter, melted
  • 1 tsp vanilla
  • 1 egg, beaten

Instructions:

  • Preheat oven to 350°F. Lightly spray a 9x13-inch baking dish with cooking spray.
  • Unroll dough and press in bottom and 1/2 inch up sides of a 9x13-inch pan. Firmly press perforations to seal. Bake 8 minutes.
  • Meanwhile, in medium bowl, mix remaining ingredients. Pour filling over partially baked crust.
  • Bake 18 to 22 minutes longer or until golden brown.
  • Cool completely, about 1 hour, and cut into bars.




So so good!

Bulalo


Even though its not quite Soup season yet.
In fact it's about 90 degrees outside.

BUT,
You can't just say no to a bowl of Bulalo.

So comforting and perfect with rice.



When we went to the Asian store few days ago,
I saw Beef Shanks and I could not pass up on getting it. 
I know I had to make some Bulalo.

..And It was so good!







Ingredients

  • 2 lbs beef shank
  • ½ cabbage whole leaf individually detached
  • 1 bundle Bokchoy
  • 2 cobs corn each cut into 3 parts
  • 2 Tablespoons whole peppercorn
  • 1/2 cup Green onions cut unto 1 1/2 inch pieces
  • Half onion, diced
  • 34 ounces water, more if needed
  • fish sauce to taste 


Instructions

  • In a big cooking pot, pour in water and bring to a boil
  • Put-in the beef shank followed by the onion and whole pepper corn then simmer for 1.5 hours or until meat is tender.
  • Add the corn and simmer for another 10 minutes
  • Add the fish sauce,cabbage, pechay, and green onion 
  • Serve with rice and Enjoy!
 

So so good!
For sure will make this too in a few months again.
