Surf and Turf

 

It's been a while since we had Surf and Turf night,
We usually do it on special days.
This may be pricey to do but so worth it.
Better than going out to the Restaurant.


Perfection!






Of course Red wine to drink.
I decided to have a little bit sweet this time.






Hubby's Grilling is always so perfect!


We made these Crab stuffed mushrooms and it was so good!
Recipe soon!





And I brought the store brought Red lobster biscuits,
If you wonder if they would turn out like at the Restaurant.
Yes it is!!!
Butter it up and its soooogood!

Breakfast Enchiladas

 


We love making Special Breakfast on Sundays,

It feels like it's the only day that we can take our time making Breakfast.

We made this and oh my god.

It is now one of our favorites.

So amazing!!



You cook all of the filling in the Pan then wrap it up in tortilla and smother it in egg and milk topping.
also cheese and bacon, don't skip that part.












 Ingredients


  • 1 pound breakfast sausage (pork or turkey)
  • ¼ cup salsa
  • 1-2 cups diced potatoes 
  • 8 (8-inch) flour tortillas
  • 6 large eggs
  • 1 ¼ cup half-and-half
  • 1 Tablespoon all-purpose flour
  • ½ teaspoon Kosher salt , plus more to taste
  • 1 ½ cups shredded cheddar cheese , divided
  • ½ cup shredded Monterey or pepper jack cheese , divided
  • Optional toppings: Parsley flakes fresh, Diced tomatoes, Sliced green onions, Crumbled bacon

      Instructions 

      • -Preheat the oven to 350°F. Spray a 9x13-inch baking dish with nonstick spray.
      • -In a large frying pan, brown the sausage over medium-high heat. Drain fat. Transfer to a medium bowl and stir in salsa, 3/4 cup cheddar cheese, and 1/4 cup Monterey jack.
      • -Add potatoes to frying pan and stir until cooked through. Transfer to bowl with sausage and stir until combined. 
      • -In the center of 1 tortilla, spoon 1/8 of the mixture. Roll up and place the seam side down in the baking dish. Repeat with remaining ingredients. 
      • -In a separate large bowl, beat the eggs, half-and-half, flour, and salt. Pour over the tortillas. Sprinkle the remaining 3/4 cup cheddar cheese and 1/4 cup Monterey jack over the top.
      • -Cover with foil and bake for 35 minutes. Remove foil and bake 10 minutes more, or until set and cheese is melted.
      • -Top with desired toppings. Serve immediately.




      It takes some time to make it but I tell you,
      It's so worth it!!

      Filipino BBQ Night

       

      It has been so cold!
      So cold that its impossible to do anything outside.

      But,
      Before that
      I'm so glad we got to grill!
      I miss these so bad!

      The frozen version of Filipino BBQ is starting to get ridiculously expensive
      So we decided to make homemade one.

      This is so easy.
      Key is marinate it 1 day is suggested but you can probably get away with few hours of marinating it.

      FIRST.
      You chopped Pork bite sized,
      IT doesn't matter what kind of Pork,
      Pork butt, Pork loin
      A little fat is not bad.
      We marinated it with 
      Soysauce
      Sprite (or any lime soda)
      Garlic (lots of it)
      So sauce
      seasoning of your choice.

      You literally can put anything you want.
      Cover and put in the fridge until ready to put in skewer,
      Which is probably the only hard part making this
      But oh so worth it.








      Perfect!

      I wanted some Seafood too so hubby grilled us a Tilapia.
      Sooo Perfect!

      Arugula Toast

       



      Most days during the week,
      I like to make something for. Breakfast for lunch 
      Toasts is always my go to.
      If we have Arugula its so perfect.




      This was pretty easy,
      You can spread any spreadable cheese, Cream cheese or mayonnaise
      Arugula
      and my favorite Soft boiled egg.





      Of course, almost forgot
       Chili oil and Siriacha mayo.

      Perfection.

      Spam Rice Bowl

       



      During the week, 

      I like making something easy but oh so good. 

      These kind of bowls or plates is so amazing because its so easy 

      to make and you can literally put anything you want. 




      The Spam is diced and cooked in the pan until browned.
      You can put soy sauce, brown sugar or any seasoning you'd like.
      For mine.
      I added some Tereyaki sauce and seasoning to it until it was cooked. 

      Served with White rice and of course,
      Perfectly cooked Runny Eggs.





      You guys 
      I am obsessed!!

      I can eat this EVERYDAY!!!

      Cheesy Ramen

       


      Okay a little confession, 
      I have been obsessed with Ramen these days,

      Not your typical Ramen!
      But the ones you make extra,
      Which is pretty much me. haha!

      Anyways,
      It has been fun to keep changing it up to my cravings,
      Most days I crave for soupy ones,
      But for this one
      I was craving for Cheesy ones,
      It is very easy!




      You just need your typical 
      Ramen pack,

      With this one,
      I cooked it as as usual..
      Then on last minute I added bunch of cheeses on top to melt,
      Parmesan cheese and Mozzarella cheese are the best.
      That is it and then let it melt and serve!

      Of course 
      Add any topping of your choice.
      This one had Dumplings an Soft boiled eggs.
      To get that perfect eggs,
      Cook them for exactly 6 minutes boiling and rest in cold water before peeling.

      Very easy!






      It was a Pizza night,
      With me being Asian I needed something else,
      Soup, creamy, something else. 







      It was perfect!!

      Winter Wonderland

       

      If there's anything I don't like,
      It's being cold.
      We didn't get that much Snow last year.
      But, today we are getting a lot and the temperature is
      really bad.

      But anyways,
      The first Snow days was special.
      Especially if you don't need to go anywhere.



      The best thing to do is have some Hot chocolate and
      Enjoy the wonderful view.




      So beautiful.











      The boys got to play a little bit before it gotten miserably cold.
      I think they had a blast.

      Hey Bear Sensory Birthday Party

       





      My baby is 2 :(
      It's such a bittersweet feeling.
      Feels like it was just yesterday when I had him.
      It has been the best 2 years of my life.
      He is the best Rainbow baby.
      We are so obsessed with him and he never fails to make our day
      when we need it.

      For his Birthday party.
      We kinda just decided on which one he likes the most.
      Since he can't pick yet.
      He is obsessed with Heybear Sensory videos.
      I swear he even dance with them.

      So we decided this is it.

      So I got all of the party stuff from amazon
      ..And we just kinda did it it all and decided how it would end ourselves.

      To tell you guys,
      We did not have visitors or anything.

      IT IS JUST US.
      for me,
      I do not care of anyone came.
      with his age he doesn't have any friends yet.
      and to be honest.
      I just want to focus on him and just him.

      AND it was so perfect.






      Hubby did amazing with the Balloons!
      We definitely worked hard together for this and it was so worth it!
      I would love to keep this decor for a week or two!











      We did everything very simple
      so the cake was from Walmart. 

      You guys this was about $25 
      If you order a costumize ones from a bakery or someone that makes cakes.
      We usually spend $70 or more.
      Not having a big party, this cake was just for us it was perfect!
      I get it they have to charge more for costomize ones but it was starting to be absolutely ridiculous.

      Anyways,
      This is just PERFECT.










      Little man had a blast!

      Us too, 
      Watching him smile and giggle, dance and just having the best
      day is so priceless.

      New Year's Eve 2024

       


      Happy 2024 Everyone!

      It's so crazy that a New year is here,

      Time is going way too fast.


      We celebrated another year at home.

      It's better that way and safer too.

      Kids doesn't usually stay up til the midnight anyways.




      I love our New year's eve decoration this year.
      Almost the same as last year with little new stuff.





      So festive.
      I love it.




      New year's eve cupcakes from Hy vee


      Of course, 
      Can't forget the traditional fruit platter.
      As a Filipino this is a must.



      The dessert table.
      I didn't have that much time to make new Desserts this year.
      We still had so many leftovers from Christmas,
      So we just got the ready ones.

      Appetizer were Crab dip and Cheeseburger sliders that is mostly for the kids.
      They love it.


      And this Steak Crostini that is oh my so good!
      Hubby cooked the Steak on a iron skillet and it was perfectly cooked.




      Of course,
      Deviled eggs.
      We make these every Holiday.


      For the main dish Seafood Pasta.
      I have been wanting to make homemade version of this
      AND it was so AMAZING.
      Hubby did really good with this one.

      It may not be freshest seafood like the ones I had in Italy.
      But the flavor was on point.
      The seafood was good too!


      Lots of Lemon and Parmesan on the top.
      SO good!


      We just hang out watched countdown on the Tv 
      and played some games.







      It was a relaxing New year's eve at home.
