Chicken Caesar Pasta Salad

I have been craving Salad these days,

Something perfect for Sides or just as is.

The leftovers was not bad too.

I highly recommend!

Ingredients

Chicken:
  • 2 cups cooked chickencubed (grilled, baked, or rotisserie)
  • 1 tbsp balsamic vinegar(optional)

Salad:

  • 8 oz dried pasta(fusilli, farfalle bowtie, rotini, or penne)
  • 1 cup sweet cherry tomatoeshalved
  • 2 romaine heartschopped
  • ¼ - ⅓ cup shredded parmesan cheesedepending on your preference
  • chopped red onion
  • bacon chopped

Dressing:

  • ⅓ - ½ cup healthy Caesar salad dressingdepending on your preference

Instructions

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until it is al dente.
  • Drain the cooked pasta and rinse it under cold water to cool. Set it aside.
  • In a small bowl, whisk together all the dressing ingredients until well combined (recipe here). Taste and adjust the seasonings as desired. You we used store-bought Caesar, but you can also use homemade.
  • If desired, toss the cubed chicken with balsamic vinegar in a separate bowl for added flavor. This is optional, but I love it!
  • In a large serving bowl, combine the cooked pasta, cubed chicken, halved cherry tomatoes, chopped romaine hearts, onion, bacon and shredded parmesan cheese.
  • Pour the dressing over the pasta and gently toss to coat all the ingredients.
  • Taste the salad and adjust the seasonings by adding more dressing, salt, pepper, or parmesan if desired.
  • For the best flavor, refrigerate the pasta salad for at least 30 minutes to allow the flavors to meld together. Alternatively, you can serve it immediately. Enjoy!

So perfect with this Grilled Pork Chops that hubby grilled!

Waffles with Sausage Gravy

I love Biscuits and gravy,
It's one of my favorite Breakfast.
I decided to give this one a try.
The egg was just like a cherry on top.

If you want to try a different twist to your sausage gravy,
This is amazing.
Let me know what you think!!

Ingredients

  • 2 cups all-purpose flour *
  • 1 teaspoon kosher salt
  • 4 teaspoons baking powder
  • 1 1/2 cups milk
  • 2 eggs
  • 6 tablespoons butter, melted
  • 1 1/2 cups sharp cheddar, grated (about 6 ounces)

For the Sausage Gravy

  • 1 pound pork sausage
  • 2 tablespoons butter
  •  cup all-purpose flour
  • 3 to 3 ½ cups milk
  • ¼ tsp granulated garlic
  • 1 tsp black pepper or to taste
  • ½ tsp salt or to taste

Instructions
  • Preheat the waffle iron. Stir together the flour, salt, and baking powder. Add the milk and eggs. Whisk to combine. Stir in the butter. Add the cheese  and stir once more.
  • Pour batter onto the hot waffle iron and cook until lightly browned. When finished cooking, transfer the waffles to a wire rack on the counter.
  • While the waffles are cooking, start making the gravy.
    Gravy:
    • -Set a large skillet (I love cast iron) over medium heat. Add in the sausage and with a wooden spatula break up sausage into smaller pieces while stirring. Cook until brown and fully done (about 8 to 10 minutes).
    • -Place butter in skillet and stir until melted.
    • -Sprinkle flour, garlic, and pepper on top of the sausage and slowly stir until well coated and grease is full absorbed. Continue stirring and let the flour cook fully for about 2 minutes.
    • -While stirring, slowly pour in 3 cups of the milk. Continue to stir and simmer until gravy thickens (3 to 5 minutes). Add salt, if needed. If gravy is too thick, add the last 1/2 cup of milk.

    4. When the gravy finishes cooking, Pour over top of the waffles.5. Serve with Egg (optional) Enjoy!

Perfection!

Enjoy!
