Loaded Potato and Buffalo Chicken Casserole

 
 



 
Hello everyone! I hope you had a good weekend.
Made this awesome dish last night, I'm on a mission of trying different dish especially a dish that hubby would like. He loves buffalo chicken so I'll probably make a lot of Buffalo Chicken dish.
This was so good, It was spicy.. Not my favorite but you can definitely use BBQ sauce with this dish.

Loaded Potato and Buffalo Chicken Casserole
 
 
 
Ingredients:
  • 2 lbs. Boneless chicken breasts, cut into 1/2 inch cubes
  • 6 Medium potatoes, cut into 1/2 inch cubes (I leave the skin on)
  • 1/3 Cup Olive oil
  • 1 1/2 Tsp. salt
  • 1 Tbsp. ground pepper
  • 1 Tbsp. paprika
  • 2 Tbsp. garlic powder
  • 6 Tbsp. hot sauce
 
Topping:
  • 2 Cups Fiesta blend cheese or Cheddar cheese
  • 1 Cup  crumbled bacon
  • 1/4 Cup parsley flakes
 
 
 
 
Directions:
  • Preheat oven to 500 ( yup!)
  • In a large bowl, mix together olive oil, salt, pepper, paprika, garlic powder and hot sauce. Add the cubed potatoes and stir to coat.
  • Carefully scoop into cooking spray coated 9x13 inch baking dish, leaving behind as much of the olive oil/hot sauce mix as possible.
  • Bake the potatoes 45 minutes, stirring every 10 minutes, or until cooked through crispy and browned on the outside.
  • While the potatoes are cooking, Add the cubed chicken to the bowl with the leftover olive oil/hot sauce mix and stir to coat.
  • Once the potatoes are fully cooked,  remove from oven and lower the oven temperature to 400F.
  • Top the cooked potatoes with the raw marinated chicken.
  • In a bowl, mix together the cheese, bacon and parsley flakes and top the raw chicken with the cheese mix.
  • Return the casserole to the oven and bake for 15 minutes or until chicken is cooked through and the topping is bubbly.
  • Serve with extra hot sauce or ranch dressing.

Chocolate Crinkle Kiss Cookies

 
 
 


Made these awesome cookies last night.. I made this a lot of times, But decided to give a little extra touch this time.
 
These cookies really taste like brownies.. Brownies rolled in powdered sugar, so dense and chewy in the middle, And adding a Hershey kiss on top just made it extra perfect. :)
 
 
 
These cookies are not really hard to make but you really have to put it in the fridge for 3-4 hours or overnight..
 

Ingredients:
  • 1 1/3 Cups brown sugar
  • 1/2 Cup vegetable oil
  • 1/4 Cup sour cream
  • 1 Egg
  • 1 Tsp. vanilla
  • 1 3/4 Cups all purpose flour
  • 3/4 Cup cocoa powder
  • 1 Tsp. Baking soda
  • 1/4 Tsp. salt
  • 1/8 Tsp. black pepper
  • 1/2 Cup Powdered Sugar
  • Assorted Hershey Kisses (I used Hershey kisses hugs)


Directions:
  • Beat brown sugar and oil in a bowl. Mix in Sour cream, egg and vanilla.
  • In a separate bowl, Whisk together flour, cocoa, baking soda, salt and pepper.
  • Add butter mix to the mixture until well combined.
  • Refrigerate dough until firm 3-4 hours or overnight
  • Meanwhile unwrap Hershey kisses, place in a small bowl, and freeze until ready to use.
  • Preheat oven to 350F
  • Scoop into balls and roll into powdered sugar.
  • Bake in ungreased cookie sheet 10-12 minute. Don't over bake.
  • Remove from oven and Immediately press a frozen kiss into each cookie, then place cookie sheet into the freezer just until chocolate is set and no longer shiny, Remove from freezer and allow to cool completely.

A Fun Snow Day!





 
 I've been always complaining these past few days or on my last few posts how cold it is, That I'm so tired of it and I'm so ready for Spring, But there's something so beautiful and peaceful about winter and snow.


 
 

 
I've decided to not care how cold it is outside but enjoy and appreciate how beautiful it is, Here in North Carolina its so rare to get a snow this much and this is probably not the last day were getting snow but that's okay, I'm actually excited about it.
 

Before I decided to play outside I did some indoor cardio, I do my cardio in our garage, I can definitely feel how cold it is, But I can say that it was a good workout.
 
 

 
 
Yes, It was cold but It was really fun! :)

Dreaming of Summer..

 
Hello everyone! How was your weekend? I had a fun Saturday morning with friends and then the rest of the weekend we just stayed home and relax, It has been an eventful past few weekends so I really needed a weekend of not going anywhere.
 
 

My friend had a Mary k party Saturday morning, It was fun! It was nice to have a little girls time.
Never heard about Mary k before but heard a lot of good things about it, So I decided to give it a try.
 
 
When I got home we decided to make Homemade burgers, We've been eating out a lot these past few weekends so It was so nice to make homemade food this weekend for a change.
 


Hubby makes really good homemade burgers. I could eat it everyday.. It's just not healthy to have it everyday! haha!

 
 
Then I made this delicious tropical drink.
 

I have been wanting to make this drink since I had it in Applebee's couple of weekends ago. I love summer drinks, Especially if there's a coconut flavor in it, There's something about it that takes you to a tropical island right when you had a sip. 



 So good!!

Is It Spring Already? :(






This week is turning out not so good for me..
It has been the coldest week ever.. I know I can't complain because there's other places way colder, But I'm really ready for Spring weather.

Monday was a holiday and it snowed Tuesday so Hubby was just home those days, I did get to workout but I ate a lot of bad stuff for those two days. Don't you love it when a week turns to a cheat week. haha

Anyway, I moved on.. I know it was just two days.
So when I woke up today I had a smoothie bowl and lemon water.


I made a cantaloupe smoothie with some, sliced cantaloupe, kiwis, grapes and granola for topping

This was so refreshing and the toppings made it perfect.


Buffalo Chicken Wrap

I always meal prep for hubby but for this week, Since I know it's going to be a short week and there's a chance that it will snow, I decided to just make him a Baked buffalo chicken that I made yesterday, I totally forgot to take a picture of it because I was too excited and happy how it turned out, Hubby loved it and he said it's the best chicken I made so far, Well one of the reason he said that is because he love Buffalo Chicken. I'll definitely make this again and I'll make sure that I won't forget to take a picture.

Sunday Funday: Bowling with friends




 
Had fun time with friends last Sunday, We went to meet up with hubby's co-workers, I got to meet and hangout with their wives which was really nice. 
Little man was too excited when we got there, That he doesn't want to let anybody else play. haha 
He got a little cranky at first but once he got warmed up with other kids they were inseparable.

Double Chocolate Banana Bread
 
 Before we went bowling, I decided to bake. There was bananas sitting on our kitchen counter needed to be used and I have plenty of frozen bananas for my smoothies so I decided to use it for something else.
I made Chocolate Banana bread, I love banana bread so much! I would make it all the time if I can, Today I decided to make a different version and make it chocolatey. It was so good!
 
 
 
 
 Ingredients:
  • 1 cup Sugar
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 1/4 cups mashed banana (I used 3)
  • 1 tsp. vanilla
  • 1 1/2 cups flour
  • 1/2 cup cocoa
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 cup semi sweet chocolate chips
 
Directions:
  • Heat oven to 350. Spray bottom of 8x4 inch loaf pan with cooking spray
  • Beat sugar, eggs and oil in a large bowl at medium speed until combined. Beat in banana and vanilla at low speed.
  • Combine flour, cocoa, baking soda and salt in medium bow; Beat into banana mixture at low speed just until combined. Stir in chocolate chips.
  • Spoon batter into pan. Bake 60-70 minutes or until toothpick inserted comes out clean.
  • Cool 10 minutes before removing from the pan and cool completely on wire rack.

Valentine's Day

 
 
 
 
 Happy Valentine's day everyone!
I hope you all had a great day.
I had an amazing day with my boys, We just decided to go have dinner to our favorite restaurant Ruby Tuesday, The last time we went there was my birthday last year.
It was a really good idea to go there, It wasn't busy at all.
I hate going to restaurant that is so busy, I never get satisfied.
 
 
I was in the mood for a really good drink, So I decided to try their Mango Margarita.. It was good!
 
 
 For appetizer we had Thai phoon shrimp, It was good but nothing really special about it.
 
 
And of course, I had their Salad.. One of the reason why I love Ruby Tuesday! 
 
 
 Hubby wasn't planning on having their Pretzel burger but he said it looks too good to not have it again.
 



I wanted to to be adventurous and try something else so I had some ribs, It was really fall off the bone! It was good to try something else for a change.

Valentine's Day Came Early

 
 
 
 
Had a surprise knock Thursday morning.. 
A guy delivered this to our house.
 
 
 
 While I was receiving it, I can't help but smile because my husband was just in the garage smoking.
 
I can't believe that Valentine's Day would come this early, Valentine's Day is not until Saturday.
Hubby did a good job though, He knows me so well.. He knows that I love Fruit so much that I will appreciate this better than flowers.
 
 
 
Every year he always get me flowers, Even though I want to tell him so bad to please not give me flowers, I'm glad that he already knew it. I think he noticed how I love smoothies and I've been pinning a lot of fruity stuff on Pinterest. haha
 
 
But anyways, He did a good job picking the Fruit Bouquet and Chocolate-Covered strawberries. These strawberries are huge! They are not just normal strawberries that I usually get at the store, Too bad that I still can't have some today. But tomorrow I will definitely will.
 
 
 
 
 
 
 
 I can't stop staring at them, Makes me not want to eat it because they are too pretty!
 
 
I know I took too much pictures but I just really love how they looked!  
 
 
Valentine's Day is should not be just all about the flowers, chocolate or any material things. I don't even care if he got me the cheapest stuff ever, It's really the thought that counts.
 
I love it when he does things like this and try to me smile and happy, Which he never fail anyways.
 Sometimes it's what you really need. Especially when you are not having a good day/week.
