Spicy Sausage and Cheese Cups



I love it when I get a chance to make something I never made before,
For today, I had to make something for hubby's potluck.
...And I usually make something easy but delicious!
Got to try one of these when we went to a house party and I told myself 
I need to make one.

This is perfect for game day!
Especially that Superbowl is coming!
What's so good about this recipe too is that you can make it ahead and
bake it when you need it.

I had to double this one so I can save some for me!

Spicy Sausage and Cheese Cups

Ingredients:
  • 1 lb pork sausage
  • 2 Cups shredded cheddar cheese
  • 8 oz. spicy ranch dressing (Hidden Valley)
  • Wonton Wrappers

Directions:
  • Preheat oven to 350 degrees 
  • Cook sausage in a large skillet, stirring until it crumbles and no longer pink. Drain
  • Combine sausage, cheese and Ranch dressing mix in a large bowl.
  • Coat a standard size muffin tin with a nonstick cooking spray.
  • Line each cup with a wonton wrapper
  • Top with 1-2 tbsp of the sausage mixture, and sprinkle with some cheddar cheese

  • Bake for 12 minutes,until heated through and edges are golden.



Gooey, cheesy and crunchy..
This is really a good Appetizer!

Puto Flan/Leche puto




Today, I finally got to make these delicious Puto.
I was just planning on making the regular ones with cheese on top.
But then, I decided to make it more special.

I love love Puto because of the fluffy texture of it.
So light, and its so much better eating it fresh,
I remember how much  I love my mom taking me to Palengke (market) in the
Philippines when I was about hmm 11 years old?
We always get some Puto for breakfast since we always go to Palengke by sunrise.
We always get it hot and fresh.
Ahhh.. childhood memories. 

Anways, I actually didn't know that this was a famous variation of Puto. 
And, I've never made Leche Flan before and since I can't find the molds yet I decided to just make 
it like this for now. At least I will still get to eat some flan.
I'm really so happy hubby got me Electric steamer.



Anyway. My craving for chocolate covered pretzel is getting crazy.
Munching on this while I make these puto. :)


This puto Recipe is really easy. 
I highly recommend it! 


 Puto Flan

Ingredients:

For the Flan:
  • 4 egg yolks
  • 1 can sweetened condensed milk
  • 2 tsp. lemon juice
For the Puto:
  • 2 Cups self raising flour
  • 1 1/2 tsp. baking powder
  • 1/3 Cup granulated sugar
  • 4 egg whites (2/3 Cup)
  • 1 1/4 cups water

Directions: 
  • Make the flan first. In a small bowl, mix together the egg yolks and condensed milk. Add the lemon juice.
  • Heat water in the bottom pan of the steamer or get your electric steamer ready ( its what I used)
  • Grease puto molds with some pam then pour some mixture to the molds, (Don't skip this one) Filling each about 1/3 full.

  • Steam flan on low heat for about 10 minutes. At this point the flan would not be fully set but should not be liquidy either. Set aside to cool completely.
  • In a medium bowl, sift dry ingredients of the puto together. Add in the wet ingredients and mix until well combined. ( Do not over mix) 
  • Pour mixture over flan, filling molds nearly to the top.
  • Steam the puto on low heat for another 15 minutes. Remove from steamer and let cool slightly.


  • To remove from molds, Carefully run a thin knife around ( It should be easy to take it off since you sprayed it some pam)

  • Invert the mold and tap to release the Puto Flan.

It was so beautiful and so good!!

Greek Yogurt Obsession.





Hello everyone!
Had the best sleep ever today,
How is your week going?
I can't wait how the weekend is going to be.
They are saying we are going to get a lot of snow,
I guess I'll believe it when I see it!
I'm looking forward to just staying home and
drinking hot cocoa.

Decided to rest today and skip cardio.
Afternoon snack is on point today!
Greek yogurt with Mandarin oranges, sliced pineapples
and Frozen Blackberries. I love eating frozen fruits!
They are so good..

Now time to do some stretching.

Honey BBQ baked Wings.




Have I mention how my husband love wings?
He loves it so much that he can eat it everyday.
Especially, the Buffalo hot wings.
I can't really eat that one since spicy is not my favorite.
So, I decided If I'm going to make homemade wings, I should make something
That I will get to try.
So I made BBQ flavor.
This was really easy and so good!
I will definitely make more of this and with different flavors!

Honey BBQ baked Wings.

Ingredients:
  • 18 Wings (raw, thawed)
  • 1 Tsp. Salt
  • 1 Tsp. Garlic powder
  • 1/2 Tsp. Paprika 
  • 1/2 Tsp. Cayenne pepper
Sauce:
  • 1 Cup BBQ sauce 
  • 1/2 Cup Honey
  • 2 Tbsp. Ketchup
  • 1 Tbsp. Hot sauce
  • 1/2 Tsp. Garlic Powder'
  • 1 Tsp. Pepper 


Directions:
  • Wash, dry and season the wings with salt, garlic, pepper, cayenne, and paprika.
  • Preheat oven to 375 degrees. Spray cooking sheet or broiler pan with cooking spray.
  • Place the wings in a single layer pan, and place in the oven.
  • Cook for 35-40 minutes, depending on the size of the wings, turning once.
  • While they are baking, make the sauce by mixing the sauce ingredients together.
  • When the wings are done baking, carefully dip them in the sauce, and place them back in the oven for another 5-10 minutes or until the sauce is bubbling.

We also had some Pre-made Pizza from Food lion.
I love Pre-made pizza.
I wish the Pizza from scratch is easy, But this one will do!

Out and About Saturday.






Saturday was such a good idea to do something outside.
Get some air and Enjoy the nice weather.

How is your weekend going?
It's technically still a Sunday for us since its a 3 day weekend.
It's nice to have one more day to call part of the weekend.

Our weekend is a little eventful.
Yesterday, Today, or this week is going to be really really cold.
I cannot wait for spring already.

Saturday we decided to go to Greenville which is one hour away from home.
I can say that Greenville has better malls and Restaurants than our town. 
There's Raleigh but that's almost 2 hours away.
So when we want to do something better  we go to Greenville.


Pregnancy cravings is crazy.
I wanted a Chocolate covered pretzels.
The Salty and Sweet combination was just really good. 
I know too much sugar is bad for me, 
But, once in a  while won't hurt right?



After going to the mall 
We had dinner at the Vietnamese/Thai Restaurant across the street.
It was a small, simple restaurant.
But, I love the ambiance there.
The server was good too.
I've been craving Thai iced tea for a while. 
So I definitely had some, with some Boba.




One of the reasons why I wanted Vietnamese food is because of this awesome Appetizer.
Shrimp spring rolls and the other one is with beef.
My favorite part was the dip! Delish!









Little man won't really eat a lot of asian food but he loves Fried rice!




And, the one I've been wanting to eat for a while.
Pho!
The last time I had it was when I was in South Korea probably almost 6-7 years a go.
It's definitely  been a while.
It's so good..
But, I can say though that after all of the delicious food and flavorful food I had here in the States
This was a little plain, It needs more flavor.
Weird that I had that feeling.
American food is so..
So.. Rich sometimes (It's hard to explain)




But, I missed this food and I can say that it was really delicious.




Hubby had Pad Thai. 
First time I had it actually. 
Hubby said it was okay.


Little man loves to count everything he sees.

Gender Reveal Party.


Hello Everyone!

Last Saturday we had our Gender reveal party.
The day I've been waiting for!!
The suspense was killing me.

But it was so much fun finding out with some great friends.



My friend made this beautiful cake. 
Isn't so cute?



We had to wait a little bit til' everyone get there before we can slice it.
(more waiting, But. It's okay!)


I was so nervous slicing the cake!!


And....


It's Blue!!!!!!

It's a BOY!!!!!

We are having another boy.
It's going to be crazy here in the house having all boys withe me!
But, I'm so grateful.
..And so excited to meet him!
Now, We can finally decide with name, Color of his room and start getting
ready for his arrival!
See you soon little man! 







We grilled some burgers for that day, And I'm so happy to finally got to use
my new steamer!
I missed this food so much!
It's called Siomai.




My craving was definitely satisfied!
So excited to make amazing steam foods that I missed!
Recipe will be posted soon!





After the party, We had  a little, well not little..
Make up party.
It was a great night!

Cheesy Beef and Broccoli Casserole





When its almost time for our Grocery shopping.
I make sure that we get to use what we have in the fridge first, And I love it when I get to make 
something good with what we just have in the Fridge!
I feel so accomplished.
I highly recommend this recipe, So easy so good,
And you probably have most of the recipe in your fridge.

Cheesy Beef and Broccoli Casserole


Ingredients:

  • 1 lb. Ground beef
  • 1/4 Cup onion
  • 4 Ounce can Mushroom, drained
  • 16 Ounces Frozen broccoli, 
  • Salt and peper to taste
Sauce: 
  • 8 Ounce shredded cheddar cheese
  • 1/2 Cup heavy cream
  • 1/2 Cup mayonnaise
Directions:
  • Brown the ground beef onion and mushrooms in a medium skillet. Season with salt and pepper, Drain the fat.
  • Meanwhile, Put the frozen broccoli in a microwave safe bowl and 2 tbsp of water, cover and microwave on high for about 6-8 minutes. Drain the broccoli.
  • Stir in the ground beef with the broccoli.
  • In a bowl mix all of the sauce ingredients and microwave on HIGH about 2 1/2 minutes or until melted and smooth, stirring every minute.
  • Add the broccoli and ground beef mixture and mix well; adjust seasoning to taste.
  • Transfer in a 8x8 or 9x9 Baking pan and bake at 350 for 20 minutes or until hot and bubbly.

New year's day dinner


Hello everyone!
Happy new year!

How was your new year's celebration.

Our's is different this year, We celebrated with friends.
I didn't have much pictures to share but like last year.
We celebrated new year's day just us. ( New year's 2015 )

I like to go out to eat on new year's day and skip the cooking.



It was a beautiful day, A little cold..
It finally feels like January. 



We went to Texas Roadhouse. 
We went to Outback last year, But Texas roadhouse sounds better for us this year.


Started off with some Cactus blossom and salad.



Hubby had a Ribeye and some cheesy fries.



...And I had some Sirloin with some Shrimp,
I wish i can have a medium rare, juicy steak this year but I had to take it back
and make them cook it more. 
I felt so bad. (preggo problems)

It was a great dinner. 

This weekend definitely feels like the longest weekend ever, 
I'm ready for Monday!!
