I always make cookies for my friend, This time she requested Oatmeal cookies.
I'm so glad she did because I've been wanting to make these, I just didn't have the reason to make it.

Oatmeal Raisin Cookies
Ingredients:
- 1/2 Cup unsalted butter, softened
- 1/2 Cup shortening
- 1 Cup packed light brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp. vanilla extract
- 1 1/2 Cup all purpose flour
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 3 Cups quick cooking oats
- 1 Cup raisins.
Directions:
- Preheat oven to 375 F degrees. Line a baking with a parchment paper. Set aside
- In a large mixing bowl, beat together the butter, shortening with an electric mixer until well blended.
- Add the sugar, beat until fluffy. Add the eggs one at a time. beat well a after each addition.
- Beat in vanilla
- In a separate bowl, combine flour, baking soda, cinnamon and salt. Stir with a whisk. Add flour mixture to the butter mixture. Beat on low speed until well combined.
- Gently stir in the oats and raisins.
- Roll dough into 1 Tbsp. sized balls.
- Place the dough balls 2 inches apart on the prepared pan.
- Bake 10 minutes. Allow the cookies to cool on the pan before transferring to cool completely.
