I thought it would be plain but It's actually
pretty good.
Even hubby approved!

Lemon Chicken Asparagus Stir-Fry
Ingredients:
- 2 medium boneless, skinless chicken breasts
- 2 tbsp. olive oil
- 2 tbsp. lemon juice
- lemon pepper
- garlic salt
- salt and pepper to taste
- 10-12 asparagus spears (ends trimmed off and cut in thirds)
- 2 tbsp, teriyaki sauce
- soy sauce
Directions:
- Begin by cutting your chicken into 1 inch pieces.
- Cook chicken in a medium pan with 1 tbsp of olive oil and 2 tbsp of lemon juice. Add a little bit of lemon pepper and garlic salt.
- Once cooked, take out your chicken and set aside.
- Cook your asparagus in the remaining oil. Add an additional tbsp. of oil and add the teriyaki sauce.
- Cook asparagus on medium heat for 6-8 minutes
- Add chicken back to the asparagus along with the desired amount of soy sauce, Cook for an additional 5 minutes. Add salt and pepper to taste.
- Serve over rice or noodles.
This is so good with rice. But, you can definitely eat it the way you want it.
