Crispy Pork Belly Kare Kare

 






I have been wanting to make this,
Thinking it will be hard to make.
Last weekend I decided to just make it with my favorite Crispy Pork Belly first.


Then I made the Sauce and veggies different way.






It was Perfection!!
The recipe for the rest is below!



Ingredients


  • ½ cup peanut butter
  •  tbsp annatto powder
  • 2 tbsp cooking oil
  • cloves garlic crushed
  • 1 medium onion sliced
  • 1 cup string beans
  • 1 eggplant
  • 1 bunch bok choy
  • 4 cups water add more if needed
  • 1 tbsp salt

Instructions



  • Once you're done making the Crispy Pork Belly, slice it and set it Aside.
  • Separately boil the string beans and eggplant until soft then remove from the water and set aside.
    1 cup string beans, 1/eggplant
  • In the same pot where the vegetables were cooked, blanch the bok choy until it turns bright green and slightly tender, approx. 40 seconds.
    1 bunch bok choy
  • In another cooking pot. Saute garlic and onion until translucent. Lower heat and add peanut butter stir for 5 seconds then add the annatto powder and stir until incorporated.
    ½ cup peanut butter, 2 tbsp cooking oil, 3 cloves garlic, 1 medium onion, 1½ tbsp annatto powder.
  • Add the vegetables and mix until coated with sauce. Serve with shrimp paste as condiment and rice. Enjoy!!


I wish I made it sooner!
Next time I will make it it with Oxtail!

Grill and Chill

 


The weekend have become the best days for me. 
Quality time with my loves.
We love cooking the best food and 
just have an amazing time.




It was grilling day this past weekend and it was perfect!



Cheers to the Weekend!!

Hubby grilled all the amazing meats outside.
And I cook inside.


Sunday's have becoming like meal prep for us. 

We make all the good food
We also get to enjoy during the week!




I have been wanting to make this for a long long time!
I thought Kare Kare would be so hard to make,
I was wrong.

I made this Seafood Salad For side.

Something fresh and creamy.

It's so easy to make.
Made with Mayo, Sour cream, Imitation crab and Cooked Shrimp.
Garnish with fresh dill, 
Of course Season with your preference!






The Ribs came out so perfect.






We are watching 1923 right now 
So good so far. 










Dinner was perfection!!

L'Osteria (Kaiserslautern, Germany)

 

I'm always on a hunt for an amazing
Authentic Italian Pizza.
My friend mentioned about this restaurant
So went to meet up for Dinner!!






The vibes was amazing
I love it!!


It was really hot and probably one of things I don't like living in
Europe is very handful,
But not having AC tops it all off.

So.. 
We seated outside.
Hoping we get lucky and get a breezy time.





Started off with some Negroni.





Cheers!!


We took our time ordering
The food came so quickly.

I was so surprised how big was this Pizza.
And the crust?!

YESS!!!
Perfection!









I ordered some Seafood Pasta.
Hubby shared his Pizza so I got to try!




IT was Legit!
SO good!



Of course,
There's playground!
Definitely one of my favorites of being here.




We ordered Dessert while the Boys play.

This Spaghetti Ice cream didn't taste like Gelato,
But it was still good.





Of course gotta have some Tiramisu!





It was a nice dinner with Friends.
Definitely coming back!!

U-Pick Flowers Germany

 


Have a I mentioned that this is my new favorite thing to do here in Germany?

Well I will keep saying it.  =)





This one is close to the Lavender Fields that we went to.



It's definitely Summer!
I missed seeing this.
Not a big Field of Sunflowers like in Italy
But, It's still pretty!
And I get to have them!!



This field has lots of varieties of flowers!





I picked mostly Sunflowers and some Daffodils.







I loveeee it!!!

Eiscafé Dolomiti (Landstuhl, Germany)

 





First thing I was so excited to have again coming back here in Europe
 was Italian Pizza.

Next, 
GELATO!!

There is just something so good about.
You can't compare it with other Ice cream. 


I'm so glad we found one close by,
This one is by Landstuhl.
Very close to Ramstein AB


You know what makes me love Gelato is
this fun spaghetti ice cream they have in Germany!

I have never seen this before!






Their kids Ice cream i just the cutest!!





It was about brunch time so I had to have some Cappuccino!




Look at these fun Ice creams!!




This Gelato with Strawberry and Pistachio cream is just amazing!!





It was soooo good!





We also ordered some crepes
My first born's favorite.






Everything was amazing.
We will definitely come back 
AGAIN!!

Monte Mare (Kaiserslautern, Germany)

 



We've been loving so far here in Germany.
Our second summer here.
Definitely better than last year.

The weather is not perfect. 
But we do what we can on those good days.




It was Indoor Swimming time!

We went during the week,
And it was just the best idea ever!






Come right when it opens and you will have the best time ever!!

I find German Swimming pool Interesting.
In a good way.

In any Swimming pools you go,
You just go straight to the Swimming pool.

Here you have no choice but to walk by the lockers and shower area 
before you make it to the Swimming area.

It's like a maze you have to go through!
It's kind of fun
Especially when you can't understand 
what the sign says.
You just kind of take a leap and walk until you find 
the Swimming Area.

haha!





Their kids area is perfection.

I don't need to try a different Swimming pool.

This is perfect for us already!


Little man loved it!

Especially having it for himself!




We stayed for a couple of hours,
You could stay all day if you want to!





There was a time that they turned on the music and there was waves in the main pool!

So cool!





Few hours of swimming and I figure the Boys are 
ready for some Snacks.

You know how Swimming makes you hungry.
You can bring in your own food
which I love so much!!





I made Egg Salad Sandwich and some brought some chips and drinks.

Chill for a little bit before leaving.

It was such a great day.
Already can't wait to come back!!

Mexican Corn Dip

 




Having the Griddle makes me so excited about
all of the food we are able to make next!

The options are endless!

Hubby made this and it was just so perfect!





While he's making our Main Dish outside,
I was in charge for the Appetizer.
He still did help me making this. 

I wanted something creamy and fresh and just a good dip.

MEXICAN CORN DIP


Ingredients

2 tablespoons chili powder

2 teaspoons smoked paprika

½2 teaspoons cayenne pepper (adjust to taste)

2 tablespoons extra virgin olive oil

1 yellow onion, chopped

2 cups corn kernels (from 34 raw ears)

2 cloves garlic, chopped

Kosher salt and black pepper, to taste

6 ounces cream cheese, at room temperature

⅓ cup sour cream

4 tablespoons salted butter

⅓ cup olive oil mayonnaise (or plain Greek yogurt)

2 tablespoons fresh lime juice

¾ cup crumbled cotija cheese

1 grilled ear of corn, kernels removed from the cob

¼ cup fresh cilantro, chopped

Instructions

  1. Prepare the Spice Mix: In a bowl, combine chili powder, smoked paprika, cayenne pepper, and a pinch of salt. Set aside.
  2. Sauté Vegetables: Heat olive oil in a skillet over medium-high heat. Add chopped onion and cook until softened, about 5 minutes. Add corn kernels, garlic, and 1 teaspoon of the spice mix. Season with salt and pepper. Cook until the corn is tender, about 5 minutes.
  3. Create the Creamy Base: Reduce heat to low. Stir in cream cheese until melted and creamy. Add sour cream and cook until warmed throughout. If desired, thin the dip with a splash of milk.
  4. Prepare the Spicy Butter: In a separate skillet, melt butter over medium heat. Add 3 teaspoons of the spice mix and a pinch of chili flakes and salt. Cook for another minute, then remove from heat.
  5. Mix the Mayo and Lime: In a small bowl, combine mayonnaise and lime juice with a pinch of salt.
  6. Assemble the Dip: Transfer the creamy corn mixture into a wide serving bowl. Top with grilled corn kernels, drizzle with the mayo-lime mixture, and swirl in the spicy butter. Sprinkle with crumbled cotija cheese and chopped cilantro.
  7. Serve immediately with tortilla chips, pita chips, or fresh vegetables for dipping.


I'm so glad I found the Cotija Cheese!
I think that was important!





It turned out sooooo good!!!

Hubby's Fajita Burrito!





Hubby's Fajita Burrito turned out perfect too!
I had Fajita Burrito in one of the Mexican restaurant we ate
at in Missouri from then 
It's a kind of burrito I only like,
It was so good!





Pretty much a Fajita in a Burrito.
Sooo good!!!
