One-Pot Cabbage Casserole



I like making dishes that doesn't need a lot of Ingredients and easy to make
especially on weekdays!
This is of them. 
I'm surprised how good this actually turned out. 
If you are looking for a easy weeknight meal, I highly suggest this one.

One-Pot Cabbage Casserole


INGREDIENTS
  • 2 lbs. ground beef
  • Salt and pepper or creole seasoning
  • 1 onion, chopped
  • 1 cup rice, uncooked
  • 3 large handfuls of roughly chopped cabbage
  • 1 8 oz. can tomato sauce
  • 2 cups of water (I just use the tomato sauce can twice)
  • 1 14 oz. can diced tomatoes, undrained
  • 1 cup shredded cheese (I used Colby Jack)
INSTRUCTIONS
  1. Season and brown ground beef and onions. Drain off grease.
  2. Once onions are clear, add rice, cabbage, tomato sauce, 2 cups of water (or use tomato sauce cans) and diced tomatoes. Stir.
  3. Let it come to a boil and then reduce heat to medium low and cover to simmer for about 20 to 30 minutes or until rice is done and cabbage is soft. Do not lift lid before 20 minutes to make sure rice cooks well.
  4. Once cooked, top with cheese and cover with lid to melt a few minutes.

Wine Tour.


I had one of the most fun weekend last weekend. 
It's a kid free day so it's a plus!
We went to a wine tour with my friends. 
I had a blast.



We went to 2 Wineries and lunch after that. 
This is our first stop.


Of course, Appetizer with wine tasting.


I can say Proseco is really my favorite Italian wine. 
It's just so good. 
I can drink Red wine but I prefer white.
We pretty much taste most of the wine there. 



There was a little tour too which was interesting.

Then we went to our second winery.
They are close to each other so drive was not that bad. 
Oh, we are with a bunch of people so we were riding on a bus.
No need for us to drive!



I really like the second winery that we went to.
It's bigger and they have more wine there.

I have never seen wine barrels this big!








Where they store the small barrels. 
I find this place interesting. 
Where the magic happens. :)




We had a tour of the winery.
It was beautiful there.

Of course with some salami and prosciutto.






After that we had some Italian lunch and went home. 
I was having so much fun to take all of the pictures.
But, I'm glad I got to get all of these awesome wines!
Proseco and Rose is my favorite.

What a fun day!

Mother's day 2017


Had a wonderful Mother's day weekend this year.
I'm so glad the weather was nice. 







Flowers everywhere. 
So beautiful!



We went for a walk to the Town square.
Most town here in Italy has one.
I'm so glad ours is just a walking distance. 
It was a perfect day for a walk.









Everywhere I look.
Old or new. 
I find it beautiful.




Later that day we decided to eat out for a Pre- Mother's day celebration.
I loved it.
A no cooking and cleaning day. 



This is probably my new favorite Japanese restaurant.
Their sushi is pretty good.


The other stuff we ordered.
They have Chinese/Japanese/Italian food in their menu which is really good.











Yaki udon noodles.
This was the bomb.







 I've been always having breaded Calamari/Squid.
I saw on their menu they have ones that is actually not breaded.
I ordered it and made hubby tried it.
He didn't like it but growing up eating a lot of seafood it was pretty good.
Squid have this rubbery texture.
It's good for a change after having breaded ones all the time.





 Sunday.
Mother's day.
After doing our usual Sunday routines.
We had a special dinner made by hubby.
Amazing like always. 
Another good day for grilling and relaxing.
It actually rained later but I'm glad we were already eating then.



Wonderful weekend with my boys.
So grateful.

Little man's 5th Birthday!


So, It's been almost 6 months since we got here in Italy. 
I still can't believe it that we are here..and so far It's amazing.
Really amazing.. Forever grateful to be here right now. 
Italy is such a beautiful country. 
I miss motherland, I miss the US already but I'm enjoying every minute 
we have here in Italy. 

It's little man 5th Birthday last weekend. 
It literally made me emotional looking back at pictures when 
he was born. 
Babies do grow so fast. 
It's really so important to enjoy every minute.
Spoil them as much as you can, Hug them.. kiss them as much as you want. 
They will not stay little. 


Last year we celebrated it in North Carolina. ( 4th Birthday ) 
Fun times with friends. 
This year we celebrated it at our friends house.
So grateful to meet awesome new friends here in Italy. 
We had a great time.




 For couple of years we did cars and hot wheels theme.
So glad that little man started liking something else!
He watch Madagascar almost everyday.
Thank goodness for Netflix.
So when I asked him if he would like a Madagascar birthday party he said yes of course!


I found a nice Italian Lady that makes awesome cakes. 
..And she did an amazing job!
How awesome this cake is?





The night before his Birthday. 
I had this idea to surprise him when he wakes up so we put a lot of
balloons on his doorway.
He loved it!!









The party was really fun.
Even though I got a little bit worried about the weather.
I guess Spring time/May in Italy means Rainy days. 
I hate rainy days. But, I guess we just have to stay indoors most of the time during Spring.
Anyways, It rained but I'm glad they still had fun.

My friend made this brownie that had animals on top.
So cute!
