Pre Birthday (Roadtrip to Virginia)

 
 
 


 Hi guys!
Feels like it's been a while since I posted, Saturday was my birthday
so we went to Virginia beach for the weekend, and it was the perfect Birthday weekend.
I couldn't ask for a better way to spend my Birthday.
 
Instead of putting everything in one post I decided to put in separate posts,
I took lots of pictures!
 
 
 
Anyway, Lets start Friday Morning
 
Before leaving we had Taco bell for breakfast, Haven't had Taco bell for a while. It was so good!
 
 
It was a 3 Hour drive, I actually thought it wasn't that bad. It didn't felt like it was far even though there was a lot of detour.
 
 
We got to Virginia just in time for rush hour, But that didn't change our plan to stop at Jolibee to have dinner  and Red Ribbon to get my favorite cake which are my Birthday Request.
I was a happy girl!
 
We checked in just in time, I didn't really care what kind of room we will have...
 
 
The only important thing for me was the view,
And I couldn't be more satisfied! I was speechless when I
first saw the view.
Just in time for Sunset.
 
 
Anyway, The room was actually really nice too! We booked for 2 beds but there was no 2 beds available that time.
 
But we didn't really care about that.
 

 
The hotel got Outdoor pool and heated Indoor pool, which was really good.
 
 
How awesome is this indoor pool??
 
 

While waiting for Sunset we decided to have some drinks.
I can't believe how perfect the weather was, I thought it would be cold or raining
But it was so nice!
 



 
 
There was some lightning but it didn't rain, It was pretty cool to watch.
 
 
 
We went for a quick walk around the hotel and the beach then went to sleep, it was a really good night. :)

Turon and a Delicious Smoothie.

 




I know this post is so late, I didn't get chance to post it before last weekend, I was too excited for Easter weekend.
 
But last Friday I had a really delicious breakfast, I finally got to have Turon, Turon also known as  Lumpiang Saging in the Philippines (Banana Lumpia or Banana Spring rolls) It's a very common snack or dessert in the Philippines.
 
This delicious snack is made with Saba or Cardaba Bananas dusted with brown sugar, You can add sliced jack fruit or any filling you prefer like mango, coconut or cheese and rolled in a spring roll.
 
Turon
(Banana Lumpia)
 
 
I didn't get a chance to get some jack fruit so I just made the basic one with just banana and brown sugar. The first bite makes me feels like I'm home, I need to make this again.
 
Ingredients:
  • 6 pieces Bananas ( Saba or Cardaba Bananas )
  • 1 Cup Jackfruit (Optional)
  • 1 and 1/2 Cup brown sugar
  • 12 pc Spring rolls
  • 2 Cups Cooking oil
 
 
Directions:
  • Roll the banana on the brown sugar and make sure its coated with enough sugar
  • Place the banana on the spring roll and add some jack fruit.
  • Roll, fold and lock the spring roll, use water to seal the edge.
  • In a pan, Heat oil.
  • Put the banana lumpia and fry until the wrapper turns golden brown.
 
 
 
  • Let cool for 2 minutes then serve.

Banana, Papaya, Strawberry Smoothie
 

 
I also made Smoothie to eat with my Turon, It was a perfect to have some smoothie.
I'm excited to make more smoothies this Spring.
 


Ingredients:
  • Frozen Strawberries (About 1 cup)
  • Ripe Papaya, Sliced (About 1/2 cup)
  • 1 Frozen banana
  • 1/2 cup frozen yogurt
  • 1 cup milk (or water)
  • 1 cup of ice (more or less depends on your liking)
 
Directions:
Toss everything in a blender, blend until smooth. Enjoy! :)

 
 
I'm in love with my new Tumbler, I can't wait to use it more often this Summer! :)

Smothered Chicken Casserole

 
 
Smothered Chicken Casserole

 
I like finding recipe that would be perfect for weeknight meal, something easy and delicious.
I'm so glad that I got to make this, It has been on my to make Recipe list for a while.
I highly recommend!
 
 
 
 
Ingredients: (Inspired by: South your Mouth )
  • 4 Medium Russet potatoes (cut into thin slices)
  • 1 (10.75 ounces) can condensed cheddar cheese soup
  • 1 1/4 Cups milk
  • 8-10 slices of bacon ( sliced in 1/2 inch strips)
  • 8 Chicken breast tenderloins
  • 4 ounces of shredded cheese ( I used shredded Monterey jack cheese)
  • Salt and Pepper


Directions:
  • Combine cheese soup and milk then whisk until smooth, Reserve 1 Cup of cheese soup mixture and set aside for later use.
  • Preheat oven to 350F
  • Wash and peel potatoes then cut into thin slices.
  • Spray bottom of a 13x9 baking dish with a cooking spray
  • Spoon 1/4 of the cheese soup mixture in the bottom of the baking dish,
  • Add potato slices, Season potatoes with salt and pepper.
  • Pour the rest of the Soup mixture over potatoes.
  • Cover dish tightly with aluminum foil and bake for 30 minutes.
  • Meanwhile, Slice bacon and cook in skillet for over medium-high heat until bacon is browned and crispy. Remove bacon pieces from skillet and set aside
  • Season chicken with salt and pepper then sautee in bacon drippings over medium-high eat until lightly browned. (were not trying to cook them through)
  • Remove dish from oven and uncover. Arrange chicken on top of potatoes and pour reserved cheese soup mixture over chicken.
  • Cover tightly again and continue cooking for 30 more minutes.
  • Remove dish from oven and sprinkle shredded cheese evenly over chicken and potatoes and top with bacon pieces.
  • Return dish into oven and continue cooking, uncovered for 10 minutes or until cheese is melted and bubbly.

Easter Sunday

 
Our Easter Sunday was good, Lots of eating and cooking.
We usually don't do anything special on Easter,
But this year it's so good to celebrate it.  
 
Kurt loved his First Easter basket, It was filled with lots of candies.
I Had to put it away after letting him have few.
 
 
 
 
Easy Deviled Eggs
 

 
For our Easter Dinner, I decided to make Deviled Eggs, It was my first time making it!
I remember how much I loved these when I was pregnant, I could eat a lot in one sitting.
I can't believe how easy it is to make.
 
Ingredients:
  • 7 hard boiled eggs
  • Salt and pepper
  • 1 Tbsp. mustard
  • 3 Tbsp. mayonnaise
  • 2 Tbsp. pickle relish
  • Paprika
 
Directions:
  • Peel shells off the hard boiled eggs and slice half lengthwise.
  • Using a spoon, gently remove the yolks from the whites and place all the yolks in a small bowl
  • Using a fork, mash the yolks in a small bowl.
  • Add mayonnaise, mustard, and relish to the yolks and mix until well combined and creamy
  • Using a spoon or piping bag put the mixture into the white if each egg half.
  • Repeat until all egg whites are filled.
  • Lightly sprinkle with paprika and keep in the fridge until ready to serve.

After meal prepping for the week (which I usually do on Sundays)
Hubby started grilling.

 
 
 Then I made Salad for our side, We also Had Onion Rings.
 

 
It was a delicious meal, Hubby did so good marinating the steak. He marinated it for 24 hours and I never tasted steak this good.
 
It was just a bottle of store-brought steak marinate. I bet there's a lot of good brands out there you just have to pick your flavor preference.

Saturday Funday: Easter Egg Hunt


 
 
Hi Guys!
How was your weekend?
My weekend was really fun- filled with family, friends and lots of food.
Lets start with Saturday.
 
 
I woke up so early to make Little man's Easter basket, I wanted to make sure he will still be sleeping while I'm doing it.
 
It was my first time making Easter basket, I just filled it with a lot of candies. Next year I need to put something else.
 


And then, We went to the park for the Easter Egg Hunt. There was a lot of people there.
 



I'm so glad it was so nice out, I was worried it will rain. Like what It said on the weather but it didn't
It was just a little windy and cloudy.


There was a lot of things to do there, I wish we could've stayed longer.
 





 
I think there was a mini concert, I thought that was cool.
 

 


 
I was looking for the Easter bunny but there was no Easter bunny, But they had these cute movie characters available for pictures. Kurt didn't want to leave after taking couple of pictures. He just wanted to stay there. haha! so cute!




We had to stay away with these things because if we let little man played there, Were not going to be able to leave anymore. haha!




 
Little man's first egg hunt was a success, Even though he didn't get that much eggs!



 
And of course, I couldn't help it, I had to!

Great week! Ready for the weekend.

 
 
Happy Friday everyone!
This week went by fast, which is not normal. But it's a good thing.
 
Anyway, We had a fun day yesterday. Me and little man got to watch hubby play basketball for the first time.
 
 
We don't usually go to things like this because we get worried that little man won't stay still and just be cranky all day. Like when we went to watch baseball game, But yesterday he was surprisingly a good boy.
 
 
I just had to make sure he had enough snacks and drinks, But the whole game he was such a good boy and cheer a lot for daddy. It was the cutest thing ever.
 

I was a Proud wifey while watching him, he did so good. Makes me want to watch him again.
 

After the game we went for a quick walk, It was such a beautiful day!

Healthy Peanut Butter Banana Muffins

 
 
 
 
 
Hello Everyone!
I can't wait to share you these muffins that I made the other day.
Healthy muffins that you can have for breakfast or snack that you will not regret eating.
These muffins are so fluffy and moist, You are going to love it!
 
Ingredients:
  • 2-3 Large ripe bananas, mashed with no chunks
  • 1/4 Cup Honey
  • 1/4 Cup packed brown sugar
  • 1/2 Cup Plain Greek Yogurt
  • 1 Large egg
  • 1/3 Cup Unsweetened almond milk or soy milk
  • 1/2 Cup Creamy peanut butter
  • 2 teaspoons vanilla extract
  • 1 and 3/4 Cups Whole wheat flour
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Baking soda
  • 1 teaspoon Baking powder
  • 1/4 teaspoon salt
  • 1/2 Cup Chocolate Chips (optional )
 
Directions:
  • Preheat oven to 425F.
  • In a medium bowl, mix mashed bananas, honey, brown sugar, yogurt, egg and milk together until combined.
  • Mix in the peanut butter and vanilla extract until smooth and thick and set aside.
  • In a large bowl, Mix the dry ingredients flour, cinnamon, baking soda, baking powder, salt and chocolate chips.
  • Pour wet ingredients into the dry ingredients and lightly mix until well combined.
  • Fill muffins cups between 3/4 full or all the way to the top.
 
  • Bake for 5 minutes at 425F. Keeping the muffins in the oven, reduce the oven temperature to 350F and continue to bake for 12 minutes or until toothpick inserted comes out clean.
 

 
  • Let cool and serve.
