Pancit Palabok

 

I have been wanting to make this for a long time.
I always thought it's hard to make.
It's not!








Ingredients:
  • 1 lb rice noodles (bihon)
For the Sauce:
  • 3 cloves garlic, minced
  • 2 Tbsp olive oil
  • ½ lb ground pork
  • 1 Tbsp anatto powder or 1 Tbsp annatto seeds soaked in 3 Tbsp water
  • 2 cups pork broth 
  • 1 cup water
  • 3 Tbsp cornstarch dissolved in ¼ cup water
  • 2 Tbsp fish sauce
  • salt and pepper
For the Toppings:
  • ½ lb shrimps, peeled and sauteed in oil just until it turns pink (reserve heads and peels for juice)
  • ½ cup tinapa (smoked fish) flakes
  • ½ cup ground chicharon
  • 1 cup boiled pork, thinly sliced and sauteed in oil until golden brown
  • 3 hard boiled eggs, sliced
  • 3 stalks green onions, finely chopped
  • sliced lemon to sprinkle on top (optional)

Directions:

1. Soak noodles in cold water for 20 minutes or until they soften a bit. Cook in a pot of boiling water until tender but still firm. Drain well and set aside.
2. In a saucepan over medium heat, sauté garlic in olive oil until light brown. Add ground pork and cook for about 10 minutes.
3. Mix the annatto powder in pork broth then pour the mixture into the saucepan. Bring to a boil. Add the water. Stir and simmer for about 3 minutes. Add dissolved cornstarch and fish sauce. Season with salt and pepper to suit your taste. Simmer until sauce thickens. Set aside.
4. Place the noodles on a serving plate. Pour sauce on top of the noodles then arrange the toppings over the sauce. Serve with a slice of lemon for added flavor!


So goood!!!!





It was grilling day too,

This is not in hubby's favorite lists so it's just a side for us.

Beautiful Weather and Amazing Filipino Breakfast

 


I haven't had a good Filipino Breakfast for a while,
..And since the weather has been perfect why not eat outside too!

I'm so glad Hubby loves Filipino Breakfast.
I mean, who wouldn't 
It's one of the best!!

IHOP (Warrensburg)

 

We are doing it, 
Last IHOP for a while.
Going to miss it so much.
Even though I know there's going to be a lot of good food we will
get to try!

Anyways,
Boys are off School so it's a perfect time to take them with us.







Hubby had this the last time we were here,
I had a bite and omg
I was like,
We need to come back so I can have that all for myself.



Coffee first!



...And here she is!!

I picked the one that has steak, peppers and other goodies.
I used to not pay attention to Eggs Benedict
but now I'm such a fan.
I need to learn how to make it myself.






Can't really come here without eating Pancakes!











It was PERFECTION!!

Parmesan Crusted Salmon

 






It was time to use everything in the freezer to get ready for our big move.
We have few frozen Salmon so it was the perfect time to make this again.

It was as good as I remember.

Ham and Cheese Roll ups

 





I love an easy Snack/Appetizer
This would be good to for kids lunch for School!




Ingredients

  • 2 8 oz packages cream cheese, softened
  • 1 ranch seasoning packet
  • 10 American cheese slices
  • 5-10 deli ham slices
  • 5 tortillas

Instructions

  • Stir ranch seasoning into softened cream cheese. (For extra creamy cream cheese, beat with a mixer for 2-3 minutes.)
  • Spread a thin layer of cream cheese mixture over top of the tortilla. Layer 1-2 pieces of ham and 2 slices of cheese down the middle of the tortilla. 
  • Roll up as tightly as possible and then wrap in plastic wrap. Continue making rolls until ingredients are finished. Store in the refrigerator for at least one hour. 
  • Once the rolls have chilled, remove plastic wrap and use a knife to cut off the ends. Slice roll into 1/2 inch rounds and serve.

Pancake and Sausage Breakfast Tacos

 

Sunday Breakfast is definitely becoming our favorite thing. 

Special breakfast for the boys before a new week starts. 

We love this so much.

So good!

Ingredients

  • 2 cups pancake mix
  • 2 large eggs
  • 1 ⅓ cups milk
  • 14 links breakfast sausage
  • 4 large eggs beaten
  • ½ cup pure maple syrup
  • Shredded Cheddar cheese


Instructions


  1. Cook the sausage links over medium-low heat until they cooked all the way Cook the sausage links over low-medium heat until they are cooked all the way through. Leave them in link form with the casings intact. 
  2. Mix the pancake batter and cook the pancakes. It’s best to make the batter a little thinner than normal pancake batter. These pancakes don’t need to be thick and fluffy. Instead, they should be thin enough to fold.
  3. Scramble the eggs. Four eggs was plenty for our breakfast tacos, but you may need more or less depending on how many eggs are added to each taco.
  4. Assemble the tacos by placing a sausage link in the center of a pancake. Top the sausage with a couple tablespoons of scrambled eggs.  add a ½ tablespoon - 1 tablespoon of maple syrup then sprinkle cheddar cheese (optional) Fold the pancake in half to form a taco and enjoy!

Hotdog/Sausage Toppings

 


Having kids, 
You find yourself eating lots and lots of Hotdogs.
Its good easy meal,
But, Sometimes I get bored eating it plain.
So sometimes I would think about a topping for it to make it even better.

These are my favorites!!!




I try to keep it as easy, 
This one is definitely easy.

Mac and cheese!!!

Any!!
It's so good!





Next one is a Bacon wrapped hotdog/sausage topped with
Sautéed Green Bell peppers and onions.
Add any sauce you prefer to make it even better!




Next up is Tomato, avocado salsa drizzled with ranch.

This was definitely on the 2nd top favorite.





If you want the last one without Ranch,
It's good too!





Next up is perfect for Breakfas/Brunch 
Cheesy eggs with chopped tomatoes,
Perfection!!






And last one is with Sauteed red and green bell peppers, onions then topped with 
mozzarella cheese, baked in the oven until the cheese melts.
SO good!!!

Philly Cheesesteak Burger

 


I have been craving a good Philly Cheesesteak these days

And I saw this amazing idea of making it as a burger.

I thought it was a perfect combo and I was right.

This was soooooo good!!

I highly recommend!!!

INGREDIENTS 

Burgers


  • 2 pounds ground sirloin or chuck
  • 1 tablespoon Montreal grill seasoning
  • 1 tablespoon A-1 Steak Sauce
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground black pepper

Toppings

  • 1 large yellow onion
  • 2 bell peppersI used 1/2 each: red, orange, yellow and green
  • 2 tablespoons unsalted butterdivided
  • kosher salt
  • fresh ground black pepper
  • 4 hamburger bunsI love these homemade buns
  • 1 recipe Provolone cheese sauce

INSTRUCTIONS 

  • Combine burger ingredients in a large mixing bowl. Mix with hands to combine. Do not over mix.
  • Form beef into 4 patties, slightly larger than your bun. Make a slight indentation in the center of the burger to prevent it from doming up in the center. (The indentation will rise as your burger cooks). Set aside while you prepare the toppings.
  • Melt 1 tablespoon butter in a large skillet over medium high heat, add onions. Toss to coat, cover and cook for 20-25 minutes until onions are caramelized, stirring occasionally. Season with salt and pepper, to taste.
  • Meanwhile in a large skillet over high heat, melt 1 tablespoon butter. Add sliced peppers, toss to coat. Cook until peppers are soft. Season with salt and pepper, to taste.
  • Preheat grill to high.
  • Grill until golden brown and slightly charred (about 3 minutes), turning once (cook for 3 minutes on the other side for medium). Close grill cover. Try not to press down on your burger with a spatula. It will cause the juices to escape and will create a dry burger!
  • Toast buns on low or indirect heat.
  • To dress burger: Place a burger on toasted bottom bun, top with 1/4 of the sautéed peppers and onions, and a heaping spoonful of smoked provolone cheese sauce. Then, top with a toasted top bun.
  • Serve and enjoy!

Mango Margarita

 

Warm days calls for Margaritas 

..And I was craving Mango so this was so perfect.


What's your favorite Margarita flavor?



Ingredients

  • ¾ cup mango juice
  • 2 oz. tequila
  • 2 oz. cointreau
  • ¼ cup lime juice or more to taste

Instructions

  • Cut a lime wedge, then run it along the edge of two glasses. Coat them in salt, then add ice to each glass. 
  • Add the mango juice, tequila, cointreau, and lime juice to a cocktail shaker. Shake, then strain into both glasses. Enjoy!
