Hello everyone!
It's finally Friday and It's officially one week before Christmas.
I'm excited and kind of sad for some reason. ( Probably just the weird preggo mixed emotions)
It's also perfect time to make Cookies!
I love Christmas cookies, There's so many to choose from.
Last year I made Red velvet whoopie pie sandwich cookies

I really wish I could make some more.
Now that I need to avoid sweets more than ever, I don't think I should bake more cookies
But anyway, one won't hurt right?
Anyway, This cookies are so good.
They are so moist, Chewy. The combination of cranberries and white chocolate chips is just so good.

Cranberry White Chocolate Chip cookies
Ingredients:
- 3/4 Cup Unsalted butter, at room temperature
- 1/2 Cup Brown Sugar
- 1/2 Cup White sugar
- 1 Tbsp. Vanilla extract
- 1 Egg
- 2 Cups All purpose flour
- 2 Tsp. Cornstarch
- 1 Tsp. baking soda
- dash of salt
- 1 Cup Dried Cranberries
- 1 Cup White chocolate chips
Instructions:
- In a bowl or stand mixer, beat together the brown sugar, white sugar, butter with a hand mixer or stand mixer with paddle attachment until light and fluffy. Beat in vanilla and egg.
- In a separate bowl, mix All purpose flour, cornstarch and salt.
- Carefully mix dry ingredients to the butter mixture and stir until well incorporated.
- Stir in cranberries and white chocolate chips by hand.
- Refrigerate the cookie dough at least 1 hour or overnight. ( This is mandatory to prevent cookies from spreading too much when baking)
- When you are ready to bake the cookies preheat the oven to 350 F
- Line two baking sheets with silicone liners or parchment paper.
- Remove chilled dough from fridge and roll into tablespoon size balls.Place onto cookie sheets about 1-2 inches apart from one another
- Bake for 10-12 minutes
- Allow cookies to cool before transferring to a wire rack to completely cool.
