Chicken Bacon Ranch Casserole

 

Hubby and my second born boy are obsessed with Ranch.
They can eat anything with Ranch everyday.
So I figure they would love this..
..And they did!

This was so good.
The flavor and combination of Chicken and Bacon is just perfect.

Ingredients

  • 10 oz Rotini cooked and drained
  • 12 oz Alfredo Sauce
  • 1/3 cup Ranch Dressing
  • 2 1/2 cup cooked and diced Chicken
  • 1 cup shredded Mozzarella Cheese
  • 1 cup shredded Cheddar Cheese
  • 7 strips Bacon cooked and chopped

Instructions

  • Preheat oven to 350.
  • Whisk together alfredo sauce and ranch dressing in a medium bowl until combined.
  • Mix the two cheeses together.
  • Rub bottom and sides of a casserole dish with butter.
  • Add 1/2 pasta and 1/2 the chicken and top with 1/2 sauce.
  • Stir to combine and sprinkle with 1/2 the cheese blend.
  • Add remaining pasta and remaining chicken and top with remaining sauce.
  • Sprinkle with remaining cheese blend and bacon.
  • Cover and bake for 30 minutes or until cheese is melted.

Cucumber & Cannellini Bean Salad

 

Do you love Healthy Side Dish?

This is the freshest and one of the healthiest Side dish I've ever made.

  • Ingredients: 

  • 1 English cucumber, quartered and sliced 1/4-inch thick
  • 1/4 cup red onion, thinly sliced
  • 1 (15.5-ounce) can cannellini bean, rinsed and drained
  • 1 tablespoon fresh dill, chopped
  • 12 tablespoons white wine vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon kosher salt
  • Freshly cracked black pepper, to taste

     Directions:

  1. In a mixing bowl,  combine cucumber,  red onion, beans, and dill.
  2. Pour vinegar and oil over top, season with salt and pepper, and stir.
  3.       Add more seasoning to your preference. 
          Chill or serve immediately.
          Enjoy! :)

Birthday Dinner.


Had an amazing Birthday Dinner at home last weekend.
It was all I wanted and more. 

I love that it was on a perfect day, Sunday!
Our usual Family day.



I have the Best Birthday Present I can't wait to show you guys!




Started off with a Charcuterie Board.

 I saw this Rose Salami all over the internet so I had to make it!
Very easy to make even though it was tricky to keep it together.
Had to hold it a little longer so it will stay.
Funny how some Instructions on other Blogs didn't mention that.

Maybe its just me but I thought I should mention it.





Hubby's cute set up!
He worked so hard today and I love all of his efforts to  make my day perfect.

He is the best Husband!


We had grilled food, my FAVORITE!
I mean you guys know.. I can do this everyday if we can.


Steaks fresh from the Butcher shop in town, Shrimp Scallops and veggies kebab for the main.





I also made these Double Baked Potatoes.
Recipe will have to come later because I forgot to put in the Bacon.

If my husband didn't notice it was missing it won't make it to the plate. haha!
Don't drink too much while cooking.. a little advice. hahaha!!



The potatoes were good!
It still made it on the plate! haha!

The Steak were amazing!!





This is me dreaming that I'm 23. haha!


I picked Ice cream cake.
It was nice to have so many options for food now that
we are back in the US.

It was such a great day with my little family.

Couldn't be more perfect.

Fall off the bone Crockpot Ribs

 


When it comes to Ribs, 

I only have one favorite!

The one that Hubby makes at home. :)



 I think I cook/bake decent meals.
But, when he helps me in the Kitchen it just becomes amazing.
He doesn't follow the exact recipe he definitely adds the good stuff. (seasoning)
and thats what makes it better. 

Original recipe of the Ribs by the way!


Listen to your heart and season it the way you want it!
I think thats what makes it really good.

I also made Cheesy Bacon Pierogis as a side dish.
Very easy, pour some cheese sauce on the cooked Pierogis and sprinkle some bacon!
Easy. peasy!

Creamy Crockpot Crack Chicken

 

I don't know if you would agree with me but cooking Chicken in the Crockpot

in ANY way is amazing.

We wanted to try to make something different, a sandwich perhaps....


We came across this recipe,

when we saw it we knew ultimately that we had to make it.

Cooking in the Crockpot cannot get any easier, but this one was so so 

easy you can't mess it up.

I think this would be good eaten in any way.

Rice, tortilla, dip, the options are endless.

What ever you prefer!



Ingredients

  • 2 lbs chicken breasts
  • 1 pkt ranch dressing mix
  • 1 8 oz block cream cheese
  • 1/2-3/4 cup cooked crumbled bacon depending on how much you like bacon
  • 1 cup shredded cheddar cheese
  • 4 green onions sliced
  • Buns





Instructions

  • In crockpot add your chicken, sprinkle with ranch and then place cream cheese on top.
  • Cover and cook on low for 6-7 hours.
  • Remove lid and shred chicken and stirring in the cream cheese.
  • Add your cheddar cheese, bacon and green onions and give it a stir to combine.
  • Serve on buns, croissants, tortillas, etc.


    So easy to make!!

Easter Sunday

 


Hello everyone!
I hope you all had an amazing Easter Sunday.
Ours was an amazing Family time. 

Not too different from last year.
As we spent it just at home.



But, it was nice to be somewhere not as restricted so we can get everything we need.





Our backyard is so big I think the boys love getting all the eggs just for the two of them.



They were so excited to see all the Eggs for them!



After hanging out outside we made our Dinner.
with my favorite drink, of course!

We made our favorite Bacon wrapped meatloaf.
It's been a while since we made this.

Making this may be a little tricky but I swear its not as hard as you may think.

I can literally eat these Deviled eggs everyday.



We also made steamed green beans with it.
Perfect combination!



Dinner and movies.
It was a nice, relaxing day.

You deserve a DONUT.

 
You guys probably noticed how much I love Yummy's Donut place
in Warrensburg.
Having a good Boba place so close to our house is just amazing.
It's the perfect stop before I get home. 
They also have amazing, fresh donuts!

Their donuts are so fresh that if you come late you won't be able to get any.
Since everybody gets it early.
Its the best in town!



Warrensburg doesn't have the usual Dunkin donuts or Krispy Kreme
and that actually okay.
Because these are so good!





I highly recommend!!
My Drink is Mango tea with Mango Boba.

Mi Patron Mexican Cafe and Cantina


Cooking is always fun.
I can cook everyday if I have all of the time.
But, getting a take out sometimes is a good break from cleaning most especially.

There is so many Mexican restaurants me and hubby wants to try around town.
We decided to give Mi Patron a try. 
We didn't feel like eating out so we just did a Take-out.

So we can relax and watch Vikings at home.
It was so good.



Tacos for me and Hubby got some Chimichangas. 




Its so awesome that they also give you free Quezo dip.
Every time we eat at any restaurant we have to buy that also.
But, with them they give it for free!




It was over all an amazing meal.

I highly recommend!

Bourbon Cherry Cola Smash



Hubby have so much Bourbon to drink so I got inspired to find a refreshing
drink to make it with.
Cherry Coke or Pepsi just sounds so refreshing so we gave it a try. 

..And I was right!
It was so refreshing. 

I highly recommend this drink.

Ingredients

  • 4 oz. Crown Royal Bourbon Whisky 

  • 1 1/4 cups cups fresh cherries, pitted

  • 1 tsp sugar

  • 12 oz. cold cherry coca cola or pepsi
  • Mint for garnish (optional)

Instructions


1. Remove the seeds from the cherries and dice. 

2. Place in a large glass muddle together the bourbon, cherries and sugar until you have a pulp.
3. Add to a bar shaker and shake to mix. 

4. Strain the liquor mix into 2 glasses with of ice.

5. Top off with cola. 

6. Garnish with maraschino cherries and mint.
